Potty training is no joke!! When I had my first born, the daycare helped me loads. I’m doing it somewhat by myself, with the help of my husband of course☺️, but it’s a whole new ball game. Whats more difficult is when he says “nooooo!” And runs the other direction 😂🤣😂. I know he’s got this down and will eventually catch on.

EASY MOZZARELLA CHICKEN (LOW CARB CHICKEN PARMA) PREP: 10 MINS COOK: 20 MINS TOTAL:30 MINS SERVES: 4 PEOPLE INGREDIENTS 4 5-ounce (150 gram) boneless skinless chicken breasts 1 tablespoon Italian seasoning 1 teaspoon paprika 1/2 teaspoon onion powder Salt and pepper, to season 1 tablespoon olive oil 1 onion, chopped 4 cloves garlic, minced 1 fire roasted pepper, (fire roasted capsicum), chopped 15- ounces 425 grams crushed tomatoes, OR tomato puree (Passata) 2 tablespoons tomato paste, garlic and herb flavoured if possible Pinch crushed red pepper flakes OPTIONAL 3/4 cup shredded mozzarella 1 tablespoon freshly chopped parsley, to garnish INSTRUCTIONS Arrange oven shelf to the middle of the oven. Preheat broiler (or grill in Australia) on medium heat. Season chicken with 2 teaspoons of Italian seasoning, paprika, onion powder, salt and pepper. Heat oil in a pan or skillet over medium heat. Cook chicken on both sides until browned and cooked through (about 8 minutes each side). Transfer to a plate; set aside. Cook the onion in the same pan until transparent (about 3-4 minutes) scraping any browned bits form the bottom of the pan, then add in the garlic and cook until fragrant (about 1 minute). Add the fire roasted pepper (or capsicum), crushed tomatoes, tomato paste, crushed red pepper flakes (if including) and remaining Italian seasoning. Give it a good stir to mix well. Bring to a simmer and allow the sauce to thicken while stirring occasionally (about 4 minutes). Arrange the chicken in the sauce and top each breast with 2-3 tablespoons of mozzarella cheese per breast. Transfer to the oven to broil for 1-2 minutes, or until the cheese in browned and bubbling. Garnish with parsley and serve.

Every Christmas as a kid, I looked forward to decorating Christmas cookies with my best friend’s family.⁣ ⁣ We hadn’t done it in probably 20 years, but when we ended up living within an hour of each other this year, we made it happen.⁣ ⁣ It’s just as much fun as I remembered and we even dabbled in icing, instead of just tossing sprinkles all over the place. It was a jam packed weekend. ⁣ ⁣ Did food go as planned? ⁣ ⁣ Not even a little bit.⁣ ⁣ Am I letting that perpetuate into my Monday, mess up my mindset and throw me off track? ⁣ ⁣ Not even a little bit. ⁣ ⁣ It's life folks, and it's happening every day all around us regardless of our best laid plans and intensions, but, we don't have to let those life moments derail us from the prize we've been eyeing.⁣ ⁣ Do I let weekend's derail me often? Hardly ever actually. I'm typically that girl with the airtight plan in place that even an avalanche couldn't knock down, but this weekend I was the chick hanging on for dear life, eating too many sweets, not sleeping enough and allowing my plans to fall apart. ⁣ ⁣ Was I happy about it last night? Nope! Did I have flashes of how I used to "make up for" sweets binges? Yup! Did I wake up this morning and reimplement healthy habits and choose NOT to overexercise and starve myself? When I first started keto I made every mistake possible, I started it to lose body fat and I actually gained 20 lbs! Eventually, I figured it out, lost 40 lbs and lowered my body fat from 38% to 23% and have been maintaining my goal weight for a while now. Recently I had to stop going for gel manicures!
