Almond Butter curry 🍛 🥜 1 tbsp chopped ginger 2 cloves chopped garlic 1 tbsp of oil Chili flakes 1tsp ( can add more but start with small amount and build if want spicier can always add but can’t take back) 200g / 1 tray of mushrooms 250g/ 1 courgette 50 g spinach 1 pepper (whatever color) 1 tin light coconut milk 30g natural yoghurt 2 tbsp soy sauce/ tamari 60g almond butter (smooth) 2 tbsp mild curry powder 1 tsp cumin 1 tsp turmeric 1 tbsp maple syrup Optional : 2 tbsp Dessicated coconut and cashews 1. Finely chop the garlic and ginger (I use frozen ginger and garlic so I just guessed amounts). Chop up pepper, mushroom and courgette into bite size chunks. 2. Add garlic, ginger and chili flakes to large pan with the oil and fry for 2-3 mins whilst stirring. 3. Add mushrooms, courgette and pepper and cook for five minutes. Boil the kettle while waiting as you will need later. Add yoghurt, coconut milk and soy sauce to the pan and stir to combine. 4. When boiled, add boiling water around 100 mls to the almond butter and stir until clump free! Add to pan along with maple syrup and dessicated coconut.If using cashews add in now too and stir. 5. Add curry powder, cumin and turmeric and bring to boil. 6. Reduce heat to let contents simmer and add in spinach until wilted! 7. Enjoy! Highly recommend this as it is more of a sweeter curry due to the almond butter.

For the baby broccoli 🥦 I roasted them in the oven for 10 min at 380 degrees. I drizzled olive oil and seasoned 🥦with the No bagel sesame seasoning then covered it with foil. Follow the instructions for the pasta. For the delicious part, chop up a few bell peppers and in a pan sauté them with the beef-less ground then stir in the roasted garlic marinara sauce. Combine pasta and sprinkle with cheese. I used 🐐 for my plate but for my family I used shredded mozzarella y listo. Seriously no brainer 🧠dinner, super good, and healthy! Cuz who the F*%# wants to spend so much time making dinner after a long day. Spot the fussy eater in the house 🙄 . I have 3 out of the 4 kids that like to eat healthily - tonight enjoying one of their fave meals. It doesn’t look overly appealing but it’s so tasty 😋 . A little orange theory transformation post today 🥰 obviously I have been tracking and eating mindfully but I can’t say enough how much I love orange theory and so glad that I tried the free class. The picture on the left was from Mid July when I was trying the first 2 classes and the picture on the right was from yesterday! a little less fluffy I would say 🤪 I’m feeling really good and going to class 4-5 x a week makes me feel strong and accomplished seriously every time I go to class. I’ve met some really great people there and love my coaches ❤️ I was so afraid to try it because it is a tough workout but I’m so glad I did. I have never incorporated strength training and weight training in my weight loss journeys previously and I can seriously tell how much it has changed my body. People have told me how important strength training is for your body and I was always so afraid to try it but orange theory makes it a lot less scary 🥰 my goal is not skinny anymore, it’s to get stronger.
