[Parmigiana] is a traditional italian meal with 🍆🍆. | Parmigiana je tradicionalno talijansko jelo s 🍆🍆. Ukusno i šareno. Uzmemo dva veća patlidžana i narežemo ih uzdužno na debljinu cca 5mm. Posložite ih na protvan s papirom za pečenje, malo polijte maslinovim uljem i posolite. Stavite u pečnicu zagrijanu na 230 °C i pecite 15 min sa svake strane. Za to vrijeme na tavici popržite češnjak i prelite s pelatima nasjeckanim na male kockice (cca 800g ili 2 konzerve) i umakom od paradajza. U smjesu dodajte prstohvat šećera (onolko koliko možete zahvatiti prstima) da paradajz ne bude kiseli, malo soli, malo bosiljka. Sve to promiješajte i kuhajte na laganoj vatri 20-ak minuta, dok se ne zgusne. Na sitno naribajte mozzarellu i parmezan sir. Vatrostalnu zdjelu namastite maslinovim uljem i slažite ko lazanje: umak-patlidžan-umak-sir-patlidžan-umak-sir. U malu zdjelicu pomiješajte prezle, usitnjene orahe i malo maslinovog ulja i sve zajedno posipajte na posloženu parmigianu. Stavite parmigianu u pečnicu na 200°C na 20-25 min. Good morning lovelies! It is a beautiful Tuesday! However, our area is expecting some colder weather to roll in tomorrow morning and I am ready for it! For those of you looking for a delicious warm meal to enjoy when the snow hits, might I suggest this warming soup? 🍂 Potato-Sausage-Kale Soup. It is not only cozy, but healthy too! I used a polish sausage. It was slightly sweet and gave this bowl an amazing flavor. I recommend frying it up in some avocado oil until "almost" cooked through before adding it into the rest of the soup, which consists of red potato, leafy green kale, garlic, yellow onion, and chicken broth. Water can be added to tame the chicken broth if you are into a milder taste. It is easy to make! Just let everything simmer until the potatos are soft. Salt and pepper as needed. You know what else goes amazing with this dish? Oven toasted french bread. Yes please! 🍂 . . . . . Ok friends! Are you looking for a simple weeknight meal that’s super satisfying???? This was so easy to make and really was one of those meals that I said “I want this again tomorrow night”. It was THAT GOOD!!!~ • Pepper, Mushroom and Onion Fajitas~ 🌶1 large sweet onion, sliced thin~ 🌶2 bell pepper, sliced thinly (I used red)~ 🌶2-3 large portobello mushrooms, sliced 1/4 inch thick~ 🌶1 TBS taco seasoning (I used Riega organic taco seasoning) *make sure you check all ingredients for no foods. You can always make your own if you can’t find a legal one)~ 🌶mushroom broth for sautéing~ 🌶tortillas of choice. ( I used potapas and siete almond flour tortillas or you can make your own, I wanted simple!!)~ 🌶cashew cream, avocado and green onion to garnish~ *make sure your portobellos are cleaned and stems removed. Sauté in a large skillet, onions and peppers in the mushroom broth until soft, about 3 minutes or so. Add your mushrooms and taco seasoning. Stir well and let cook for about 7-10 minutes until the mushrooms and seasoning come together and all the veggies are soft. Serve on warm tortillas and top with garnishes! This makes about 6 fajitas. Next time I will make a double batch😋. So easy and so comforting! Looking for a quick & delicious dinner? I’ve got you covered! I threw this zucchini boat recipe together and it’s quickly becoming a staple around here. 20C/14F/60P 415 calories per serving (recipe yields 6 servings, 1 whole zucchini/2 boats is a serving) Ingredients: 6 large zucchinis Salt & pepper 2 packs of extra lean ground turkey (or 2 lbs of your of your meat or choice) 1 small onion 1 tbsp minced garlic 1 pack of zesty Italian chicken 1 jar of your favorite marinara sauce 1 bag of mozzarella Directions: 1. Preheat the oven to 350. 2. Cut the ends off of the zucchini and then use and ice cream scooper to remove the inside. Pat dry with a paper towel and put salt & pepper on the inside. 3. Brown meat in a pan and add 1 small chopped onion and 1 tbsp minced garlic. 4. Drain grease from pan. Add 1/3 cup of water and a pack of zesty Italian seasoning. 5. Add 1 jar of marinara sauce and simmer for 5 minutes 6. Stuff zucchini with mixture 7. Add 2 tbsp of mozzarella to each half 8. Bake for 30 minutes at 350 Note- Nick isn’t a zucchini fan so you could always mix in the mixture with pasta like the last picture!

