chicken pesto spinach fettuccini 😻🤘🏼 Follow fitfoodo for daily posts! 😍 ————————————————————— ingredients: 8 oz spinach fettuccini 1/2 lb chicken breast 2 cups veggies (i have mushrooms, bell peppers, grape tomatoes, spinach) 1/2 cup pesto olive oil parm and red pepper flakes, to garnish ————————————————————— directions: to make: prepare fettuccini according to package instructions. when done, drain and place back into pot, then leave to side. heat up 2 tsp oil in a large pan. cook chicken with salt and pepper, cook until juices run clear. add another 2 tsp oil into pan and cook together veggies. add cooked chicken and veggies with fettuccini and toss with 1/2 cup pesto 💯 finish it off with a sprinkle of parm and red pepper flakes on top! . . . . One of the things they DON’T teach you in nursing school (but I kinda think they should🙈) is how to avoid alllllll the break room treats and pot lucks we host like every other shift. I survived about six of my seven years on nights on drivethru crap for dinner and 4am trips to the vending machines. I finally got smart and started PACKING good things that actually helped me make it through those shifts instead of making me feel worse. When I switched to days, I thought those temptations would be much easier to avoid because I’d be on a more “normal” schedule. But then I found days is almost worse...the coffee shop is open, ordering out on weekends, more families with more thank you treats🤦🏼‍♀️ So eight years in, I’ve made it my personal mission to share that nurses CAN eat better! It doesn’t have to be fancy...my go-tos are bagged salad mixes with a protein or leftovers for lunch, fresh fruits and veggies for snacks, and sometimes a health(ier) snack bar for emergency hangriness. You just have to be proactive, make a plan, and pack it up! Portugese Kale & Chorizo Soup! I’ve made this (one of my all time favs) before but here’s another version… . Sautee sausage over high heat in oil until brown. Remove sausage from pot when done. To that same pot, add diced onion, celery, and carrots. Season w salt & peps and cook until tender. . Add herbs—rosemary, oregano and thyme (whatever you have is fine). Also add about 4 cups chicken broth and a couple cups of small potatoes. Bring to a boil, then reduce to a simmer and simmer for 10-15 min. . Now add 1 can diced tomatoes and a few handfuls of kale. Add sausage back in. Bring to a boil again and then simmer for 10-15 min—basically until the potatoes are done. . Add 1 can rinsed cannellini beans (or any white bean—chickpeas are good too). Stir. Now add some fresh basil and serve with a little parmesan. . This soup is NEXT LEVEL good. GET A MONTHLY MEAL PLAN IN OUR BIO!⠀ .⠀ By nourishingalex⠀ .⠀ Sweet and Sticky Tofu bowl 😋 The tofu is sticky, delicious, and crispy on the outside! ⁣⁣.⠀ • 1/2 block extra firm tofu, drained & pressed all the liquid out⁣⁣⠀ • 2 tbsp soy sauce⁣⁣⠀ • 2 tbsp maple syrup⁣⁣⠀ • 1 tbsp sriracha sauce⁣⁣⠀ • 1 tsp garlic powder⁣⁣⠀ • 1/2 tsp ground ginger⁣⁣⠀ • 1 tbsp cornflour ⁣⁣⠀ ⁣⁣⠀ 1. Prepare the tofu by draining all the liquid out of the packaging, then gently pressing the tofu in between two clean tea towels until dry. Slice the tofu into bite-size cubes.⁣⁣⠀ ⁣⁣⠀ 2. Whisk all the sauce ingredients together in a small bowl until smooth and well combined.⁣ Stir in some sesame seeds for a crunchy texture.⁣⠀ ⁣⁣⠀ 3. Dunk the tofu cubes into the sweet sticky sauce until the tofu cubes are covered, then marinade them for 30 minutes by covering with clingfilm and placing them into the fridge to chill and soak up all the flavours.⁣⠀ ⁣⠀ 4. transfer the tofu into a heated frying pan/wok with a little spray oil. Calorie deficit ✅ Next step: exercise and protein! 🏃‍♀️💃🧘‍♀️🏋️‍♀️🚴‍♀️💪👈 Scrolling through IG yesterday when I saw a post from hannah_healthy_living showing her meal prep with the focus on protein. Ooops, I forgot about protein 🤦‍♀️ My goal is to lose fat, not muscle! And eating protein can help me do both by keeping me fuller for longer and providing fuel to my muscles. The last couple of weeks I've been averaging around 60g of protein a day but I'd like to get this up to 80g at least. This means my 3 meals and snack should have around 20g of protein each. To help me out, I picked up some vettapasta from and it boosted my protein for dinner easily!!! This is especially important now I've started working out again 😁 Trying out a couple of gyms to find my fit (excuse the pun🤭) and yesterday was kickboxing 🥊 so fun!! Breakfast- overnight oats (30g), unsweetened almond milk (100ml), greek yogurt (100g), frozen blackberries and raspberries (100g), coconut and chia seed granola (10g) and cinnamon (350 cals + 9g protein) Snack - mini pizza rolls made by a colleague (100 cals?) Lunch- roasted veg (pumpkin, sweet potato, beetroot, eggplant, capsicum), spinach and 1/2 cup brown rice (400 cals + 10g protein) Dinner- protein pasta and tuna in chilli oil (450 cals + 44g protein!) Total- 1300 cals and 68g protein

