Perfect summer side salad 🥗 I was going to a bbq yesterday & wanted to make sure I had something I could eat & others could enjoy also. You can put it together so easily. thanks for the recipe @mallifornia Next time I think I’ll add garbanzo beans. This time I did: Cucumbers Cherry tomatoes Onions Olives Avocado Dressed with fresh lemon juice, garlic salt, pepper & basil. But seriously you can do anything with this!

Green juice fix even on vacay 🌱 ...after an easy run/walk around a couple of lakes, some good healthy food sounded delicious! . . I got some great recommendations from @simplywholistic like the ice cream from Izzy’s and Jodi was on the mark again with recommending TRUCE! It was a cute little shop with smoothies, açaí bowls, juices, and little snacks, which was exactly what I was craving 😋 after working out . . 💚One of my favorite Vegan Omlettes to make is the California Omlette. I ordered it in restaurants for years when I saw it listed on menus and when I ate eggs and dairy. Now, we upgrade it to JUSTEgg and a plant based cheese like Violife! -(or your Vegan Cheese of choice). I love this Omlette because it is vibrant and fresh tasting! In other Omlettes, the veggies are sautéed first or cooked with the Vegan Egg product as it cooks. With a California, the veggies are added Fully Raw right before serving. Even though I have lived most of my life on the East Coast, I was born in California. I guess I will always feel I am a California Girl at heart. 💚 ~ ✨🌱Vegan California Omlette🌱✨ ~ 3 TBSP JUSTEgg 1 tsp Vegan Butter 1 Slice of Violife Cheddar Cheese 1 Small Tomato, Diced 1/2 Ripe Avocado, Sliced Pink Salt Cooking Spray ~ 1) Spray pan. Melt butter. Cook JUSTEgg over Low heat. Add Pink Salt. Flip JUSTEgg over. Add slice of cheese. Turn off burner. Cover pan to melt the cheese. 2) Place open faced Omlette on a plate. Add fresh diced tomato. Fold JUSTEgg over tomato. 🍠 Sweet Potato Almond Butter Blondies 🍠⁣⁣⁣ ⁣⁣⁣ Sweet potatoes are my favourite food 🤩 Whenever I get asked if I could only live off one food for the rest of my life, sweet potatoes are always my answer! So when @fullgreen.official invited me to join in their Sweet Potato Challenge with @hipandhealthy of course I was on board! 🎉 Sweet potatoes are super versatile, so I had quite an internal debate on whether to go sweet or savoury. But I can't deny my sweet tooth and I'm always up for baking up something healthy but still delicious - so these sweet potato almond butter blondies were born!⁣⁣ Swipe ⬅️ to see some more shots of them 😍⁣ ⁣⁣⁣ I basically chucked as much goodness into my food processor as I could, whizzed it all up, and baked up these beauties. They’re fluffy and light, while still tasting indulgent, creamy and nutty. The recipe is 👇 and feel free to adapt them to fit what you have in your kitchen and your personal tastes. I find they go super well with a cup of tea, crumbled over vegan ice cream, or just to grab on the go 👌 Happy baking friends! 👩🏻‍🍳⁣⁣⁣ ⁣⁣⁣ Ingredients⁣⁣⁣ * 1 pack of @fullgreen.official’s riced sweet potato⁣⁣⁣ * 1/2 cup smooth almond butter (I used @zeinafoods)⁣⁣⁣ * 3 tbsp syrup - add more/less to taste (I used @otesuperfoods’ yacon syrup)⁣⁣⁣ * 1/4 cup oat flour (I used @buywholefoodsonline)⁣⁣⁣ * 1/4 cup almond flour (I used @whitworthsuk)⁣⁣⁣ * 1 tin chickpeas⁣⁣⁣ * 1 tsp vanilla extract⁣⁣⁣ * 1 tsp baking powder⁣⁣⁣ * 1 tsp cinnamon⁣⁣⁣ * 1/2 tsp all spice⁣⁣⁣ * 1/4 tsp salt⁣⁣⁣ * 2-3 tbsp non-dairy milk (I used @kokodairyfree)⁣⁣⁣ * 1/4 cup sultanas (and/or nuts, seeds, chocolate, etc)⁣⁣⁣ ⁣⁣⁣ Method⁣⁣⁣ 1. Preheat the oven to 175C/350F.⁣⁣⁣ 2. Add all ingredients except the non-dairy milk and sultanas into a food processor/blender, and mix until combined.⁣⁣⁣ 3. Add in the plant mylk 1 spoonful at a time until it combines into a thick batter.⁣⁣⁣ 4. Fold in the sultanas (and/or nuts, seeds, chocolate, etc). Then pour the batter into a greased or lined baking pan.⁣⁣⁣ 5. Bake for 35mins, or until the top is golden brown and a toothpick comes out clean.⁣⁣⁣ 6. Remove from the oven and allow to cool for ~15 minutes. Slice up and enjoy!

