🔥 Tender Chicken breasts stuffed with broccoli, parmesan, cheddar, and cream cheese 🧀🥦 For the chicken: 4 chicken breasts 1 teaspoon Italian seasoning optional 1 teaspoon paprika optional 1/2 teaspoon garlic powder 1 teaspoon salt 1/2 teaspoon black pepper 1 tablespoon olive oil For the filling: 2 cups broccoli florets 1/4 cup bell pepper minced 1/2 cup cheddar cheese or melting cheese of choice 4 ounces cream cheese softened ¼ cup grated Parmesan 2 cloves garlic minced salt and pepper - To steam broccoli: Chop the broccoli florets into small pieces. Put all the broccoli in a microwave-safe bowl and about 2 tablespoons water. add water. Cover with plastic wrap and microwave on high for 2-3 minutes. Alternatively, steam on stove-top or blanch in boiling water for 1 minutes. Use a sharp knife to slice each chicken breasts horizontally to form a pocket. Be sure not stop cutting about 1/2 inch from the ends and sides. Season chicken breasts with a generous sprinkle of Italian seasoning, garlic powder, paprika, salt, and pepper. In a large bowl, combine the steam and chopped broccoli, bell pepper, garlic, cheeses and salt & Pepper; set aside. Spoon the mixture into each chicken breast evenly. Secure with toothpicks if needed. Preheat oven to 400F. Heat 1 tablespoons oil in a large cast iron or oven-safe pan over medium-high heat. Add the chicken breasts and cook for 2-3 minutes per side or until golden. Set aside. •In a separate bowl, add butter and cream cheese. Microwave for 30 seconds to melt, being careful to not burn the cream cheese. Stir well. •Add sour cream, vanilla extract, and erythritol to the butter and cream cheese mixture. Stir well. •In a blender, Puree strawberries, lemon juice, and water together until no lumps remain. •Add wet ingredients to dry ingredients and stir until very well combined. Then stir in the strawberry puree. Once combined, stir in egg whites until smooth. •Scoop batter into a freezer sized Ziploc bag. Twist the end of the bag to remove air then cut off a lower corner, and pipe the batter into a buttered donut pan. You will need 12 donut molds total, so either two 6-donut pans or work in batches. •Bake for 12 minutes or until a toothpick comes out of the donuts clean. •Cool completely before removing from donut pan. Otherwise the donuts will crumble For the Glaze: •Put the strawberries, heavy whipping cream and water into the blender then puree. Pour into a small bowl and whisk in erythritol. •Remove from blender and brush evenly across donuts. This glaze is more for extra flavor and moisture so it's a little runny. It was a delicious Keto salad and I would have never expected this person to say what they did (told me my portions are too big, gonna have a heart attack, I should be thin like them 😶) but yet — here we are. 🤷🏻‍♀️ This happened in real life btw which makes it worse tbh 😰 Don’t know how I feel about this but this really brings back memories of me binge eating and hiding my food and eating in private to prevent this kind of stuff from happening. Trying to not let it bother me but I’m low key self-conscious now and it sucks. I gotta engage with this person almost every day so I have to grin and bear it and just prepare for more unwanted remarks about my food. I want to stand up for myself but tbh I don’t really know how in this situation without creating drama or issues. So I don’t know :/ I understand that eating less portions can help with weight loss but no need to point that out to someone who is already trying. Just makes it worse. 🤷🏻‍♀️ • • • • •

Savory Scallion & Cheese Pancakes with Eggs & Avocado 🥑 . - By: @shredhappens Are you team savory or sweet with your pancakes? . Today’s starvation status required some savory pancakes. This is one of my favorite breakfasts and an excellent option if you want to treat yourself to a special brunch this weekend. . These are super flavorful, filling, and of course low carb + keto. . Here’s how to make a couple of servings. Feel free to increase for more: . 1.In a large mixing bowl add your favorite low carb pancake mix. I used a mix from my friend @kawaiitreatsandeats and added in other ingredients based on the specifications on the back (mostly 1 egg, sour cream, and water) . 2.To the batter, add 2-3 tablespoons fresh scallion (or chives) and 1/3 cup shredded cheese of your choice. I used a sharp cheddar. Then let batter sit for a 5 minutes. . 3. Heat up a pan to medium, put in 1 tablespoon avocado or coconut oil (or spray oil), and pour in a heaping tablespoon (or two) of your batter. Turn the heat to low-medium and flip over once you see bubbles forming on the pancakes. . 4.Once plated, garnish up with some more fresh green onions or micro greens. I served with a sunny side up crispy egg, some sliced avo, and some cherry tomatoes. . . Good day healthy food lovers! Today on the list of yummy food, coconut/curry butter chicken with sweet potatoes! It was amazing! Takes about one hour to cook but it's worth you're while! I added 150 grams of real butter in a pan, added 500 grams of cut chicken breast and half a spoon of sea salt. I steered it for about 5 minutes and then I added a can of bio coconut milk and a can of water. I also added a spoon of Indian curry (you can choose yourself if you want it spicy or mild) and pepper, garlic, half chopped red union, a piece of fresh squeezed ginger and a baby spoon of grinded coriander. I heated it till it boiled and than added some fresh broccoli and a slice of fresh lemon. Than I lowered the gas and let it slowly boil for another 50 minutes. In the mean time I steamed some fresh sweet potatoe to go with it, boy it was great!! 