Today was my "free day" to eat whatever I wanted. So, from Monday thru Friday, I did not eat sugar. Things I noticed all week: I was way more relaxed, less anxious. I was happy and in a good mood, basically less grumpy with my poor husband. 😬 I did have headaches all day on day 3, but it only lasted that one day. Less tired in the afternoons, more energetic. I also am not drinking caffeinated tea every morning. Some mornings, I'm having decaffeinated tea. Trying to give my little heart a rest, as well as thinking caffeine can contribute to anxiety. Today I had a bunch of sugar. While I did enjoy it, I also realize I appreciated it more than when I just ate it every day, whenever I wanted. I like the feeling of appreciating it more. Salted tahini cookie dough fudge (no-bake + keto + sugar free !!!) . Posting twice in one day (sorry y’all) because these guys are just too good to keep to myself !!!🙌🏼 . These tahini cookie dough fudge cups are SUGAR FREE, LOW CARB and VEGAN (depending on what choc chips you use😋)! Made with three easy main ingredients - tahini, coconut oil & dark chocolate. Can I get an Amen ? 😆 . TAHINI COOKIE DOUGH FUDGE✨ Combine 1/2 C tahini (ground sesame seeds) + 1/4 C melted coconut oil + 1 tsp @wholeearthsweetener monk fruit/stevia liquid sweetener + 1 tsp vanilla extract + 1/16 tsp salt + 1/4 C @lilys_sweets chocolate chips ✨Mix all together and put into lined mini cups. Place in freezer until hardened. . ✨Then take out and use another 1/4 C melted Lily’s chocolate to layer on the top of the fudge. Put back in and freeze, then sprinkle with @maldonsalt sea salt pieces & enjoy ! (Store in freezer!)

Hey friends, it’s me !!! (featuring a failed self-timer at the lake 😆) - Since I just shared more about my health journey over on my story (check out the highlight!) I thought I’d do a mini blurb/ intro on here too ! - I’m a Southern California native, a sister, daughter & friend, a (soon-to-be) pediatric ICU nurse, a believer in Jesus, a (wannabe😋) Keto recipe developer and a chronic pain fighter. - My journey with pain started almost 7 years ago & since then it’s been a LOT of ups and downs, a lot of doctors appointments, treatments, learning, and growing. - This page started as a way to blog about my lifestyle changes - going gluten/grain/sugar/carb free to try to help lower inflammation and pain levels. I quickly realized how much I enjoyed cooking & creating in the kitchen. But recently I’ve realized that there’s more to my story than simply the food that I eat! I hope to start sharing more of my heart, along with my recipes (in no particular order😋) - If there’s one thing I take away from this crazy hard journey with pain - it’s that life (in all of its glory and crap) is GOOD & through it all - God’s love & faithfulness remains steadfast. I’ve seen that God uses my pain to teach, to refine, to grow. Each time in the struggle, he leads me to deeper peace, fuller life, widened perspective & authentic trust. I’m thankful for my struggle, because it’s through it that I’ve discovered the beauty and joy of life.

😆 Let's talk about something for a sec.⁣ ⁣ Today was another one of those 'wake up tired and grumpy' sorta days.⁣ ⁣ I have a ton of work to do (on top of blog post writing) and a whole ton of general chores to do, so I was just not feeling it this morning. 🥴⁣ ⁣ It's always hard to get out of those funks (especially with my natural doom and gloom tendency), so I had to remember to appreciate what I was happy about and what I was looking forward to, to snap myself out of it. 👏⁣ ⁣ 🥰 So I remembered what I have to appreciate.⁣ ⁣ I remembered that I have my family with me, and they're all happy and healthy.⁣ I remembered that my sister's birthday is next week, and I'm looking forward to spending time with her.⁣ I remembered that I have a workout today, and even though I have some injuries I always find the joy in doing exercise.⁣ I remembered that I'm on day 26 of my 30-ish day sugar-free goal, and that I should be proud of that.⁣ ⁣ The list went on, but suffice it to say, I have a lot to be happy about, and I shouldn't let a couple tasks I have to get done get in the way of that. My life is for living, and I shouldn't waste it feeling down in the dumps.⁣ ⁣ 💪 It worked, and I've had a super awesome day so far!
