Sun-dried Tomato Pesto Shrimp + Zucchini Skillet 🌞🍅🍤 . . a fresh one-pan meal idea that combines all that fresh crisp Summer zucchini, with a tangy garlic tomato & basil pesto. Basically Summer in a pan! makes about 3-4 servings 1 lb. shrimp, peeled and deveined 1 Tbsp olive oil, or avocado oil 1 fresh garlic clove, minced 2 large zucchinis, sliced 2 Tbsp sun-dried tomato pesto (recipe below) For The Sun-dried Tomato Pesto 3 fresh garlic cloves 1 cup fresh basil leaves, plus more to garnish 1 cup sun-dried tomato packed in olive oil 2-3 Tbsp water 1/4 cup fresh Parmesan cheese sea salt and fresh ground black pepper, to your taste Instructions: Add all the pesto ingredients in a food processor or high speed blender and process until smooth. Set aside. Heat oil in a large skillet over medium high heat. Add garlic and cook for 30 seconds until fragrant. Add zucchini and sauté for about 5 minutes. Add shrimp and cook until they are pink. Add in 2 Tbsps sun-dried tomato pesto and stir everything well to combine and warm. Garnish with additional fresh basil and enjoy! I’ve been asked how to make this cheese salad, it’s so simple and quick to make. 3cheeses of your choice I used mature cheddar Red Leicester and gruyere. Grate them into olive oil mayonnaise to get the consistency you want then add chopped chives or spring onions. The seasonings are up to you I use garlic and onion powder salt and pepper sometimes a dash of mustard powder if I want to spice it up a bit. Almost 38 hours into my 60 hour fast and I am feeling...AMAZING! Are you rebooting and resetting your metabolism next month?🤷🏽‍♀️ . Do you love this post? ✔️ Comment 💙💙 ✔️ Follow keto.happy.fcv Keto Zucchini Chicken Enchilada Roll-Ups 🤤😍😋 . makes about 4-5 servings Ingredients: 1lb. chicken breasts, or tenders 2 Tbsp avocado oil, extra-virgin olive oil 1 yellow onion, diced 2 cloves garlic, minced 1 tsp. ground cumin 2 tsp. chili powder 1.5 cups enchilada sauce, gluten free, divided 4 large zucchini (I used both yellow and green ones), sliced with a wide peeler, or mandolin 1/4 cup shredded cheese sea salt and fresh ground black pepper, to taste Instructions: Instructions: Preheat oven to 350ºF. In large skillet over medium, heat the oil. Add chicken breasts and cook for about 6 minutes on each side, or until cooked through and no longer pink in the middle. Season with sea salt and pepper then set aside on a board. Once it's cooled a bit, shred it using 2 forks. In the same pan add in the onion and cook for about 3 minutes until translucent. Add the garlic and spices, then return the shredded chicken to the pan. Pour in 1 cup of enchilada sauce then stir well until combined. On a cutting board, lay out 4-5 zucchini slices slightly overlapping each other. Add spoonful of chicken mixture on top at one end as shown. Roll up and transfer carefully to a baking dish. Repeat with remaining zucchini and chicken mixture. Drizzle the remaining enchilada sauce on top and sprinkle with shredded cheese. Bake for approximately 20 minutes and until cheese is melted. I didn’t get here over night! So many set backs, so many self sabotaging nights, carb filled weeks, and just life! When I first started I had so much self doubt and I was afraid that any slip up would undo all the hard work I had done! But guess what? IT DIDN’T! Believing in yourself is the best thing you can do. This is a lifestyle for me, and self love and self growth came with the journey. It’s been amazing to reflect on the growth and change from the last two years! I use to let every single emotion control me, and now I can pretty well manage them. I’m not perfect, but my binging is at an all time low, and for that I’m thankful. I'm beyond words. I believe the number on my scale this morning .....but I don't or in disbelief still I've worked so hard and seeing any 150's number is something I thought might not ever happen again.
