This was a pretty darn good dinner tonight. It was a busy day today so this meal of comfort was just what I needed. Smoked rotisserie chicken breast with butternut squash noodles, steamed Brussels and sautéed green chard. The butternut squash was sautéed in olive oil with a touch of coconut oil, seasoned with fresh sage and parsley and topped with feta crumbles. I hope you’re having a great week!

What I Ate Wednesday💫 My current diet consists of lots of fiber & protein, while keeping an eye on carbs. Simple as that. I didn’t journal today and it felt pretty liberating to know I could handle a full day without any counting. I can’t do that every day & some days I 100% NEED more structure. But today I ate what I wanted and felt satisfied. Look at me listening to my bod!💪🏼💫 • Breakfast: Had a drinkyerbae instead of coffee. Like a Red Bull but healthy - I liked it! Followed with 4 ggfiber, ww cream cheese and EBTB seasoning. Lunch: Chicken Salad on a bed of greens with some bb carrots. Recipe in my last post! Snack: Collagen Bites from getsmpl Dinner: 1 sheet Honey Garlic Salmon with zucchini and tomato. This was so tasty and minimal clean up, which Mr. Skinny is very into😉 • Treat: Had to have a glass for anniversary week! LET’S BE REAL FOR A MOMENT!💯 If you’re like me and you don’t live alone, you sometimes have to face the fact that not everyone in the house has the same healthgoals as you or they simply don’t want to eat what you eat.....🙄🤷🏻‍♀️ So sometimes, you have to find ways around it! Making them think that they eat what they want to eat, but always keeping it the healthiest version! . In 1: You see the delicious and nutritious mix I made for today’s meals (the main part that everyone gets) - beef sausage (really all beef, 🚫meat by products and 🚫corn syrup, glutenfree )➡️my proteins and fat - veggie mix: eggplants, spinach, kale, onions, cabbage, Brussel sprouts (ya, I still had some of that mix) with some Tabasco, Cayenne pepper, garlic powder and mixed Italian spices. ➡️Fibre and vitamins and minerals . In 2: You see the “him” version (he said can we eat some pasta or somethin??!!🤣) and Im not trying to lean out, Im planning long runs this week and weekend (also different goals). - the veggies and beef - pasta (gluten free, brown rice quinoa and corn pasta) (a little more carbs for him as he will need a little more for his runs) In 3: My idea of what that plate should be according to my goal! I stick to my goal and thats important to me, while also taking care of my better half’s wishes! - veggies mix and beef sausage (all my veggies, fibre, and my proteins and fats in the meat) - my infamous brown rice and red quinoa mix! (Was amazing by the way) ( a more fibrous carb to help me with my leaning out goal, quinoa also has some proteins) So, you dont have to complicate your life tremendously to satisfy everyone in your home, or even end up giving in and eating something you shouldn’t eat!! Chicken with Lemon Garlic Cream Sauce. 🍋 . . Recipe from www.littlespicejar.com . •Ingredients 4 large chicken breasts Unbleached all-purpose flour 1 cup chicken broth 2 lemons, juiced or 1/3 cup lemon juice 1 cup heavy cream Salt Pepper 1/2 teaspoon red pepper flakes 6 garlic cloves, minced Parsley flakes Duck fat or olive oil & butter . . •Instructions 1. Slice chicken breast lengthwise, this makes cooking quicker & more even. Season both sides with salt & pepper. 2. Add flour to a large plate & lightly dip chicken breast in flour on both sides. Shaking off excess. 3. Heat duck fat in a large sauté pan on low-medium heat. Add chicken breasts but don’t overcrowd the pan. Fry in 2 batches of needed. Fry chicken breasts until fully cooked then transfer to a plate. 4. Turn heat up to medium-high & add another 1-2 tablespoons of duck fat to pan & sliced onions. While stirring onions, gently scrape up chicken pieces stuck to the pan. Cook unions down until they are translucent, season with salt & pepper. Then add garlic & cook for 30 seconds. 5. Reduce temperature to low & add chicken broth, lemon juice, red pepper flakes & simmer it down to thicken up a bit. 6. Turn heat off or take pan off of heat & add a tablespoon of flour & which with a wire wish while keeping pan off heat. This will incorporate the flour smoothly & prevent any clumping. When fully incorporated, bring pan back over low heat & add heavy cream. Stir constantly but DO NOT bring to a boil. Keep keep on lowest setting, while allowing sauce to thicken up. Taste sauce & add more salt if needed. 7. When sauce has thickened, add chicken back to pan. After travelling 4 countries in Asia, I’m officially in love with spring rolls😍 ・・・ Recipe: Peanut Sauce 1/2 cup 8 tbsp Smooth Peanut Butter 3 tbsp Rice Wine Vinegar 4 tbsp Coconut Milk 4 tbsp Soy Sauce 2 tbsp Maple Syrup 1 inch Fresh Ginger 1 clove garlic Summer Rolls 8-10 Spring Roll Rice Papers 1 Carrot 1 Yellow Bell Pepper 1/2 Cucumber 4-5 Romaine Leaves 1/4 Purple Cabbage 200 g Block of Tofu salt and pepper for seasoning INSTRUCTIONS Preheat the oven to 200°C. Cut the tofu into 2cm batons, and place on a baking sheet lined with parchment paper. Season with salt and pepper and bake for 15-20 minutes until golden brown. While the tofu is baking, chop all the vegetables into very thin strips. This will help them lay nice and flat in the rolls. To make the peanut sauce blend all the ingredients for the sauce until completely smooth. Set both the sauces aside. To assemble the summer rolls, soak the paper in lukewarm water until soft, then lay on a plate. Add in some tofu, and a few pieces of each vegetable. Roll the paper over so the vegetables are covered, then fold in the sides and finish rolling so the summer roll is sealed. Definitely not the most appetizing looking 😅 but this butternut squash risotto is the perfect comfort dish as the season changes!🍂 Recipe: tbsp minced garlic, 1 white onion, about 4 cups of cubed butternut squash, 3/4 cup of risotto, 3/4 cup of red lentils (pre-soaked), 1 cup of peas, bunch of asparagus, 4 cups of spinach, half a jar of strained tomatoes and around 6 cups of vegetable broth plus a lot of Italian seasoning 😋 took about an hour to cook but as a meal prep can last you for a couple days! I was craving tacos and my husband was craving chicken enchilada soup, so I made both 😆 🌮 🥣 I’ve shared this recipe a long time ago on a Vlog, but just wanted to share again because it’s so delicious and perfect for a rainy day, which is what we are having here. Recipe below. Hope y’all are having a great Wednesday ❤️ chickenenchiladasoup souprecipe cozyfood cheesychickensoup mealideas comfortfood ilovetacos Ingredients: 1.5 cups diced onion. 1 tsp cumin 1 tbsp chili powder 1 tsp garlic powder 1/4 tsp cayenne pepper 1 cup masa harina 8 cups chicken broth 1 cup crushed tomatoes 15 oz red enchilada sauce 8 oz velveeta 3 cups shredded chicken (I use rotisserie chicken). Optional: tortilla strips and sour cream Cook the onions in a tsp of oil until translucent. In a bowl combine the masa harina and 4 cups of broth and whisk together. Pour in pot with onions and stir constantly. Mixture will become thick. Pour in remaining broth, enchilada sauce and crushed tomatoes. Bring to a boil. Add the velveeta cubed, stir until melted and then add the shredded chicken. If you aren’t watching calories, add sour cream and tortilla strips. Enjoy!

