We have one more week of pumpkinseason. Unlike most store bought muffins which are cake in disguise, these have a healthy dose of spice which adds tons of flavor while keeping the sugar content in check. The addition of fueling foods like pumpkin, pasture raised eggs, collagen and ground flax increases the nutritional density. These muffins are not only glutenfree but also party safe (made with coconut but not the more reactive tree nuts). Pumpkin pie muffins: Mix together 5 eggs, 1 cup canned pumpkin, 1/4 c melted (and cooled) coconut oil and 1 tsp vanilla. Add in the dry ingredients: 1 tbsp cinnamon, 1 tbsp pumpkin pie spice, 1 tsp baking soda, 1/2 cup coconut flour and 1/4 cup vanilla collagen (or other protein powder or oat flour), 1/4 cup coconut sugar and 1 tbsp ground flax. Option to fold in 2 tbsp of enjoylife mini chocolate chips. Bake at 375 for 18 minutes. Who else wants a slice of the pie 😜 considering the only time I really bake is around the holidays I’m proud of this masterpiece actually 😂😇😇 The filling was inspired by sallysbakeblog but I made a few adjustments because I felt my filling was too thin. Her tip to use black pepper was on point! check out the recipe below! It’s so easy . . Pie crust: 3 cups of flour 1/3 cup of cold vegetable shortening 1 1/2 sticks of cold butter 1 tbsp sugar 1/2 tsp salt 6-8 tbsp ice water In a food processor fitted with a steel blade add the flour, salt, and sugar and turn on to mix. Then add the butter, cut up into squares, and the vegetable shortening and pulse until the mixture looks like sand. Then turn on the food processor and add the ice water 1 tbsp at a time until a ball starts to form. Take the crust out and split into 2, wrap with plastic wrap and store in fridge for 30 min. When ready roll out the dough on a floured surface so that it’s bigger than the pie pan you’re using about 12 in. Using a stick of butter rub the pie pan. Transfer the dough to the pie dish by using the rolling pin to roll the dough on to it then transfer (Look up YouTube 😂 jk I’ll post a video how to do this soon). Once transferred line the pie with parchment paper and put weights (I used dried lentils) into the pie pan. Preheat an oven at 375 and prebake the pie crust for 10 min. While prebaking get started on the filling! Pie filling: 1 15oz can of pumpkin purée 3 large eggs 1 1/4 cup of dark brown sugar 1/2 tsp salt 1 1/2 tsp cinnamon 1/2 tsp ground ginger 1/4 tsp of nutmeg 1/8 tsp of cloves 1/8 tsp black pepper 1 1/2 tbsp corn starch 1 cup heavy cream Whisk together the pumpkin purée, brown sugar and 3 eggs. Then add all other ingredients and mix well to incorporate. Pour the mixture into the prebaked pie crust. Brush the crust with egg wash and bake at 375 for 55-60 min. DO NOT OVERBAKE because it will crack. Mine was done at around 57 min. I made the decorative leaves by rolling out the other dough half and using a knife to shape the leaves. Who's into granola? I love it as a quick snack - I usually just throw a handful on some yogurt or just eat it as is! Here's the quick NO OIL recipe: - 1 cup old