Cajun Chicken w/ Coriander & Lime Rice😋😍 . Would You Make This Dish? 🔥 Tag 3 people that love healthy food! 👇🏽 . Follow real_healthy_eats 🌿 Follow real_healthy_eats 🌿 Follow real_healthy_eats 🌿 . 150g (3/4 cup) dried long grain rice 1 and ½ tbsp Cajun seasoning 2 skinless chicken breasts 1 and ½ tbsp olive oil ½ red bell pepper, deseeded & sliced ½ yellow bell pepper, deseeded & sliced ½ green bell pepper, deseeded & sliced 1 small brown onion, peeled & sliced Small bunch coriander (cilantro) roughly torn Zest of 1 lime 1 avocado, peeled, de-stoned & chopped Instructions Boil a large pan of water, add the rice & simmer for 15 minutes until the rice is tender. Pour into a sieve & leave to drain. Whilst the rice is cooking, heat a cast iron griddle pan on a high heat & brush on a little oil. Sprinkle the Cajun seasoning & pour half the oil on the chicken breasts & rub it in using your hands. Flatten the chicken breasts slightly with your hands & place on the hot griddle. Cook for 7-10 minutes, turning once, until the chicken is charred & no longer pink in the middle. Place on a chopping board to rest whilst you cook the vegetables. Brush the rest of the oil on the griddle & place the peppers & onion on in a single layer. Cook for 5-6 minutes, turning a couple of times, until lightly charred. By now the rice should be cooked & drained. Fluff it up with a fork & stir through the coriander & lime zest. Divide the rice between two bowls. Cut the chicken breasts into slices & place on top of the rice. Add the char-grilled peppers and onion & top w/ the chopped avocado.

Day 1 recap (August 18) - it was supposed to rain for most of the day. We had arrived the day before and were unpacked and settled. The morning looked decent so we took the boys for a mile walk to the old lighthouse and also the harbor. Thompson was obsessed with the boats and did decent on the small trails. 🥬🥕🌶🥒🧀🍖🥗I had all plans to only make this & give it to Ryan for lunches & a side for dinner last night...BUTTtttt it was so good so I had a serving as well. I love a good cold pasta salad! He flew at a little over 20k feet yesterday. So it was cold up there, then he would sweat when they came back down in altitude & they felt the heat/humidity again. Usually on days like this he doesn't want hot food for dinner. The fluxes in body temp & flight altitude just make him want a cool refreshing meal. FRIED BANANA & CHOCOLATE WRAP - Craving the carbs and glucose so had this as my pre-training meal this morning. Definitely hit the spot and gave me plenty of fast energy to hit arms and shoulders. - It’s so quick and simple... 1) Zap a wrap for 10secs in the microwave to soften it. 2) Spread 20g gupuds Chocolate & Salted Caramel Spread. 3) Place a banana in the middle. 4) fold over opposite ends of the wrap and roll it up, using toothpicks to stop it unraveling. 5) Heat up 4g coconut oil in a pan until it’s sizzling. Place the wrap in the pan, turning until it is golden brown and crispy all over. 6) Remove from pan and roll in half a teaspoon of granulated sugar and a sprinkle cinnamon. 7) Serve with clarks_it Caramel Sauce. 8) You can thank me later. - SWIPE FOR FULL DEETS AND STEP-BY-STEP PHOTOS
