As all of you who read these captions know, I’ve been on a weight gaining journey for the past 5ish months. I’m about 35 pounds up and very happy with my progress. As someone who has been studying nutrition for the past few years, I knew gaining weight was a simple equation; I would have to consume more than I burn. As easy as that equation sounds, as I got heavier and had to increase my calories, I realized that I couldn’t stomach all the calories I needed in solid form. I have turned to adding a smoothie/beverage to one of my meals and a snack and it has helped tremendously. Here I just have some soy milk with banana and cinnamon. It’s a simple, but delicious combo!
-1 cup soy beans, soaked overnight(drained) -8 cups water
In a blender, add half of the soaked soybeans and half the water. Blend, strain with a nut milk bag into a pot, and repeat. Heat on medium heat for about 15 minutes. 🥛: soy milk, banana, cinnamon
