SUNSHINE CHICKEN TRAY BAKE: I LOVE this dish, Matt's mum made it a few years back and it's now on repeat in our house.... Great for nights when you don't want to stand over the hob, perfect for entertaining and super delicious! There's also a few veggies in there, so kinda healthy too... I served mine with a watercress salad and some crusty bread 🖤 —— INGREDIENTS Orange segments + juice (from 2 large oranges) 4-6 chicken thighs Half a ring of chorizo 1 red pepper 1/2 bag new potatoes 1 can butter beans 1 red onion A whole garlic bulb – halved or just the cloves A few sprigs of fresh thyme 1 red chilli (optional) salt & pepper (serves 3-4 people) —— METHOD 1 – pre-heat oven to gas mark 6 (200c) 2 - squeeze the juice from one of the oranges . Set aside. 3 – roughly chop all ingredients (reserving the thyme until after cooking) - no need to be fancy this is a tray bake! And drain the butter beans. 4 – Place the chicken thighs (skin-side up) onto your baking tray and dot all other ingredients in and around. Pour over the orange juice and season with a pinch of salt and pepper. 5 – pop in the oven to roast for around 45mins-1hr (periodically check and shake things about). Once nicely cooked, sprinkle over fresh thyme and serve! • Note: You may want to spread everything evenly over two trays so that there is enough room for everything to roast properly... Just remember to swap the trays around in the oven a few times if (like mine) yours has a hot spot or is hotter at the top.

Personally, I believe it’s one of the most important things in life because (as RuPaul says) if you can’t love yourself, how in the hell can you love somebody else? (Can I get an AMEN?) Self love is something that I’ve personally struggled with my entire life and it used to really take a toll on me. I would constantly overanalyze everything about myself until I felt like I nothing about me was ever good enough. Thankfully, at 20 I finally got over that and began to love myself. Life is honestly so much better when you learn to love and respect yourself instead of judging yourself and trying to morph into something you’re not. There are still some days where I don’t feel that great about myself, but then I remember that no one is perfect and that you have to #loveyourself. Just digging into my MM100 nutrition plan and this freakin’ amazing recipe book!! I’ll be honest, I need ALL the help I can get in the kitchen!🥰 This makes it super easy and takes ALL the guess work out of it!! Portion sizes too! But for now this one’s on me!❤️ . . .🌱🦐 INGREDIENTS • 24 raw medium shrimp, peeled, deveined, tails removed (approx. 12 oz.) • 2 tsp. mild Jamaican jerk seasoning • 2 tsp. extra-virgin organic coconut oil, divided use • 3 cups cauliflower rice • ¼ cup green onions, chopped • ¾ cup green (or red) bell pepper, chopped • ⅓ cup canned lite coconut milk • 1 Tbsp. fresh cilantro, chopped • 2 Tbsp. unsweetened shredded coconut • 2 wedges fresh lime (for garnish; optional) INSTRUCTIONS 1) Season shrimp with seasoning. Set aside. 2) Heat 1 tsp. oil in medium nonstick skillet over medium-high heat. 3) Add cauliflower; cook, covered, stirring occasionally, for 4 to 6 minutes, or until cauliflower is tender. Set aside and cover to keep warm. 4) Heat remaining 1 tsp. oil in medium nonstick skillet over medium-high heat. 5) Add green onions and bell pepper; cook, stirring frequently, for 3 to 4 minutes. 6) Add coconut milk; cook, stirring frequently, for 1 to 2 minutes, or until most of coconut milk is absorbed. 7) Add shrimp; cook, stirring occasionally, for 2 to 3 minutes, or until shrimp is firm and opaque. 8) Evenly divide cauliflower rice between two serving plates. Evenly top with shrimp, cilantro, coconut, and lime wedges (if desired). RECIPE NOTES • Cauliflower rice may be found at your favorite grocery store. • To make cauliflower rice, place half a medium head of cauliflower, cut into florets, in food processor; pulse until cauliflower is cut into pieces about the size of rice. These Spicy Korean Cauliflower Wings by @hannah__chia look 🤤 🔥 🔥 Check out the recipe below 👇🏾 . SPICY KOREAN CAULIFLOWER WINGS 1 small to medium head of cauliflower ½ cup unsweetened non-dairy milk ½ cup water ½ cup all-purpose flour or rice flour* ¼ tsp each salt and pepper . Maple Gochujang Glaze: ¼ cup gochujang paste 3 tbsp maple syrup 1 tbsp sesame oil ½ tbsp tamari or soy sauce 1 tbsp apple cider vinegar 1 tbsp minced ginger 2 cloves garlic, minced ¼ tsp each salt and pepper water to thin (if necessary) . Preheat oven to 450F (232C) and line two baking sheets with parchment paper. Remove leaves from cauliflower and cut into bite-sized florets. Whisk all batter ingredients together in a mixing bowl, adding water slowly at a time until it achieves the desired consistency— the batter should be pourable, but thick enough to stick on the cauliflower. Dip each floret into the mixture and coat evenly, and shake to remove excess. Arrange florets on baking sheet (shouldn't be touching) and bake for 25 minutes or until golden brown, then remove from oven. While florets are still baking, whisk together sauce (adding additional water if needed to reach a glaze consistency). Let baking sheet cool slightly (to prevent bottoms from burning) and reduce oven to 400F. Dip each baked floret into the sauce until coated, shake to remove excess, and place back on sheet and bake for an additional 12-15 minutes. Remove from oven and let cool before eating! Serve garnished with chopped scallions+sesame seeds and with dip. . Note: If using rice flour (for gf option), you may need to add a bit more water to the batter. Lunch Time: A big tip I tell my clients is to create realistic expectations for yourself. What does that mean? It means, hey, if you know you’re not going to meal prep everyday, then your ass better figure out a way to hit your calories and protein. One way I do this myself is to have some meals pre-prepared. Like this @traderjoes four cheese sausage ravioli. It took me 3 mins to make once the water was boiling. Top it off with some arugula for veggies and garnish, and then some air fried sweet potato fries, this meal took me 20 minutes to make. Set yourself up for success, not unrealistic expectations where you expect yourself to be a fucking chef and prepare all of your meals. Baby steps my friend. Want more easy meal prepping tips? I noticed some of you are new to my page! Even if you’re not I never gave ya run down on who I am & what I’m about. • I’m a self acclaimed cool mom into holistic health , fitness & hair. When I’m not in the salon I’m working at home (poolside lately ☀️) on my brand spanking new coaching business. • Being a former cancer survivor & current cancer fighter that chose a pretty uncommon but successful path to fight my battle I fell in love w/ spreading awareness about all the options to healing we actually have. I mainly work with busy women looking to thrive , teaching them how to have a better relationship with food & positive body image. That there is no 1 RIGHT WAY to reach YOUR goals or take on YOUR way to HEALING. But that a successful one has to include the mind, body & soul (I say that in the most non-hippiest way possible w/ a touch of a jersey accent 😆). • Between focusing on my work I’m a single mom to a 4 year old diva; Gianna - we call her Gigi. She loves school, dance , gymnastics & is currently obsessed with nightmare before Christmas & Coroline. Creepy, I know. • Through this I’m fighting my 2nd battle with inoperable liver cancer since 2014- 5 yrs now! My first diagnosis was 2011 where I had 80% of my liver removed but gained a sick scar that looks like a Mercedes symbol 😂😉. I’ve never done chemo & never will. I did one of the strongest forms of radiation on the market a year ago & I just recently recovered my the onset of issues I believe stemmed from that “treatment”. I was so weak, my complexion was yellow as a canary, couldn’t eat, constantly vomiting & my liver functions were so high my drs were shocked I wasn’t on liver failure. • Now I feel better than ever , literally. To some people this may seem a lil wild but it’s me. Thanks for being so supportive & if you’re new I hope you can find some inspiration 🙌🏼

