Just incredible live fire salmon feast prepared in the rustic mountaintops of Utah's breathtaking Bryce Canyon. What an awesome cookout alongside my fellow open flame bushcraft masters, girlcarnivore and sasquatchbbq!!
This freshly-harvested Copper River coho salmon was filleted and trimmed, rubbbed in an earthy blend of ground chipotle peppers and smoked paprika, toasted cumin, roasted garlic, kosher salt and black peppercorn, crushed candied walnuts, seasonal citrus and an aromatic garden fragrant herbs. Prepared over an open campfire of hickory and cherry wood, then basted to finish in layer upon caramelized layer of a homemade shallot butter-maple whiskey sauce.
This flaky, sweet and spicy, medium-rare salmon was garnnished with the zest of meyer lemon and orange peel, then plated family-style over a bed of baby cedar wood and best served alongside two handfuls of ice cold amber ale. What a memorable evening celebration, surrounded by beautiful landscapes, inspirational fare, endless adult beverages, bonfires under the nighttime sky, the very best of friends, family and loved ones! -Cheers, David
