These look horrid but they are one of Luke’s favourite lunch items. Chickpea patties. They are super easy to make and can be taken in work lunches too 😊 Ingredients: 400g tin of chickpeas drained 3 crushed cloves garlic 1 tsp ground cumin 1 tsp ground coriander 1 small onion chopped Juice of half a lemon (2 tbsp) 1 tbsp plain flour Method: 1. Blend all the ingredients together excluding the flour. 2. Stir in the flour. 3. Flour or wet your hands and mould mixture into small patties 4. Put patties into the fridge for at least half an hour to firm up. 5. Fry in oil until browned on each side. I freeze these in batches of three for lunchbox freezer stashes. They are especially good with pitta breads but Luke will also just eat them on their own.

Yesterday, someone made one of the meals I shared, and it inspired me to share another one! 😃🙌 Seriously, my heart feels SO happy when I hear that these posts, in these little squares, are actually helpful and inspiring change. I just love it!!! 💕 Pictured here, is a summer meal that we adore! 😋 The chicken, is chicken breast thats been sliced in half to make cooking time more efficient. It's baked on a sheet pan at 400°F for about 25 minutes, and is brushed with BBQ sauce. In the last 5 minutes of baking, I top it with some shredded cheese. The rice is simply cooked as directed on the package, but in homemade chicken bone broth instead of water! And the asparagus is tossed in oil, before sprinkled with salt and parmasan cheese. It gets baked on a sheet pan for about 10 minutes (tossing once halfway). Guys, this meal never disappoints! Final bowl of congee! Praise the Lord!! This is definitely not one of those foods that I am excited to eat. It’s like mushy grits, mushier than grits knew they could be, beyond polenta mush. Like grits without soul maybe. I can see how it could be delicious and beautiful but not when made with water and only seasoned with salt and a little cumin. It needs more if you’re going to have it for breakfast four days in a row. Today I almost just skipped breakfast but then it would have been waiting on me and I couldn’t take another morning of thinking about it. There are some who’ve been having it for breakfast for years. Yes, some probably love it, others are waiting for the day when they no longer need to take rations but can provide a variety of food for themselves. Let's talk meal deals... Lunch time comes and a quick trip to M&S seems a good idea. I'll get a meal-deal, that's what people do right? (Well judging on the queue, they do). Better grab something healthy. Feta, Tomato, Pasta Salad, Mango Yogurt Pot and a Smoothie. Seems healthy enough? After remortgaging the house and selling your nans jewelery to pay for it, back to the office. 20 minutes later and 693 calories have been consumed. How many people must do this whilst also expressing a wish to lose weight? "But it was healthy" Mid-afternoon comes and you've downed a Capuccino because you've had a crash in energy from the 37g of sugar in your lunch and well, coffee is life. A biscuit also goes 'Missing In Action' from the office kitchen and Sharon from finance has driven you crazy all day so you're having a glass of white wine when you get home. The coffee, biscuit and wine just topped up your calorie count by 326. Add your lunch and we're over the 1000 mark before you add your evening meal in. Oh and you had breakfast. You've been sat on your derriere all day and you didn't go to the gym because you forgot your gym gear for the 4th year running. This is the same curry I had on top of a white bread roll the other day 😍 Kidney bean curry 🌱 Tinned kidney beans Tinned chopped tomatoes 1 Onion 1tsp of: Cumin, Coriander, Turmeric, Chilli powder and a bit of salt Fry off the onions, add chopped tomatoes and spices, simmer for 5 mins. This is so so true. At the start of losing weight over 12 months ago, I literally threw myself in 150%, and I was having big losses most weeks. It’s no secret that it’s started to slow down for me which is probably due a few different reasons. 1.) the less weight you have to lose, the slower it comes off. A big chunk of the weight I wanted to lose has gone now and whilst I’m by no means where I want to be, I’m so so much closer than I was at the start. 2.) I’ve relaxed it a little because that’s life. I spend 90% of my time eating healthy, and generally it has become a way of life. However, I don’t want to be out for a meal and order a salad. I don’t want to miss out on social plans because I’m dieting. It’s not realistic for me. I take my hat off to the people who live and breathe being healthy if it works for them but I think there’s so much more to life than just weight loss and whilst it’s still important to me, I don’t mind getting there a bit slower if that means I can enjoy my life more along the way. 3.) I’ve deliberately slowed it down after a chat with my GP and a consultation with a surgeon as losing a lot of weight very quickly isn’t always healthy and can be a big contributing factor to getting unwanted excess skin (obviously no way around it but the quicker you lose, the less time your body has to adapt to its new shape and the skins elasticity cannot keep up). For these reasons, am I bothered if I only lose 1lb a week? No. The speed in which the weight comes off has absolutely no correlation with your success in my opinion. And there’s plenty of evidence to suggest if you absolutely hammer a weight loss plan and deprive yourself along the way, there’s a good chance you may regain all the weight and end up back where you started. First time cooking with plantain and I loved it👌 Such a yummy addition to this burrito bowl made up of rice, fried black beans and roasted veggies (I added jalapeños too cos I toned down the spice in the rest of the bowl) 🌶🌶 Pretty much always use the same spices for these Mexican style meals (smoked paprika cough cough) but thought I’d share what I did for this bowl anyway cos it was delicious (These quantities were perf for 3 people) . For the roasted veggies... 3 bell peppers 2 onions Handful of tomatoes Glugg of olive oil Drizzle of balsamic 1 tsp Garlic powder 1 tsp cumin seeds 2 tbs Smoked paprika Salt 1. Set oven to 200c then roughly chopped peppers, onions and tomatoes and arranged on baking tray 2. Drizzled with a lil bit of balsamic (I know this sounds weird but it makes it sticky and sweet), olive oil, garlic powder, cumin seeds, salt and smoked paprika and mixed it up 3. Oven for about 20-25 mins (Reminder - if doing rice get it cooking before moving on to the black beans) . For the black beans... 2 tins black beans (drained) Probably about 4 tbs smoked paprika Probably 2 tbs ground cumin 1 tsp garlic powder 1 tsp of cayenne pepper Juice from 1 lime Glugg olive oil Plenty of salt 1. on low heat warmed olive oil 2. Added all other ingredients 3. Fried on low-medium heat for about 10 mins stirring occasionally (could cook for about 5 mins instead but I like mine mushy so they are more like refried beans) . For the plantain... 1 large ripe plantain cut into slices 1 heaped tsp coconut oil 1 tsp granulated sugar 1 tsp ground cumin Lil sprinkle of cinnamon Lil sprinkle of cayenne pepper Lil sprinkle of salt 1. In a bowl, mixed plantain with the other ingredients (apart from the oil) 3. Heated cast iron griddle pan (medium heat) 4. Added coconut oil to pan 5. Added plantain to pan, making sure the slices didn’t overlap 6.
