In the last two weeks I have watched "What the health", "The Game Changers" and a YOU Tube video "Whats wrong with eggs"! I decided to give this predominately plant based whole foods movement a try! At the gym, everyone is telling me it's not going to work (muscle gains), however I can tell when i debate the topic that "most" bodybuilders don't really know much about eating a plant based protein diet. I will experiment with my diet and see how my body responds. Going to keep my macros (protein, carbs & fats) pretty close to what I have been doing with animal protein in this off-season. I had two huge broccoli stems left over from dinner, but instead of throwing them away, I cut them into chunks and added, 2 carrots, 1 celery stick, 1 medium sweet potato, 1 brown onion all cut into chunky pieces. 1 tbsp lazy garlic and water covering the vegetables in the pan by 1 inch. Bring to the boil, add the Knorr stock pot, salt and ground pepper, stir in well and then turn down and simmer until all of the veg is cooked. Gloomy days are always made better with colourful nourish bowls, right?! ✨ I’ve been obsessing over this combo lately of smokey mushrooms, garlicy broccoli and allll the roasted chickpeas + veg with a huge dollop of hummus ✨. . To make 👇🏼: Dice sweet potato and broccoli (including the stems!) and place in a large bowl. Drain and rinse a can of chickpeas, and add that to the bowl as well. Sprinkle 1 tsp garlic powder, 1 tsp smoked paprika, 1 tsp onion powder and a pinch of salt over veggies + chickpeas and mix well. Lay flat on a baking sheet at bake at 450F for 25 minutes. Meanwhile, slice ~2 cups of mushrooms. Sauté in a small pan over medium heat with 1/2 tsp soy sauce, 1/4 tsp sesame oil, 1/2 tsp smoked paprika + a few drops of liquid smoke (optional). Sauté until all the water has evaporated. Serve with the roasted veg and finish off with a dollop of hummus + a drizzle of lemon + enjoy! 💛

Beetroot Pesto Pasta 🍃🍝💕 : 🌱 INGREDIENTS: makes 2 large portions. For the pesto - • 40g pine nuts • 60g basil leaves • 100ml olive oil • 1 large garlic clove • Vegan parmesan • Juice from cooked beetroots (can either cook these yourself or use shop bought cooked beetroots and drain the juice). : Mix all of these in a food processor. Some days it can seem unreachable. However.... An analogy I like to use is climbing Everest. The summit is the highest in the world and the Black Belt is commonly known as the highest attainment in the martial arts. Only a small percentage of people from the mountaineering community reach the peak, just like in the Jiu-jitsu community. There are five camps, or stages as you progress up the mountain. It is not ascended in one day and takes a lot of preparation. The summit is not attempted until camp four (That would equate to Brown Belt) and takes 6 - 9 grueling hours to reach - that’s a long time in the oxygen depleted death zone. Once at the top, you are there for less than 15 minutes. Then, you have to get back down. My main point is, Receiving a belt is not the goal, just like “summiting.” If you’re not moving you are dead! (I could keep going with this, but I think you get it?!) It is after that, that all your training really starts to count. If you do not continue to learn and grow with a new belt, especially Black in my opinion, your skills will deteriorate over time. Progress comes slowly but steadily if you are patient and prepare diligently. You have to apply yourself each day to become a little better. By applying yourself to the task of becoming a little better each and every day over a period of time you will become a lot better. Only then will you be able to approach being the best you can be. Define your goal: Do you want the belt? Or, is it the skill set and learning that comes with the belt? I invite you to come train with me. Baked Vegan Mexican Lentils and Rice Casserole 🥘 🌱 I’ve made this countless times with different kinds of cuisines 😍. It’s so easy to make and very deliciously healthy! Turn your casual Wednesday night dinner into something fun 🤤. And, if you have leftovers, make it into quesadillas for lunch the next day! Ingredients - Characters 1/2 cup rice 1/2 cup lentils 1/4 cup tomato purée 1 large roasted pepper, finely chopped 2 1/2 cups water 2 artichoke hearts 1 cup kale, chopped 1 tomato, finely chopped 2 tsp taco seasoning 2 tsp garlic powder 1 tsp parsley 1 tsp thyme 1 tsp oregano 2 tsp lemon pepper 1 cup vegan shredded cheese Salt to taste Method - Tale 1. Preheat oven to 375°F. Take out a baking dish, add rice and lentils to it. Wash them 3 times, and then add water, and rest of the ingredients except for cheese. 2. Mix well, cover it with foil, and bake for about 1 hour 30 mins until the water has evaporated. Make sure to stir throughout the baking process so that lentils are cooked thoroughly 3. In the last 15 mins of baking, add some cheese inside the dish and stir well. Add the rest of the cheese on top. And bake for additional 10-15 mins, until the cheese has melted 4. Oil Spill Noodles 油潑麵🍝 - which are also called Youpo Mian are the most typical noodles from Shaanxi Province. The noodles are described as 'belt noodles', giving the thickness and length 🎏  The noodle is broad and hand-made. It was originally a typical meal for the peasants. All the oil and carbs made this a very filling dish, it'd provide enough energy for all the hard labour in the fields. This dish has become increasingly more popular all around China in the recent years 🇨🇳   RECIPE  ✔️ Mix 300g (2 portions) of all purpose flour with a pinch of salt and 150g lukewarm water 💦   ✔️ Knead the dough and let it rest for 15 mins. Meanwhile chop 8 cloves of garlic and some scallion very finely 🔪   ✔️ Then separate the big dough into 6 small doughs, use the rolling pin to shape each one into long, belt-like noodle 🥢  ✔️ Boil water in a big pot, put the noodles inside until it's cooked (5-7 mins) ♨️  ✔️ Get the noodles in a big bowl (drain all the water), add the chopped garlic, chili flakes (depends on how spicy you want it), chopped scallion on top of the noodles, add 2 tablespoon of Chinese dark vinegar and 1 tablespoon of soy sauce on the noodles 🥄   ✔️ Add some oil in the pan, heat it up until the oil is very hot, then pour the hot oil over the noodles. Luo Si Fen 素螺蛳粉🍜  If you ask any Chinese from the mainland: What is the most popular rice noodle dish in China? Everyone would say Luo Si Fen. It's a dish from Liuzhou, Guangxi Province - it has been known by the majority of the country since only a few years ago and it got popular really quickly 😏  Luo Si means river snails, because the original soup of this dish is made of river snails, and Fen means rice noodles. Since this is a vegan version, of course no river snails 🐚 were harmed during the making of this dish - Don't worry‼️  I boiled the rice noodles in a spicy soup, then dressed it with teeny-tiny shiitake mushrooms🍄 (very cute!), cloud ear mushrooms (also cute!😍), home-fried Fuzhu (a type of tofu skin, super crispy!), home-fried peanuts 🥜 with peel (super crunchy and good!), pickled bamboo shoots (the most important dressing with a very distinctive taste) and home-pickled long beans (they are the best😋).
