Raw Vegan: Day 3 . Good golly, I’ve been slaaaaaving away in the kitchen for like the last 3-3.5 hours! A double batch for very chocolate protein balls, a double batch of chocolate chia pudding and soaking chickpeas for I’m not sure what yet. . For the rest of the famjam for dinner tonight who are not doing raw, I did spaghetti squash with a veggie sauce.... tofu for the husband and free range chicken for the kiddos. That being said, we aren’t buying meat anymore so once it’s outta the house it’s gone! This is week 4 for my husband being vegetarian, as well as my kiddos eating mostly vegan meals aside from the occasional meat that I’m trying to get out of the house 🤪 (Not wasting it since they died for us). . Mix almond butter and syrup in a microwaveable bowl and heat for 90 seconds. Mix well. Add protein powder and mix. Add oats and mix gently. Roll into balls (you can wet your fingers first to stop it sticking so much) and sprinkle with coconut. You can also spread into a flat dish and cut into squares once set. My favorite part about it is the addition of the Rice Krispie cereal that gives it a crunch without adding any weird flavors. Super easy, not messy and no baking required🙅🏻‍♀️ Ingredients: * 2 cups quick oats * 1 cup Rice Krispie cereal * 1 cup ground flaxseed * 1 1/4 cup peanut butter * 2/3 cup honey * 2 Tbsp coconut oil* * 2 tsp vanilla extract * 1 tsp powdered sugar Directions: 1. Mix all the ingredients together in a large bowl. Scoop out the batter and then roll it into a ball between your hands. (If you use a cookie scoop, all your balls will be the same size!) 2. Place the protein balls in the refrigerator for about 20-30 minutes to set up. (You can eat them right away but they are better cold!) 3.