fashioned oats (gf if needed) 1/4 cup walnuts 1/4 cup pumpkin seeds 1/4 teaspoon spice of your choice like cinnamon pinch of salt 1/4 cup maple syrup 1/2 cup dried fruit of choice - Toast oats in a pan for 5 minutes over med. heat. Add nuts, toast another 5 minutes. - Turn heat to low, stir in spice, salt, then a maple syrup. Stir granola until syrup is absorbed. - Cool granola on a plate or baking pan; stir in dried fruit. Curry pumpkin hummus! I have to admit I’m a sucker for pumpkin :) This hummus combines the traditional chickpea and tahini recipe with fresh pumpkin roasted with curry and garlic. Yesss yesss! • • This time of the year it’s easy to grab a sugar “pie” pumpkin at your grocery store. I like the sweeter more intense flavors of the curry and garlic when it is roasted along with the pumpkin, but you can absolutely substitute 1/3 cup canned pumpkin in this recipe ;) • • You can find detailed instructions in the link above, but here is a quick take 🎬 •1 cup cubed pumpkin. Season with salt, pepper, 3 whole garlic cloves, and 1/2 tbs curry powder. Bake at 375 for 30 minutes or until soft and can easily be pierced with a fork. Let cool. While the pumpkin roasts add •1 can chickpeas •1 tsp baking soda •1 cup water to a sauce pan and boil for 20 minutes. Drain, rinse, and let cool. Why do this step you ask? Well, canned beans are packaged al dente... boiling will make them softer for the a smoother texture while the baking soda changed the PH levels. Once those are done, Combine 1/2 cup tahini and 11/2 Tbs fresh squeezed lemon juice to a food processor. Add roasted pumpkin, garlic, and chickpeas. Purée until smooth. At the very end, on low speed, slowly add 1/3 cup ice cold water. The ice waters helps aid in that smooth creamy texture 😋. You may decide to add more or less water to achieve your desired consistency eatup 😃 enjoy fortheloveofpumpkin

Okay listen, these aren’t like 10/10 best ingredients. But they’re plant based and oh so amazing 🌱⁣ ⁣ 𝐆𝐨𝐨𝐞𝐲 𝐂𝐡𝐨𝐜𝐨 𝐂𝐡𝐢𝐩 𝐏𝐮𝐦𝐩𝐤𝐢𝐧 𝐁𝐚𝐫𝐬 (recipe by purelykaylie) ⁣ ⁣ 1. Preheat oven to 350 degrees F⁣ 2. Line 8 x 8 pan with parchment paper⁣ 3. Melt 1/2 cup coconut oil oil and set aside to cool. ⁣ 4. In a large bowl combine 2C oat flour, 1tsp baking soda, 1/2 tsp baking powder, 1/2 tsp salt, and 1 tbsp pumpkin pie spice. ⁣ 5. In a separate bowl, whisk cooled coconut oil, 1C brown sugar, 3/4C pumpkin purée, 1/4c peanut butter, 2tsp vanilla extract. ⁣ 6. Gently fold the dry into the wet ingredients until combined. Fold in chocolate chips. ⁣ 7. Spread the batter into the pan and bake for ~35min.⁣ ⁣ Mine don’t look near as beautiful as hers but these were AMAZING. Pumpkini spice & everything nice Paramount Pumpkin-tini * 1 ½ oz elit * ¾ oz heavy cream * ½ oz honey syrup * ¾ oz pumpkin spice syrup * ½ oz fresh lemon juice Combine all ingredients in a shaker with ice. Shake and strain into a chilled cocktail glass. Garnish with a sprinkle of pumpkin spice powder and lemon twist. *Pumpkin Spice Syrup: In a sauce pan, add 1 tsp of ground pumpkin pie spice to simple syrup. Bring to a boil. Chill and serve.

