We don’t know about you guys, but we are constantly looking for ways to get our kids to eat more veggies. If you have one (or more) of those fabled cherubs that politely begs for more broccoli, more power to you (I call bs though! 😆), but I have the kind that will pick very pea out of a chicken soup or will gag when offered a piece of pepper. 🙄 This Turkey, Glass Noodle & (Psst 🤫) Veggie Stir Fry is our kind of compromise. The veggies kind of melt into the sauce (full disclosure: I usually get more than my share of red cabbage, but I can’t leave it out, I need color in my food! 🤷🏻‍♀️) and there is nary a complaint when this is on the menu. In Love with Tom The first night in Bankok (my trip in 2017) took us to a small eatery near our hotel. We had no idea what we were ordering. All we said was "No Pork, just Sea food please." They brought out few dishes. Oblivious to what we were eating, there was one dish my husband and I cannot forget. It was a soup. It was heaven. I have been making Thai food for years but I have never tasted anything like it. It was so light yet so flavoursome. It was hot, sweet and tangy at the same time. And absolutely delicious. The taste and flavour had a lasting effect on my tastebud. Back in the UK I made and tasted so many different types of soup but nothing could compare to the flavour of what we tasted in Bankok in that small eatery on our first night. Until last night. Last night my husband took me to a small coffee house in Maidenhead. We ordered a few dishes that we were familiar with. When the soup came, oh my God, the aroma was embezzling. Just one spoon of that soup brought back that flavour we tasted in Bangkok. The freshness of the lime leaves, the fragrance of the lemon grass and the zestiness of the lime juice, it was all there. The prawns, the fresh mangtout and the creaminess of the coconut milk. We were in heaven. What did we order? it was Tom Yum soup, but made just like the way we had it in Thailand. /Parkin 英式燕麥黑糖糕/   *中文在下面  Although it's not Bonfire Night anymore, the parkin season is still on! Parkin is a delicious cake made from black treacle, ginger and oats, and is popular in counties in northern England, such as Yorkshire and Lancashire.   Parkin is tasty enough to eat it without any toppings (surprisingly, it is not dry at all), but I find that some crème fraîche on top makes it even more irresistible (if you are from Yorkshire please don't be mad at me😅)  I made this yummy parkin according to a bbcgoodfood recipe. It is easy and simple (the most difficult part is that you have to wait 3 days for parkin to have a proper "rest" and finally you can eat it).   My cornflower and marigold provide added sparkle and make my parkin look so pretty :)   Parkin是源自英格蘭北部約克郡 Yorkshire與蘭開郡Lancashire的糕點,也是#篝火之夜 最經典的食物。 除了篝火之夜外,整個11月(或冬天)都是parkin的季節,尤其十一月的星期日,在流行吃parkin的地區又稱作“Parkin Sunday”, 這習俗相傳與基督教的十一月初諸聖節有關。  在今年之前我還沒吃過parkin, 懷著忐忑的心照著食譜依樣畫葫蘆烤了一盤,整間廚房都瀰漫著溫暖的薑與奶油甜味。雖然每個食譜上都千叮萬囑剛烤好的parkin還是“生的”,需要放在室溫熟成至少三天才能開封食用,但我早就被香的七葷八素又按捺不住好奇,偷偷切了一小塊來吃,果真驚為天人。  Parkin的糕體非常扎實,但既不乾也不帶有磅蛋糕的粉狀; 混了燕麥的口感比尋常蛋糕豐富且協調(所謂的不協調是指我很討厭吃布朗尼的時候咬到硬邦邦的核桃塊,很像美夢被打醒),另外因為加了大量帶有微微苦味的黑糖蜜,所以parkin奇蹟似的達成台灣人的最高讚賞“不甜”的境界。  我忍著沒立刻把整盤嗑光,心想連他最不好吃的時候都這麼好吃了,那熟成三天之後不知道又會是什麼境界呢!耐心等了三天(每天其實都有偷吃一小塊哈哈哈),終於可以享用熟成之後的parkin。果然風味益發濃郁,帶有濃濃薑味,甜而不膩,好吃到不行啊!  這邊我就分享一下parkin的做法,大家有空也可以做做看:  *食譜參考自BBC Good Food (要注意這應該不是最傳統的配方,網路上還有好幾種其他食譜,大家不一定要參考我的)  準備材料:  奶油 200g 雞蛋 1顆 牛奶 4茶匙 金黃糖蜜 golden syrup 200g* 黑糖蜜 black treacle 85g* 棕糖 light brown sugar 70g 燕麥片 oatmeal 100g* 麵粉 250g 泡打粉 1茶匙 薑粉 1茶匙  *goldensyrup 金黃糖漿(綠罐)與blacktreacle 黑糖蜜(紅罐)是在英國是很常見的甜點食材,尤其是罐子設計十分美觀的經典老牌Lyle's獅牌糖漿,不管鬆餅、蛋糕還是餅乾都很好用。有關這品牌的糖漿可以說得很多,之後我會在另一篇甜點文裡介紹。要注意的是食譜裡的這些糖漿是不能隨便拿別的產品代替的唷!  *oatmeal燕麥片與大燕麥片rolled oats不太一樣,oatmeal比較細碎通常拿來煮燕麥粥,你也可以把大燕麥用調理機打碎一點拿來用。  做法:  1.烤箱預熱160度,準備蛋糕模(看你要方形、長條形還是圓的都可以),鋪上烘焙紙或者抹上一層奶油防沾  2.取一小鍋,用小火融化奶油、糖漿與棕糖。另外把雞蛋跟牛奶打散混好。  3.奶油糖漿做好之後離火,加入篩過的麵粉、泡打粉、薑粉與燕麥片,攪拌均勻之後加入雞蛋液。  4.倒入模具,160度烤50分鐘到1小時,烤好之後冷卻放到密封容器熟成一到三天即可食用。   照片裡的parkin我加上一些法式酸奶油crème fraîche與焦糖脆片增加口感與解膩,傳統上parkin直接吃就好不用任何佐料,頂多一點卡士達醬。但我非常喜歡酸奶油與parkin的搭配,歡迎大家競相模仿😆  englishfood englishcomfortfood