Ratatouille @veganpandits follow 👈💕💕. . . by @conscious_cooking 😍This looks like a plant-based optical illusion!🌱 Recipe ✨ Ingredients For the base: 2-3 fresh tomatoes, pureed with a pinch of sea salt⠀ 2 Tbsp olive oil, divided⠀ 3 tsp fresh herbs, finely chopped⠀ 1 shallot, finely chopped⠀ 1 garlic clove, finely chopped⠀ 1 Asian eggplant⠀ 1 long, skinny zucchini⠀ 1 long, skinny yellow summer squash⠀ 20 cherry tomatoes⠀ 1⁄2 orange bell pepper, deseeded⠀ Sea salt and pepper •Preheat oven to 400°F. Pour tomato puree, 1 Tablespoon of olive oil and half of⠀ the chopped fresh herbs into a baking dish. Stir in the chopped shallot and garlic.⠀ Season with salt and pepper.⠀ •Using a mandolin, or a really sharp knife, thinly and evenly, slice the vegetables. Make the slices thin, about 1/8’ (3mm) thick. The thinner, the better!⠀ •Make mini-stacks of about 20 slices in sequence. Arrange a few stacks at a time into the prepared baking dish in a concentric spiral from the outer edge to the inside, fanning them out a bit so that you can see the top 1/8” of all the slices. “Stand” them up a little, so you can it as many vegetable slices in as possible, but you may still have some leftover veggies. Save the smaller rounds for the center of the dish.⠀ •Drizzle with the remaining tablespoon of olive oil and season with more salt and pepper. Sprinkle the remaining chopped herbs. Cover the dish with a piece of parchment paper cut to it just inside the dish rim, directly on top of the vegetable arrangement.⠀ •Bake for 40 minutes -1 hour (depending on how thick your vegetable slices are), until vegetables are soft, but not limp. I made this awesome moist Blueberry and Banana Bread for breakfast today 😍and it’s Gluten-Free👏👏👏 I used 1 cup Plant Milk 1/2 cup Blueberries 1 Banana (ripe) 1/3 cup Rice Flour 1/3 cup Coconut Flour 1 tbsp Chia Seeds Handful of Walnuts 1tsp Baking Powder 1tbsp Maple Syrup/Agave Nectar 1/3 cup coconut milk ( canned) 2tsp chocolate powder Smash banana and then mix with the plant milk. Add all the other ingredients, except coconut milk and chocolate powder. Mix well and place it in a bread tin with parchment paper. Bake in an oven for about 25-30 minutes. Meanwhile, in a saucepan prepare the chocolate by mixing the coconut milk and chocolate powder on a medium heat, bring it to boil and then remove, set a side. Once the Banana Bread is done, poke some holes in it and pour the chocolate on top. Happy weekend ❤️✨ this is my favorite homemade crispy pizza crust with basil cashew cheese sauce, zucchini, basil, balsamic, tomatoes, marinated mushrooms, artichoke hearts & nutritional yeast 🍕🍕🍕 #plantbased #thekindcoconut 5 minute PizzA DoUgH: 2 cups almond meal 1/2 cup oat flour 1/4 cup tapioca starch 1 tbsp flax meal 1 tbsp dried oregano 1 tbsp dried basil 2 tsps garlic salt *about 1.5-2 cups water •make the flax egg by mixing flax with 3 tbsps of water. Sift together the flours and starch. Whisk in the seasonings. Add the flax egg then slowly mix in the water 1/2 cup at a time until the dough is sticky. Pat into a ball and place on a nonstick surface covered in flour to roll it out. I usually spray the pan and roll it flat so I don’t need to transfer it. Flatten it as much or as little as you want into any shape. Bake for 12 minutes at 350 degrees before adding yout toppings. Then bake for another 10-15 minutes with sauce and toppings.

