#tasteofkindness👅 Credit: @vegspirationfeed (@get_regrann) - Cheesy Cumin-Spiced Avocado Spinach and Black Bean Quesadillas Recipe 2 almond tortillas heated up on medium high in a pan sprayed with avocado oil, (I heated the spinach in the same pan while the tortillas were cooking). Mash some black beans onto one side of the tortilla and add a sprinkle of cumin, then top the beans with vegan Gouda (or any cheese of your choice). Once the cheese starts melting add some of the wilted spinach and some mashed avocado and fold over. Cook for another 30 seconds or so. Mango Chipotle sauce: 1/2 ripe mango blended with 1-2 tablespoons chipotle sauce (or any hot sauce of your choice)

Some snacks that I bought from H&B a while back (some of them were for @theverdantvegan ‘s snack swap box that we did). 💕 • • All of those crisps are up there with my favourites! The @ten_acre_snacks ones are SO good, like ridiculously good and you’d have no idea they were vegan. Cheese and onion vegan crisps aren’t exactly easy to come by either so it was good to be able to find them in Holland and Barrett. "My story began on June 1960. I grew up being mostly outdoors; riding my bicycle and playing football. As the years went by, I stopped paying attention to my health & the food I ate. So it happened that in my late 50s, I found myself hitting the 250-pound mark. That was when I realized I had to change or do something to improve my health. That when I met Elena ( and later on Petra). They both gave me tips and tricks on how to cook easy, inexpensive and tasty meals. Although I am not a great cook, I was able to follow their instructions and make excellent meals for myself, which made me feel like I am slowly gaining control over my health. Elena & Petra not only made me realize that I had to take responsibility for my own health but they also shared tremendous knowledge with me and their passion for food and cooking was contagious! In short, they taught me to how to live a healthier life. I liked the fact that they have a Bachelor’s degree in Nutrition and Dietetics because I wanted someone well qualified. On this new journey to better health, I have opened my mind to new experiences and met a lot of supportive people. What an adventure! But I am not going to lie. At first, it was challenging to compromise certain things and favorite foods, but I quickly got more comfortable as I felt better and had more energy. I have no regrets. Now when people say to me that switching to a plant-based diet is extreme, I love to answer by quoting Dr. Caldwell Esselstyn: “Half a million people a year will have their chests opened up and a vein taken from their leg and sewn onto their coronary artery. I’ve been thinking about how to get my kid to eat more veggies. He complains, “I don’t know how much” or “It’s too hard to prepare.” So I came up with the idea of 1-2-3. One vegetable at breakfast, two vegetables at lunch, and three at dinner. Or 1-3-2....basically, eat at least 6 servings a day. Breakfast can be a green smoothie with spinach, or avocado toast, or a salad with fruit. Lunch can include a salad, steamed veggies, stir fry, veggie sushi rolls, or a kale burger. Because I cook plant-based dinners every night, he doesn’t really have to think about how many veggies he’s getting. I’m trying to impress upon him that the time it takes him to chop veggies is time well spent. It’s time you can give your brain a rest. Listen to music. Or even watch a YouTube video. It’s time he is investing in his health. “NO TIME” ... NO PROBLEM! . Some veggie pasta comin’ atcha!!! I made this pasta last night and it was BOMB! This was so incredibly SIMPLE + took nearly NO TIME! If you’re in a time crunch, then fear not! . Not only is this super simple, it is also so EASY to have LEFTOVERS! And who doesn’t love leftovers?! . What you’ll need: - pasta ( I made Tinkyáda GF macaroni) - veggies (I threw in some broccoli slaw + butternut squash spirals) - seasonings (S + P, garlic + onion powder + 21 Salute Seasoning from TJ) - jar of Marinara sauce (I use a sugar-free brand from @sprouts !) - vegan pesto (I used TJ cashew pesto!) - vegan parmesan (I make my own by adding Nutritional yeast + cashews + salt + garlic powder to food processor!) . How to make: - cook noodles as directed on package - sauté veggies + seasoning in a drop of oil (with high burn temp) for about 7 minutes or until soft - add in marinara sauce + a spoonful of cashew pesto + handful of parmesan / vegan parm - finally, add in noodles + mix everything + serve! . I had the noodles + vegan parmesan already made so it really took me only 7 minutes or so! Even with making the noodles it should only take about 15 minutes + you’ll have a bunch left over!! . 🌿Fusilli with a Roasted Red Pepper Sauce🌿 Happy Wednesday guys!😊🧡 Hope you're all having a great week so far😊 This roasted red pepper sauce is another one of these dishes I like to make after a long and stressful study day💆🏼‍♀️📚 I kinda like to eyeball the ingredients but here's how I made it the last time: I preheated the oven to 210°C and added 3 red bell peppers, 4 cloves of garlic and 1 white onion (roughly chopped) to a baking sheet with parchment paper. I roasted all the veggies in the oven until they were nicely browned and then transferred them to a blender (the garlic/onions might be done earlier then the bell peppers). I also removed the burned skin, seeds and stem from the bell peppers before adding them to the blender. I then added a good pinch of salt and pepper, enough oat milk to cover the veggies, a few tablespoons of nutritional yeast, about 1 tsp of dried rosemary and thyme and 2 tbsp of Olive oil to the blender. I then blended that until everything was smooth and added the sauce to cooked pasta (sauce was enough for 1 package / 500g of pasta, cooked - 4 big portions). You know you’re officially a bit bonkers when you spend 30 minutes designing a piece of toast.... I totally didn’t just do that 😶 Here is a slice of toasted ezekiel bread smothered with creamy coconut yogurt and topped with all my favourite fruits! Energising lunch of Jacket potato with vegan cheese and spicy sauerkraut with lettuce, spinach, tomatoes, celery, nigella seeds, sunflower seeds, crimson sauerkraut and pickled seaweed. Life has changed a LOT in nearly 3 weeks. It’s been a bit of an awakening, finding myself in a financial corner, managing childcare, house, dogs, bills, work, school, life by myself, responsible for every part of well, everything lol... and it’s reminded me of how my life used to be. My work ethic is there, my sleep is early down, early up, my house is organised, I’m meditating, I’m eating well, my budget is tight but in place and despite the shock/sad bit - I’m looking after all of us just fine, including myself. So here’s to PTA meetings, lunch over the laptop, plans and a new way forward.
