Hey friends! So here’s what’s up! Im getting tonight’s chart up for you all now. However, even though I promised, I haven’t posted our meal plan for the week yet 😣. BUT don’t worry, you literally haven’t missed anything! Today marks day 5 I think that I haven’t cooked 🤯. Not awesome. Yesterday hubs had an XC meet at a sports bar and it was 69 cent wing night so that was an easy meal- I had a side salad and 4 wings (1 I couldn’t eat). Today for meal 1 I had my 5 leftover wings then we hit the grocery and we ate Mexican for our schools fundraiser. I ordered shrimp ceviche and it was delicious. I may eat something else tonight after I work on getting our meal plan up just to up my protien for the day since protien is the only goal. If I do, you will see that reflected in my chart on CM if we are friends there and I’ll throw it up in my stories. But now I’m going to get our weekly grocery list and meal plan up for y’all even though we are already on Tuesday. Stay tuned for that post and I’ll explain why I’m so damn stressed! Brb!! Low carb enchiladas is what’s for dinner!! 😋 recipe by delish INGREDIENTS 1 head green cabbage 1 tbsp. extra-virgin olive oil 1 large onion, chopped 1 red bell pepper, chopped Kosher salt 2 cloves garlic, minced 2 tsp. ground cumin 2 tsp. chili powder 3 c. cooked and shredded chicken 1 1/3 c. red enchilada sauce, divided 2 tbsp. chopped cilantro, plus more for garnish 1 c. shredded Monterey jack 1/2 c. shredded cheddar Sour cream, for drizzling DIRECTIONS * Preheat oven to 350º. In a large pot, boil 4 cups water. Using tongs, dip each cabbage leaf in water for 30 seconds and place on a paper towel-lined plate to dry. * In a large skillet over medium heat, heat oil. Add onion and bell pepper and season with salt. Cook until soft, 5 minutes, then stir in garlic, cumin, and chili powder. Add shredded chicken and 1 cup enchilada sauce and stir until saucy. Turn off heat and stir in cilantro. * Place a heaping spoon of chicken mixture into the center of each cabbage leaf. Fold the short sides of the cabbage leaf in first, then roll into a cylinder — like a burrito! Repeat until all chicken mixture is used. * Spoon remaining 1/3 cup enchilada sauce over cabbage enchiladas and sprinkle with both cheeses. One Pan Pasta 🍝 . This was delicious, had to go back for seconds. Sometimes you don’t even realize your on a diet with keto. That’s why I love it. . Ingredients 🛒 1 package iserniosausage Italian Chicken Sausage 1 package miraclenoodle fettuccine 3/4 cup Ricotta cheese 1 cup Spinach 1.5 cups of raoshomemade vodka sauce . Dinner surprise! Saute onions and garlic in olive oil. Add 2 cans drained tuna flakes ( in water) and mix. Ass chopped bell red and orange peppers, ground pepper and smokes paprika.
