Tonight’s dinner was my delicious Tom Kha Gai (ต้มข่าไก่)!!! Fun fact: my lovely mother is Thai! I know, I know. I’m way too fair skinned to be any part Thai, but I am! I just avoid the sun a lot, and dye my hair red. 🤣
My mom used to make this delicious coconut chicken soup for us when I lived with her, and it is still one of my favorite Thai foods other than Pad See Ew.
It’s made with chicken, onion, green onion, cilantro, lime, galangal root, coconut milk, and Thai red chili peppers. It usually has straw mushrooms, but my husband doesn’t like mushrooms. 😭 Also, this batch isn’t as milky white as usual because I opted for the cheaper coconut milk (Thai Kitchen brand) which isn’t as rich with coconut cream as my usual brand. Also, I added sriracha instead of chili peppers because I didn’t have any on hand. I also like to top mine off with fried garlic. 😋
Such a tasty low carb, high fat meal! I love it.