Pumpkin.⠀ .⠀ Here I will leave you with this amazing pumpkin gnocchis and I will walk back slowly....⠀ .⠀ Pumpkin Gnocchi:⠀ .⠀ 1 medium-large russet baking potato⠀ 1 cup pumpkin puree ( NOT pumpkin filling🤢)⠀ 1 egg⠀ 1 3/4 cups white whole wheat flour (more as needed)⠀ 1 teaspoon salt⠀ 2 tablespoons of earth balance vegan butter(for pan frying)⠀ .⠀ Potato prep: I rather baked but you can boil it too. When it’s cool enough to handle, grate it until you have about 1 1/2 cups of very fine potato shreds or use potato masher.⠀ .⠀ Gnocchi Dough: Mix potato with pumpkin puree. Measure flour onto a clean surface and put the potato/pumpkin mixture in the center. Make a well and crack your egg into it. Sprinkle salt on top. Grab a fork and whisk up the egg real quick. Using your hands, mix all ingredients into a dough. Don’t overmix. When it starts to come together, form the dough into a mostly-smooth, rounded little loaf.⠀ .⠀ Gnocchi Prep: Cut off slices of the dough and roll each one into a long rope. Cut the rope into bite sized pieces. Place the gnocchi pieces on a plate (make sure they’ve got a little flour coating so they don’t stick).⠀ .⠀ Cooking the Gnocchi: Bring a large pot of water to boil. Add the gnocchi, carefully, one at a time, to the water. You may need to work in batches. When the gnocchi rise to the top of the pot of boiling water, immediately remove them with a slotted spoon. Set aside. Melt your butter in a large nonstick skillet. Pan fry the gnocchi, undisturbed, to get one side lightly crispy and leave the other side soft. Pumpkin Pie Smoothie (Keto and Paleo Friendly) I’m about to break your heart, and I don’t really care. I know it’s fall, and I know you’re especially excited about your Starbucks Pumpkin Spice Lattes. But they are down right awful for you. A grande PSL contains 52 grams of carbohydrates and 50 grams of sugar. If you need a visual, that’s equivalent to 4 tablespoons, or ¼ cup, of sugar!!! And shocker, they don’t actually contain a single drop of actual pumpkin. • This fall, skip the drive through, and make yourself a pumpkin pie smoothie instead. It’s delicious and satiating, and you won’t get the sugar crash after. Chances are you haven’t given pumpkin a chance outside of the standard pumpkin pie. It’s bizarre that pumpkin is so under utilized, seeing as it’s rich in vitamin-A, beta-carotene and fiber. A half cup of pumpkin pureé has only 6 grams of carbs, making this smoothie keto-friendly if that’s your thing. I add collagen to pretty much anything I throw in the blender. I’ve used vitalproteins beef collagen religiously for the last 2 years. Collagen is good for your skin, joints and bones, and is especially important for you as you get older and your body’s natural collagen diminishes. Considering I’m in my thirties and the check engine light is starting to come on, I’m eating as much collagen as possible. • You’ll also notice that the recipe calls for a pinch of vanilla extract. By that, I mean just a few drops. Pumpkin Pear Bread 🎃 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ -1 ripe banana (smashed) -1 pear (peeled and diced. Don't puree it. I did that the first time and the bread was too heavy and didn't bake right) -1/4 cup honey -1/4 cup maple syrup -1 tsp vanilla extract -1 3/4 cup whole wheat flour (can sub for GF flour, but don't use anything like coconut flour that is super absorbent) -1 cup pure pumpkin puree -1 tsp salt -1 tsp baking soda -1 tsp baking powder -1 tsp pumpkin pie spice -1/2 tsp cinnamon -1/4 tsp ginger powder 1. Preheat oven to 350 degrees F and grease/spray a bread pan. 2. In a large bowl, add the smashed banana, pumpkin puree, vanilla, honey and maple syrup. 3. Add in diced pear and stir. 4. Add in the dry ingredients and stir to combine. 5. Pour batter into pan and spread evenly. Top with nuts or whatever you like. I used coconut butter! Honestly tho it didn't make a difference. 6. Bake 45-55 minutes until a toothpick inserted in the center comes out clean. If not, keep cooking for another 10-15 minutes. 7. Let cool for about 30 minutes in the loaf pan before consuming.

It’s crockpot season y’all! As the weather starts to cook, this crockpot pumpkin chili is an awesome vegetarian dish that is easy to make! To make: -put 1 can of kidney beans and 1 can of black beans in crockpot -add in 28 oz fire roasted can of tomatoes along with 2 cups water -stir in 3 garlic cloves, 1 red bell pepper diced and a yellow onion diced -stir in 1 can pumpkin purée with cumin, chili powder, salt, and pepper -cook on low 8 hours