There may not be mac and cheese on my supper club menu BUT trust me my tempeh tikka masala is not to be missed. Green Vegetable Shakes. These don’t taste good. It is purely for the purpose of nutrient intake @themealprepmanual⁣ ⁣ INGREDIENTS ⁣ 1 pint (473mL) water⁣ 2 tbsp (25mL) lemon juice⁣ 1 cup (85g) carrots⁣ ~3-4 cups (100g) kale ⁣ 2 (365g) pears ⁣ 1 medium (300g) cucumber ⁣ 1 medium (200g) zucchini ⁣ 1 inch (15g) ginger ⁣ ⁣ PREP⁣ 1. Blend until smooth. ⁣ 2. Store in mason jars and refrigerate or freeze if you’re prepping more than a days worth. ⁣ ⁣ You may or may not know that I hate vegetables with the fire of 10,000 suns. I don’t consume any form of raw leafy greens through actual chewing and eating of food unless it is drowning in Caesar dressing and has a 2:1 Parmesan to leaf ratio. Raw leafy greens suck ass. I don’t trust anyone that says they like them. I refuse to eat them in full leaf form. It takes 20 minutes to chew the amount that I can drink in 2 seconds in liquid form. I would take 2 seconds of torture over 20 minutes anytime. Eating raw leafy greens is number 3 on my list of torture methods that would make me crack only behind waterboarding at number 2 and waterboarding with liquified raw vegetables at number 1. If you can eat raw leafy greens then good for you, that’s extremely healthy but I have to question your sanity. I was hanging with my college friends this weekend and one of them ate an entire 1lb package of greens in a day. Plain. With nothing on it. Nothing has ever infuriated me more. ⁣ ⁣ It may be worth your time to try out one of these shakes. We shouldn’t avoid leafy greens because of how nutrient dense they are but I get it if you can’t eat them. I usually put broccoli sprouts in as well but I didn’t have any this time. FREEZER FINDS 💪🏼 The other night I was rummaging through my fridge trying to find something to make for dinner, but ofcourse, ALL I had was a few ingredients to make a salad...⠀ ⠀ I was in the mood for something a little heartier and high in protein, so I took a peek into my freezer and managed to find this gem! I had completely forgotten that I had this delicious box of @tabufood Tempeh Kofte (fermented soybean balls) which are SO good.⠀ ⠀ All I did was pan fry them and in a separate pot I made a basic tomato and onion based sauce, then mixed it all together with a little sprinkling of grated mozzarella on top...and, voila 💁🏽 10 minutes later I was enjoying a delicious, healthy meal 😁 They were in my tummy faster than the flash of my camera 📸😂⠀ ⠀ This is definitely another product I would recommend adding to your list. Not only are they high in protein (5 balls = 19g protein) but they are also even better served on a bed of zucchini noodles. Your very veggie version of saucy meatballs 🍝 ⠀ ⠀ Moral of the story? Always check what you have hidden in your freezer or pantry 😉 you never know what you might be able to make with a little imagination!

Toss for a few minutes and add to 🥑🍞. ⁣ ⁣ ⭐ For a soft boiled egg:⁣ 1. Set it out to room temp.⁣ 2. Boil water.⁣ 3. Use a spoon to lower egg in water.⁣ 4. Set timer for 6m.⁣ 5. Transfer to ice bath and remove shell.⁣ ⁣ Enjoy 😊⁣ ⁣

For me, meal prepping isn’t just an idea…it’s sort of a way of life now. But why do I do it? Boil an egg 🥚 for about 6 minutes then Immediately put in ice bath for 2-3 minutes before slicing.