If you liked the OG version of this and like cheesecake then you’re going to like this as well themealprepmanual⁣⁣ ⁣⁣ INGREDIENTS:⁣⁣ 3 (150g) egg whites⁣⁣ 1/2 cup (113g) unsweetened applesauce ⁣⁣ 1.5 (45g) vanilla casein ⁣⁣ 1 tsp (4mL) vanilla ⁣⁣ 2 tsp (8g) stevia⁣⁣ 1/2 tsp (1g)baking powder⁣⁣ 2 tbsp (30g) mini chocolate chips ⁣⁣ 3 tbsp (15g) cocoa powder⁣⁣ 1/2 cup (113g) plain non fat Greek Yogurt ⁣⁣ 1/2 cup (113g) fat free cream cheese ⁣⁣ 1 tbsp (5g) oat flour ⁣⁣ ⁣⁣ PREPARATION ⁣⁣ 1. Preheat oven to 300F⁣⁣ 2. Beat the egg whites, vanilla, & baking powder until stiff peaks form. ⁣⁣ 3. Add 2g stevia & cocoa powder. ⁣⁣ 4. Add in applesauce & casein. Veggie Night 🥦 . I know I put tenderstem broccoli with everything, but it really is the best🤷🏽‍♀️😂 . Tonight I made a few portions of mushroom risotto, which is a super easy and healthy mid week meal 😇. . RECIPE: • 1 pack of mushrooms • 1 large onion • 2 garlic cloves • ~250-300g (dry weight) risotto rice • 1 veg stock cube • 3tbsp grated Parmesan cheese • 200g tenderstem broccoli . 1. Fry the onions and garlic in some butter or olive oil for a few minutes, and then tip in the mushrooms. 2. Then add the rice, followed by the stock (made up with boiling water). Stir occasionally and keep adding water until the rice is cooked, making sure it doesn’t burn. 3. Steam the broccoli whilst it’s cooking, and then once the risotto is cooked stir in the Parmesan so it melts 🤤. . ✅ 2 of your 5-a-day ✅ low in sat fat

Look at those luscious berries 😍 perfect for desserts, fruit salads, or a snack!⠀ ❤️ It can be seasonal/local! Nothing tastes quite like fresh fruit from your local farmer’s market 😋⠀ ❤️ It’s packed with vitamins and fiber!⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Reasons why I love FROZEN fruit:⠀ ❄️ It can be kept on hand WAY longer than fresh fruit, which can mean less food (and money) wasted⠀ ❄️ It’s picked and frozen when it’s more ripe, and therefore more nutrient-dense (instead of being picked before its ripe so it can ripen while sitting on a truck or plane to your grocery store)⠀ ❄️ It’s perfect for smoothies (so cold!) or as a topping for yogurt bowls, ice cream, or oatmeal (it makes its own juice when it thaws!) ⠀⠀⠀⠀⠀⠀⠀⠀⠀ What’s your favorite frozen fruit?? Carnitas slow cooked pulled pork tacos! All the prep work is in the beginning then you let it do its thing for 6-8 hours low and slow! You’ll need 4 lbs Pork shoulder cut into 2inch cubes, 8 cloves garlic sliced, 4 bay leaves, 3-4 ancho Chiles in adobo sauce minced, Salt & pepper, 1 tsp of cumin, Juice from 2-3 limes, Juice from 1 orange, 4 springe terragon, 4 springe of oregeno, 4 springe thyme, dash honey, 2 onions, peeled, quartered, chicken stock enough to cover. Heavy salt and pepper pork cubes and let sit for at least 30 mins. I used a cast iron Dutch oven. Add in olive oil and brown the garlic. Remove garlic from oil and add pork to brown/sear each side. Take out pork set aside. Add in onions on bottom and place pork back in along with garlic and rest of the ingredients. Add chicken stock last to just cover, bring to a boil then reduce to a simmer, cook 6-8hours. Stir every once and while. Remove meat set a side in pan. Discard stems and leaves. Immersion blend all onions and juices/drippings till smooth. Reduce the liquid a bit. With forks pull pork apart and add juices/dripping over pork and mix. I have it served on 45 cal carb watcher tortilla having only 4g of carbs and added avocado, salsa, a bit of fresco cheese, lime, and serrano peppers. Went for nice walk with my boy today along the water. All the leaves were so pretty, every shade of red, yellow and orange! Green Goddess Tuna Salad Sandwich Trying to get over the Hump Day hump? Us too. This is no ordinary tuna salad, so get ready to rock that Hump Day slump! Green goddess dressing is one in a million, sometimes it feels like once you’ve tried one then you’ve tried all of them. DO NOT, skip on this one though. The tarragon is an interesting add that we have not seen in other recipes and it is fantastic. Makes us wonder why we have not added tarragon to green goddess sauces before. It adds a light anise/licorice like aroma to the sauce, while the parsley and basil keeps the fresh “herbiness” going. At first, you might freak out at how much liquid there is, but do not fret! After mixing in the celery, onion and tuna, the sauce get sucked up by the ingredients and creates the perfect consistency.