Caramel pears. Recipe adapted from david_tanis nytcooking . ————————————— . I’ve been craving fall fruit deserts. But lacked the energy and time to bake a pie or galette. These roasted pears were simple dessert that hit the spot and fit my lack of time. The cinnamon stick, cloves, cardamom and rosemary added some great spice and the rum, brown sugar and butter provided a glossy, not so sweet, caramelized color. I also had some toasted hazelnuts as garnish. At first I was craving some vanilla ice cream. But why not match them with some blue cheese?

“This may be the oddest and possibly most delicious mid-afternoon snack I’ve ever had.” (how I know I’m crushing Tuesday 😂) Little boiled red potatoes stuffed with roasted broccolini and a ton of cheddar. A drizzle of yogurt and Aleppo pepper and ta da. Basically a mini healthy version of your favorite steak side dish. Or a killer afternoon snack? Either way, quite tasty. And side note. I am currently working on the next 30 Day meal plan for loveyourbodfitness The new program is called LEAN as people have been asking me for more recipes to help with weight loss. The only difference between this meal being a “weight loss” meal vs. a “maintenance meal”, or even a “weight-gain” meal would simply be the portion sizes. The foods themselves would be the same. I believe a meal plan should provide the basic framework to help people learn to make healthier food choices. It can be a great educational tool to help you learn more about what your body needs and a fun way to learn new recipes. I believe that it’s important to adapt any meal plan however to fit your personal needs. If you try to follow something EXACTLY and it doesn’t fit your lifestyle you’ll feel very discouraged. If a meal plan is asking you to cook every night and you prefer cooking in large batches then do that instead. Take the time and sit down and make adjustments that will work better for you if need be. If you put in the time and effort to plan and prepare, your long-term outcome will be better. I remember trying to follow an eating program when I first got into fitness and I was SOOO hungry ALL the time. I had no idea that I likely could have made a small adjustment in my portion sizes and I would have still had great results. I also kept trying to choke down foods I hated ... I could have saved myself a lot of misery by just doubling up on the recipes that I DID like. Again, in the end the results would have been the same! However, it’s important to remember that a calorie reduced diet is not meant to be a permanent way of life. Remember to give your body a break if you have been dieting for a while. Choose the same nourishing foods as adjust your portion sizes slightly. For me this would mean for this meal I would likely increase the carbs and protein by about 25% more! That’s about it. 👌 No need to overly complicate things. Don’t fall prey to permanently being on a diet. Remember to take breaks here and there. You’ll feel a surge in energy, your workouts will be stronger, and your mind will feel sharper!

Shabu Shabu is a traditional Japanese hotpot dish. However, we weren’t in soup mood, so we created our own little Japanese tapas party. Fresh veggie gyozas, a classic pork and spicy bulgogi bao and soy garlic Korean fried chicken. As „desert“ we shared a bowl of chewy thicc egg noodles in black bean sauce and veggies. Dishes came very quick and service was friendly too. The spot is quite small, so make sure to book a table!

Using authentic ingredients, Tasty Bite offer quick yet flavourful solutions to cooking, whilst remaining healthy, with no artificial colours or preservatives. Everything is vegetarian and tastes absolutely delicious! It’s hard to believe it’s ready in just 60 seconds by popping it in the microwave. I served our tikka masala with lightly fried tortilla wraps, but you could use rice to make a more substantial meal, or enjoy as a side with a meal you’ve made. Although this is part of a paid partnership with Tasty Bite, I have to say we enjoyed this particular flavour so much, that we’ve since bought their Vindaloo, Korma and Potato & Chickpea options from tescofood. I am away at a women only surf and yoga retreat this week. Learning to surf with extreme weather conditions is quite challenging. On top of that it’s also pretty cold on the island. Dreaming of this simple, comforting dinner I made a few weeks ago: Baked sweet potato stuffed with homemade baked beans, grated cheddar and a dollop off creme fraiche. For the base of the baked beans, I sautéed finely chopped red onion, celery and carrot on olive oil. Added some smoked paprika, pinch of cumin (not a huge fan), garlic and salt then the chopped tomatoes (from a tin). Let it bubble for about 15-20 minutes. Then add a tin of beans, I used butter beans. Taste and season if needed. Fill your baked sweet potato with as much of the bean stew as possible, if you don’t add the cheese and creme fraiche the dish is plantbased and of course glutenfree