Chicken and broccoli meal prep🥦! I try to come up with at least one new recipe to try out every time i meal prep. This is easy, cheap and feels like a comfort meal on a Friday night. • • • * * 1 large bag or head of broccoli, cut into florets ( i used bag as it comes chopped) * 
2 boneless chicken breast, skinless * 
2 cloves garlic, chopped * 
1 onion, sliced or 2 teaspoons of minced onion * 2 carrots chopped or diced * 
1 teaspoons of ground ginger * 
3 Tablespoons Hoisin Sauce * 
4 Tablespoons low sodium soy sauce, tamari sauce or coconut aminos * 
6 Tablespoons honey * 
1/2 cup of veggie broth * Heat wok on medium heat or if you are like me and don’t own one 😃 use large non stick pan. Add enough veggie broth to coat the pan or wok. Add broccoli, carrot and onion cover and cook for about 5-10 mins. Remove from pan. Add more veggie broth to coat pan, add garlic and chicken, cook chicken until browned. While chicken is cooking, create sauce by mixing the 1/2 cup of broth, soy sauce, hoisin sauce, ginger. Once chicken is browned reduce heat to simmer and add sauce mixture. Add in honey as you go. Once bubbly and thickened, add broccoli and carrots back to pan. Stir to coat and let simmer for five mins. I paired this with brown basmati rice. It’s soup szn people! Raise your hand if you love making a big batch of soup on a crisp Fall day 🙋🏼‍♀️. This week I was really craving some hearty chicken soup and I wanted to make it as simple as possible. . . . Ingredients: Carrots, celery, onion, rotisserie chicken, no salt added organic chicken bone broth, orzo, lemon, rosemary, sage, thyme, salt, pepper, shredded Parmesan cheese . . Directions: Sautée chopped up carrots, celery, and onion in olive oil until softened and season with salt and pepper. I shredded the chicken off of a rotisserie chicken to make it easier (could definitely bake your own chicken and shred). Once all mixed together, I added organic chicken bone broth, fresh herbs (I left whole instead of chopping up), and brought to a boil. Once bubbling, I added 1 cup of orzo and cooked until soft. I then removed the herbs and squeezed the juice of 1 lemon in for some freshness. I topped with shredded Parmesan (because everything is better with cheese) and enjoyed!

Saute for a minute and add onions and mushrooms. Stir fry on medium high heat for 3-4 minutes till the onions and mushrooms are tender but not completely wilted. Add bell peppers, paprika, cumin powder, chipotle powder and salt. Tau Chiam Noodles, aka Flat Bean Noodles, is a food I grew up with. My mom swears by a certain brand she’s gotten from the wet market but even then, she says it’s hard to get because it runs out so fast. Of course, my mom is my supplier. I like it simple and clean. So here we fried up some garlic, add in stock or water, add in all the ingredients - noodles, marinated meat strips, vegetables. I stir fried the eggs on the side but for one pot cooking, just dump the beaten egg into the pot with the rest of the ingredients when they are almost done. Who has a go to dish they like to make with leftovers? Mine is definitely fried rice when I have leftover pork tenderloin. It’s totally customizable, you can use whatever you have on hand, it’s a fun way to utilize a ton of veggies, and it’s quick and easy. You can use whatever base you like, brown rice, riced cauliflower, long grain rice. I used jasmine rice and my one tip is if you’re using actual rice, cook it the night before or morning of, spread on a cookie sheet, and let dry out in the fridge. I always start with the aromatics, ginger and garlic, and then onions, celery, carrots, and a fresh jalapeño. You can season however you like. For the veggies I use Penzey’s Bangkok Blend. It’s a salt free seasoning that has lemongrass, ginger, galangal, chili powder, cilantro, etc. get your pan good and hot for the rice. If it’s not talking back you you, you’re not doing it right. It goes quick! A splash of soy, a little sriracha for heat, I also added nativocs Patagonia as I’d use it on my pork. With the fennel and clove, it has notes of Chinese five spice. I mixed the veggies and pork in, added frozen peas and water chestnuts, made a well in the center, and scrambled eggs using chopsticks. Scallions and cilantro finished it off. Reminiscing on when me and palmer880 made homemade tacos 🌮... Matt cooked up some mince meat whilst I sorted the guacamole 🥑 and salsa 💃🏼 from scratch. Ingredients: 3 x Fennel Bulb 4 handful Green Veg 3 x Lime 3 tbsp Olive Oil 1 pinch Pepper 1 pinch Salt 12 x Baby Potatoes (to serve) 6 x Fresh Salmon Darnes 200 g Prawns (raw) Method: 1. Preheat the oven to 200°C/gas mark 6. 2. Trim the tops off the fennel bulbs and reserve the fronds for the finished dish. Halve the bulbs, then cut into thin wedges. Season well and toss with 1 tablespoon of the olive oil. Spread out on a baking tray and roast in the oven for 10 minutes. Season the salmon darnes and slice two of the limes. Take the tray out of the oven and put the salmon and limes on top of the fennel. Put the tray back in the oven and cook for another 10 minutes. Add the prawns and cook for another 5 to 7 minutes, until the salmon and prawns are just cooked through. 3. Remove the tray from the oven. Squeeze over the juice of the remaining lime, drizzle with the remaining 1 or 2 tablespoons of olive oil, sprinkle over the chopped fennel fronds and serve straight away, spooning over the juices from the tray. Serve with boiled baby potatoes and a green vegetable. Pasta with sage, mushrooms & chorizo! I had some chorizo left over but bacon or prosciutto would work really well too. This one pan pulled Mexican chicken has become a weeknight dinner staple. It’s super easy to make, requires little cleaning up and only takes 30 mins 💃 Exactly what you want after a long day at work! INGREDIENTS: 600g chicken breast (sub for jackfruit or use beans for vegan option) 1 brown onion, diced 2 garlic cloves, minced 800g tinned diced tomatoes 3/4 cup corn kernals (I used frozen corn) 3/4 cup vegetable or chicken stock 1 tbs tomato paste 2 tsp paprika (use 2 normal or 1 sweet and 1 smoked for more of a smokey flavour) 1 tsp ground cumin 1 tsp oregano 1/2 tsp ground coriander 1/2 tsp chilli powder 1 tsp salt Pinch of pepper 1 tbs olive oil METHOD Heat olive oil in a medium sized pot and sauté garlic and onion until translucent. Add all the spices, tomato paste and stir for 30secs. Stir in diced tomatoes and stock then add the chicken breast, cover with a lid and simmer for 20 mins until the chicken is cooked all the way through. Remove chicken breast and shred with two forks. Put the shredded chicken back to into the pot, add the corn kernels (and beans if using beans them too) and simmer with the lid off for another 5 mins. I served mine with basmati tildarice, slaw (details further back in my feed), avocado and fresh coriander 🥑🌱 tildarice