I really REALLY enjoyed this meal ! And it was easy to make double for tomorrow. Since making the personal choice to transition over to plant based eating I’ve had ups & downs (turns out I can only tolerate legumes or gluten in small quantities) but it all worth it. I’m by no means making perfect choices all the time but introducing mindfulness into my food has changed the way I feel about a lot. I’ve loved discovering new ways of preparing foods and am continually amazed at the variety of plants this beautiful planet has to offer 🌍 We are truly blessed. Here’s something you may not know about me: before I went vegan, I was OBSESSED with Panera’s mac n’ cheese. In fact, my signature order was mac n’ cheese in a bread bowl with a baguette on the side - because you can never have too many carbs🥖😍 So, I recently decided to indulge my inner middle schooler and create a vegan version of my old fave...and I think I actually like it better than the original. The silken tofu makes this sauce so incredibly creamy and the nutritional yeast adds that highly sought after cheesy flavor🧀 Pair it with a salad or sandwich and you’ve got yourself one good lookin’ vegan version of a Panera classic! - Recipe: 1 cup silken tofu 1/4 cup nutritional yeast 1/2 tsp salt 1/8 tsp pepper 1 tsp garlic powder 1 tbsp lemon juice 1/4 tsp paprika 1 tsp maple syrup Your favorite pasta (I used @eatbanza shells) Cook your pasta according to package instructions. While it boils, add all other ingredients to a blender and blend until completely smooth. Drain off your finished pasta, then transfer it back into the pot. Gluten Free, plant based bread recipe: Please give me some likes ❤️ by showing you support my idea of spreading healthy lifestyle. Don’t forget to save the recipe for later. This bread is low calorie, low glycemic index has lots of fiber. Ingredients: 🌱1.5 cups of green buckwheat 🌱1/2 filtered water 🌱2 table spoon of flax seed meal 🌱2 table spoon of chia seeds 🌱1/3 teaspoon of garlic powder 🌱1/3 teaspoon of anion powder 🌱1/3 teaspoon of salt 🌱1/2 teaspoon of baking soda 🌱1 teaspoon of rice or apple vinegar 🌱1 table spoon of raw agave nectar or lore if you like it sweet. 🌱any other herb you like, I added thyme this time. Equipment: oven, blender ( I have immersion), bread pan, parchment paper. Instructions: 1. Soak green buckwheat over night, uncovered, at room temperature in filtered water. Add extra water to go over the buckwheat cause wit will expand after soaking. 2. Rinse the buckwheat the best you can’t. it will be little slimy and not really possible to get rid of all water in was soaking it. So don’t. 3. Add 1/2 cups more clean water, flax seeds, chia seed, all spices, agave nectar, salt. 4. Blend everything till the buckwheat is coarse consistency. 5. Poor baking soda in a spoon. Hold it over your dough. Poor the vinegar. Let it foam and add the mixture to the bread dough. 6. Line the bread pan with parchment paper. 7. Bake at 320 F for 1 hour. Max 1 hour and 15 minutes till the middle of the bread is hardened. Store at a zip lock bag or air tight container in the fridge for 4 days. Slide it and freeze for 1 month.