🇮🇹MEATBALLS, FRESH TAGLIATELLE & GARLIC BREAD Name me a better combo!? ... I’ll wait 🙂 Saved on some calories by using 5% fat meatballs and low fat Dolmio sauce! I added a heaped tsp of garlic, chilli and oregano😋 To be completely honest I didn’t NEED half of a garlic baguette🙈😂 but I had enough calories and macro’s to have half of it so why the hell wouldnt I!!!? I’m still in a caloric deficit meaning I will still continue loose body fat even eating good like this! I can’t preach enough that certain foods are not responsible for weight gain, eating more calories than your body burns is. It’s that simple ❤️🇮🇹

Here it is... basil pesto! Make a decent batch you can have in the fridge to add to pasta, add some flavored to sambos or even as a dip for crackers/breadsticks for kids as a snack 🤷‍♀️ Ingredients: 1 full basil plant (2 packs of 30g) 8-10 tbsp good olive oil Juice 1/2 lemon 1/2 small pack pine nuts 1/3 cup grated Parmesan OR 1/4-1/3 cup nutritional yeast Good punch salt of using nutritional yeast 4-6 large cloves garlic How to: I always sautée the garlic a little first. Just cook for a couple minutes. Then I add all ingredients to the blender, and keep going until it’s smooth. Add a little extra water or oil if it’s too thick. Watching calories? Add water rather than oil 👌🏻 I have this with a frittata, in pasta for a quick lunch/dinner, in a sambo for added flavor.. all round great fridge staple! CHICKEN OR CAULIFLOWER?! 😋 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ I made cauli nugs earlier this week and NOMS. I love throwing these in to the rotation, especially in the fall because I feel like I’m eating all the wings. (Which I do because restriction is silly). But here’s an alternative you might like: ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Set oven at 350° Cut cauliflower into “nugget-sized” pieces. Dip cauli nug into one egg. Then dip into breadcrumb + seasoning combo. Repeat until you coat all the cauliflower bites. Bake for 20 minutes. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Pro tip: mix up a honey, sriracha, garlic sauce to go on them! ⠀⠀⠀⠀⠀⠀⠀⠀⠀ whatscookingwednesday

Orange you glad I said carrot cake and not just carrots 🍰 Did mum buy a bag of carrots and they’re still sitting at the bottom of the fridge? Well it’s time to whip them out! This cake is packed with vitamin A as well as being gluten and dairy free, but it doesn’t skip on that sweet carrot cake taste! Top it with cream cheese, honey, yoghurt or Coco2 hazelnut spread like I did 🌰 ——————————————————— Ingredients: - 500g grated carrots - 3 eggs - 60ml oil (I used olive oil) - 1/4 cup maple syrup - 2 tablespoons honey - 2 teaspoon vanilla extract - 2 teaspoon cinnamon - 1/2 teaspoon nutmeg - 2 teaspoon baking powder - 350g almond meal - Handful of berries ——————————————————— 1. Preheat oven to 160c 2. Mix together all of the ingredients, minus the berries 3. Spoon into lined baking tin 4. Top with berries 5. Place in oven for 1 hour, cover with foil if it starts to burn 6. Wait for it to cool then cover in desired topping