😜👍 The pictures are not that great but I hope you get the picture. Got a mixed breakfast 🍽 plate going this morning with all the right stuff 👉 🧀 Halloumi 🥓 Bacon 🥚 Jammy eggs 🥑 Avocado 🍓 Strawberries . Weekend breakfasts are the best breakfasts, don’t you agree? After a quick 1.5 day trip, I’m back in action and ready for a long day. So much to do, so little time… . On the menu clockwise starting from the bacon: . ✔ 1.Pan fried some @porterroad bacon (I did more, but saved the rest for meals throughout the week) ✔ 2. I sliced up some halloumi and pan fried for about a minute on each side in some of the bacon grease. ✔ 3.Sliced up half an avocado and topped with everything but the bagel seasoning. ✔ 4.Sliced up a couple of organic strawberries. ✔ 5.Served with 1 @peteandgerrys egg. For this yolk, I boiled the egg for 6.5 mins and put it immediately in an ice bath. 6.5 mins gets a jammier egg and 8-9 mins late ⏰ get a firmer yolk. Yeah it’s Wednesday and we are all just waiting for the weekend.. but SERIOUSLY try these Banana Caramel Walnut Bagels (which by the way are a new recipe in my Summer is Here weight loss challenge- Cash Prize is $7,000 and climbing)!! They are to die for! I toasted mine with a little cream cheese for breakfast and I am debating reworking my day to fit another in for lunch🤣 ———— Keto4karboholics Banana Caramel Walnut Bagel Makes 9 Servings 1 Servings: 297 Calories, 23g Fat, 5g Carbs, 17g Protein 2 cups almond flour 1 Tbsp baking powder 1/4 Cup erythritol 1 Tbsp cinnamon 2 Tbsp banana extract 2 large eggs 3 cups shredded low moisture mozzarella cheese 5oz cream Cheese Topping: 3 Tbsp Caramel Choczero (or my caramel recipe on my website Keto4karboholics.com) 1/4 Cup diced walnuts 1 Tbsp erythritol Directions: 1. Preheat oven to 425°. Line a rimmed baking sheet with parchment paper. 2. In a medium mixing bowl, combine the almond flour, baking powder, cinnamon, erythritol. Mix until well combined 3. Crack the eggs into a small bowl and fork whisk. Mix in the banana extract. 4. In a large microwave safe mixing bowl, combine the mozzarella cheese and cream cheese. Microwave for 1 minute and 30 seconds. Remove from microwave and stir to combine. Return to microwave for 1 additional minute. Mix until well combined. 5. To the mixing bowl, add the eegs and the almond flour mixture. Mix until all ingredients are well incorporated. If the dough gets too stringy and unworkable, simply put it back in the microwave for 30 seconds to soften and continue mixing. 6. Divide the dough into 9 equal portions. Roll each portion into a ball. 7. Gently press your finger into the center of each dough ball to form a ring. Stretch the ring to make a small hole in the center and form it into a bagel shape. 8. Bake on the middle rack for 12-14 minutes or until golden brown. 9. Remove from the oven and drizzle caramel over the top and sprinkle with erythritol and walnuts. Return to the oven for 3 mins. Today's eats. Meal 2 and 3 were the same. I had some leftover taco meat from this weekend and a couple of zucchins I needed to use. Peeled and cut up the zucchini, spread the taco meat over the zucchini. Baked for 15 minutes at 400 degrees. Then topped with cheese and baked for another 5 minutes. It is really good. CRISPY BAKED ZUCCHINI FRIES RECIPE🤤 INGREDIENTS • 2 medium Zucchini • 3/4 cup Grated parmesan cheese • 1 large Egg • 1/4 tsp Garlic powder • 1/4 tsp Black pepper (optional) DIRECTIONS 1)Preheat the oven to 425 degrees F (218 degrees C). Line and lightly grease a baking sheet. (Parchment paper works best, but foil might be okay if you grease it very well.) 2)Cut each zucchini in half lengthwise 4 times (to make eight long sticks from each squash). Then cut the sticks once crosswise, making 16 sticks from each squash, approximately 4 in (10 cm) long and 1/2 in (1 cm) thick. If the zucchini sticks feel "wet", pat them dry with paper towels. 3) Prepare two shallow bowls one with beaten egg and one with a mixture of grated parmesan cheese, garlic powder, and black pepper. Dip each squash stick in the egg, shake off the excess, then press into the parmesan mixture, coating all sides. (Use one hand for the egg and the other for the parmesan, to avoid getting too much egg in the parmesan which will make it clumpy.) Place on the prepared baking sheet in a single layer without touching 4)Bake for about 20 minutes, flipping the fries and rotating the pan halfway through, until fairly dark golden. 5)Place under the broiler for 2-3 minutes, until darker golden and crispy. Broccoli Cauliflower & Sausage Bake. . This was prepared and in the oven in less than 5 mins. . Instructions 📋 1. Put half of a jar of @bertolli_us Alfredo sauce in the bottom of a baking dish. 2.
