I don’t really enjoy making deserts as I am more of a savoury girl, but this flan is so easy that it took me literally 15 mins to put together. Turn the oven on to about 180 degrees Celsius. Start by making the caramel sauce, I put some caster sugar or (or use normal white sugar) in a pot and just let it do it’s own thing, don’t stir it just let the sugar start caramelising in a low heat , careful not to burn or take it too far or else it will taste bitter. In a food processor / Thermomix / blender add - 1 can condensed milk, equal part water and 6 eggs. Mix throughly together. Once the caramel is ready - careful not to burn yourself, pour into an ovenproof dish and swirl the caramel all around the dish - I just used a rectangle cake tin. Boil some water and in a baking tray first place a cloth inside the baking tray( this stops the tin moving during cooking process and avoids water getting into the flan).Add the mixture into the prepared cake tin / pudding dish and then place inside the baking dish. Pour the boiling water I the baking dish to about half way up he cake/flan tin. Bake at 180 degrees Celsius for around 40-45 mins. Let cool in the tin completely before turning over into a dish. Serve with some of the caramel sauce on top, some fresh fruit or if you like add cream or chantilly. Hope you enjoy. Ok here you all go... FROZEN PEACH SORBET WITHOUT THE NUT MILK! Literally just use 2 bags of kosher_taste Frozen Peaches with about 1 cup of sugar (more or less to your taste) 1 tbsp if lemon juice. Mandarin-Orange Cake This cake is MADE IN A BLENDER! The whole mandarin, with skin goes in (except seeds). Doesn’t get easier! This cake was really popular in Argentina a couple of years ago, my family and friends were all over this recipe and shared it with me. It’s delicious + fragrant. Love it on the weekends for breakfast or as an afternoon treat. Have you ever made a cake in a blender? So easy. . *Tip- always keep self rising flour in your pantry. Baking becomes a breeze. 😉 . *Preheat oven to 340°F (170°C) Ingredients: * 3 seedless mandarins (skin and all) * 1 1/4 cup granulated sugar * 3 eggs (room temperature) * 1/4 cup + 2 tsp melted coconut or vegetable oil * 2 cups self raising flour * 1 tsp vanilla (optional) . *Blend the orange, eggs, oil and sugar *Put this mixture in a bowl, add flour * Mix with rubber spatula softly. Do NOT over-mix (if batter feels too thick, add a splash of water or milk, or more oil) * Pour the batter into a 9x5 inch pan, (previously greased and floured) * Sprinkle some sugar on top for a nice crust * Bake in preheated oven (340°F) for 35 mins or until fully cooked. Check interior with toothpick or knife. Let it cool out of oven 10 mins before slicing.

A family friend always made this death by chocolate trifle 🍫 for all our get togethers!! It is usually made with heath bar crumbs instead of Oreos 🍪, but this is my take on death by chocolate. Whisk & fold until deliciously thickened. . 2.Pour this peanut butter mixture into a prepared pan & smooth into an even layer. . 3.Melt together vegan chocolate chips & remaining peanut butter. I had the tiniest of keto desserts after my lunch today! I took the keto chocolate from my fridge and broke once piece of it into two. For the middle, I took 2 tbsp mascarpone cheese and added pure vanilla extract and 1 tsp (4g) of monkfruit+erythritol sweetener. Mix it up and make a tiny sandwich. 😎 Approximate Macros: 21g fat, 4.4g protein, 0.6g net carbs, 200 calories For the macro approximation, I calculated that I had 1/16 of my keto chocolate I made. do you have 15 minutes and 4 things in your pantry? sure. like brownies? duh! 4-ingredient brownies are where it’s at! you read that correctly - F.O.U.R. and they taste AH-mazing. 1. combine: 1 c. mashed sweet potato, 1/2 c. nut butter (I used raw almond butter), 1/4 c. maple syrup and 1/4 cacao powder 2. BLEND in a food processor or blender (I tried the stir-vigorously-so-I-don’t-have-to-wash-the-blender substitute and I do not recommend it 😆) 3. pour into a small loaf pan and bake at 350 for 12-15 minutes 4. enjoy!

Grilled bananas . I cut the bananas in halve, sprinkle them with sugar & put them under the grill until they’re slightly caramelised. I often serve them with crumble (usually all our biscuits, cakes and toasted nuts from the week crumbled together) and some ice-cream. Rizogalo (Greek rice pudding) is a creamy & delicious dessert, loved in every Greek household. It can be served hot or cold, & enjoyed as breakfast, afternoon snack, or dessert. We have added a modern twist, by making it a barecoffee rizogalo! . . 📸 & recipe credit: the_traditional_plate . . Prep, 5mins. Cooking, 1 hr. Serves, 8. Ingredients: 1.5 litres of full cream milk, ¼ litre of water, ½ cup of rice (short grain), ½ cup of white sugar, 1 teaspoon of vanilla sugar, barecoldpresscoffee & cinnamon . . 1/ In a large pot on high heat, add 1.5 litres of full cream milk, ¼ cup of rice & ½ cup of white sugar. Bring to a boil & occasionally stir for 20 mins . . 2/ Once it has reached boiling point, lower the heat & allow it to simmer for an additional 25 mins. Make sure to keep stirring, so that as it thickens, the rice does not stick to the bottom of the pot . . 3/ Once 50 mins to an 1 hr has passed, it should be much thicker (like a pudding) with large boiling bubbles. This means it is ready and can be turned off . . 4/ Add 1 teaspoon of vanilla sugar & 1 shot of barecoldpresscoffee. Taste and add more coffee as you please. Stir well. Mini-Pecan Cookie Tartlets These Tartlets are a cookie base with a hint of almond and a pecan pie filling! Try it. Cookie base: Preheat oven to 400 degrees. Spray mini-muffin pan with nonstick spray. Cream 1 stick of butter ( room temp)and 1/2 cup sugar x 4-5 minutes. Add 2 egg yolks and 1 teaspoon almond. Add 2 scant cups all purpose flour slowly to the wet ingredients until all is combined. Roll into small balls and press into muffin cups with your fingers or a tartlet shaper. Bake 10 minutes. Cool. Filling: In small saucepan combine 1 stick butter, 1/3 cup Karo syrup, 1 cup powdered sugar. Bring to boil. Remove from heat. Add pecans. Cool slightly. Spoon into shells. Do not overfill.
