Having a panick/anxiety disorder can really get me down sometimes, especially lately because it's all new to me. I have found that taking time to reflect and write about things, helps a little. I found this journal on Amazon and I really like it. It is definitely not a cure-all, actually it's not a cure at all but it does help. . So this is my reminder to you to do whatever you need to do to be okay. Take time to take care of yourself but not be by yourself, do not isolate yourself because that's not what taking care of yourself means. . That could mean that you need to always be around someone, you need to see a therapist, maybe you need to take medication or maybe you simply need to get away from your surroundings for a while, do it. Do what makes you happy and what makes you feel okay. . Often times it's much easier said than done but just try. Chasing wellness.....🦋 I find whatever emotion I lean into amplifies. So 99% of the time I simply share only the good. But, I also feel that this has been a disservice to myself, because I’ve struggled alone, in silence, most of my life. So I’m going to be real & honest here, and still embrace my inner sparkle. ✨ This morning in my gratitude practice I realized how amazing these past 3 years have been. I’ve made a deliberate & conscious effort to set aside my hustle & instead embrace wellness. I’ve actually gotten so much healthier. And honestly my career has expanded working smarter hours, not longer. In 2016, I was hospitalized off & on for a weeks, always on vacation. You see I’m the gal who NEVER takes a sick day, so I often crash when the time has been bookmarked & scheduled to have fun. Since those glorious “hospital vacations” I quit that job, joined a new company, that has really cared about me. Respected my health. And I stopped working 80+ hours a week. 💕 Here are some highlights since going highfatlowcarb & consciously slowing down 👉🏻 I can sleep through the night w/o anxiety 👉🏻 My migraines have dramatically decreased by well over 60% 👉🏻 I lost 40+ pounds 👉🏻 I have not been sick with a common cold or flu, because my herbal concoctions work again 👉🏻 my body/joints don’t ache 24/7 👉🏻 I can run again 💕 👉🏻 my skin has zero acne, my face was covered in cystic acne 3 years ago So today, I’m grateful for the progress, grateful that in an active autoimmune flare I can see all the good of the journey. Skillet Seared Salmon with Garlic Lemon Butter Sauce⁠ .⁠ (6 oz) skinless salmon fillets (about 1-inch thick)⁠ Salt and freshly ground black pepper⁠ 2 tsp olive oil⁠ 2 garlic cloves, minced⁠ 1/4 cup low-sodium chicken broth⁠ 2 Tbsp fresh lemon juice⁠ 3 Tbsp + 1 tsp unsalted butter, diced into 1 Tbsp pieces⁠ ⁠ 2 Tbsp minced fresh parsley⁠ Lemon slices for garnish (optional)⁠ . Remove salmon fillets from refrigerator and allow to rest at room temperature 10 minutes. Meanwhile prepared garlic lemon butter sauce. In a small saucepan melt 1 tsp butter over medium heat. Add garlic and saute until lightly golden brown, about 1 - 2 minutes. Pour in chicken broth and lemon juice. Let sauce simmer until it has reduced by half (to about 3 Tbsp), about 3 minutes. Stir in butter and whisk until combined. Set sauce aside.⁠ Dab both sides of salmon dry with paper towels, season both sides with salt and pepper. Heat olive oil in a 12-inch non-stick skillet over medium-high heat. I was scouting Pinterest for a keto version of Mexican hot chocolate when I found a recipe for French Cocoa. It was practically Keto!!!! . . This version is dairyfree too, but you could easily use whatever milk/cream you like. . . •8oz bar of 100% cocoa (the baking kind) •1 1/2c coconut milk •1c coconut cream (the canned kind, refrigerate to separate cream from water) •1/2c brown sugar sub •1 tsp vanilla extract •Dash of salt Combine all ingredients in saucepan on med-low, stirring until melted. It will not look right at this point. Turn down to low and simmer for 10-15 minutes or until mixture has combined and thickened. Serve immediately. Feel free to add whipped cream on top. I mixed mine with coffee and it was the best mocha EVER! . .
