𝐕𝐄𝐆𝐀𝐍 𝐋𝐄𝐌𝐎𝐍 𝐂𝐎𝐂𝐎𝐍𝐔𝐓 𝐌𝐈𝐋𝐊 𝐀𝐍𝐃 𝐊𝐀𝐋𝐄 𝐒𝐏𝐀𝐆𝐇𝐄𝐓𝐓𝐈 ⁣ ⁣ In my effort to not only have quick meals during the school year but also use up some things I have in the kitchen to save money, this recipe has been born! ⁣ ⁣ There was a few similar online, but I did not have all of the ingredients and I’m not good at following recipes so here is my version. ⁣ ⁣ Ingredients: ⁣ ⁣ Half can of coconut milk (I used the lighter one so this was not so dense).⁣ 1/2 box of some sort of noodle (I typically like red lentil pasta to get iron but I was out). ⁣ 1 bunch of kale ⁣ .25 of an onion ⁣ 1 lemon ⁣ .25c nutritional yeast ⁣ 1.5 C veggie broth ⁣ I added like a tbsp of vegan butter to make it creamier but thats totally optional. ⁣ ⁣ Y’all I done measure a TON when I cook so use your best judgement. ⁣ ⁣ 1. Heat up just a touch of oil in a pot and add your onion and kale. Saute until the onion is translucent. ⁣ 2. Add the veggie broth, coconut milk, vegan butter, lemon, and salt and pepper. ⁣ 3. Once that is boiling, throw in the noodles.Make sure they are all at least slightly covered by the liquid. It will cook for about 15min (or until all of the liquid is soaked up).⁣ 4. Summer might be winding down, but that doesn't mean we can't fit in one last summer dish before fall officially hits! Here's an easy recipe for a "Summer Squash & Pecorino Pasta." Summer Squash & Pecorino Pasta (Serves 2) 1T  Olive Oil 2T Garlic, sliced 1/2 # Zucchini, sliced 1/2 cup Pecorino, finely grated (Microplane) 1/4 ea Lemon, juiced 2T Mint, roughly chopped 1/2 # Pasta, blanched TT Kosher Salt TT Black Pepper ½ cup Water Method:  In a large sauté pan, heat oil over medium flame and add garlic.  Cook for 2-3 minutes while stirring.  When garlic is just beginning to brown, add zucchini.  Season with salt and pepper.  Add water.  Stir occasionally until zucchini is tender and just beginning to break down, approximately 8-10 minutes (Can be done ahead of time). Remembering these buffalo cauliflower wings that I made at work this summer. Perfect amount of 🔥🔥🔥 and 😋😋😋 Thanks to my baby girl alexmarguerite_ for writing down this recipe because I never would have🙏🏽 😘 1 C non dairy milk, unsweetened and unflavored 3/4 C garbanzo flour or flour of your choosing 1 tsp garlic powder 1 tsp onion powder 1/4 tsp sweet paprika 1 1/2 tsp salt, or to taste Black pepper Directions: Mix all dry ingredients then whisk in milk. Dredge cauliflower and lay on sheet tray. Bake at 450 for 20 min. Make buffalo sauce (see below), toss slightly cooled cauliflower in sauce (or drizzle over) and BROIL for a few minutes so they don’t get soggy. Buffalo Sauce: 2/3 C Crystal hot sauce (or similar) 1/2 C vegan butter (I used myokos) 1 1/2 TBSP white vinegar 1/4 tsp worcestershire 1/8 tsp garlic powder 1 tsp honey or agave 1/4 tsp cayenne (optional) Salt to taste Directions: In a small pot, melt butter over medium heat. When butter is melted completely, whisk in all other ingredients and continue cooking until sauce thickens, whisking occasionally. Chorizo, Tomato and Spinach Gnocchi with a creamy garlic sauce 😘😘 Another easy midweek meal full of flavour made in under 10 minutes recipe for 2 below: INGREDIENTS 50g soft cheese 350g gnocchi 80g baby leaf spinach 100g british diced chorizo 125g cherry tomatoes 35g grated italian parmesan 3 garlic cloves crushed METHOD Boil gnocchi for 2 minutes according to packet instructions meanwhile fry the diced chorizo for 2-3 mins in a frying pan no need for oil as it creates its own, drain off oil. Add the cooked gnocchi to the chorizo with garlic and tomatoes fry for 1 minute. Add the spinach, once wilted add the soft cheese, parmesan and a little water. Serve straight away and sprinkle with parsley. Plant based pizza 🍕🌱 needed a super quick meal tonight so cooked the white_rabbit_pizza_co vegan + gf gardener pizza topped with sundried tomatoes, vegan mozzarella, kale and pesto, then drizzled it with homemade tahini ranch (with extra on the side for dipping 😋) For the ranch dressing: • 1 tbsp tahini • 1 tbsp vegan mayo • 1 tsp Dijon mustard • 1 tsp agave or maple syrup • juice from 1/2 medium lemon • 1/4 tsp sea salt Mix everything in a bowl then slowly add water 1tbsp at a time until the mixture loosens and becomes smooth and creamy. (AD) Whenever we feel in need of a bit of a pick me up, we make a super green kale smoothie. What makes it really creamy, is that we have made is with goodhemp milk. . Good Hemp milks are high in omegas 3 and 6, they are a complete protein full of all 20 amino acids and also suitable for those with nut allergies. . We are all for trying to do as much as we can to help the planet and Hemp makes the most sustainable alternative milk available – it absorbs CO2 while it grows, making it a carbon negative crop. You could toss it in the crockpot for a few hours, boil it, bake it, grill it... whatever!⠀⠀⠀⠀⠀⠀⠀⠀⠀ After chicken is cooked slice it thin or shred it.⠀⠀⠀⠀⠀⠀⠀⠀⠀ 2️⃣In a medium bowl mash black beans, then stir in yogurt, onion powder, garlic salt, and a little hot sauce. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ 3️⃣Heat flatbread in oven for a few minutes.⠀⠀⠀⠀⠀⠀⠀⠀⠀ 4️⃣Spread bean & yogurt mixture on flatbread. Creamy coconut milk papaya mousse . . Ingredients : Coconut milk 250 ml (refrigerated overnight) Chopped papaya 1 cup Frozen banana 1/2 Honey/ dates (3-4) optional . Refrigerate the can of coconut milk the night before so that fat in the milk turns to cream and separates from the liquid. . The can must be full-fat because you will be blending the solid cream. Make sure it is also unsweetened and preferably organic. Just refrigerate it the night before and it will be ready. When you open the can, take out the cream, leaving the watery liquid behind. . Open the can and use only the cream of coconut. Place it in a bowl. . Whip the cream of coconut (hand mixer/ blender/ whisk) for just a couple of minutes first. You want to soften the cream a bit before mixing with the fruits. . Blend papaya and frozen banana with honey or dates (using a small blender or food processor), and then add it to the bowl of coconut cream. Mix well. . Place the mousse in a container or small bowls. . Refrigerate for a couple of hours before serving. . You can decorate with some papaya cut in little pieces and roasted flax seeds on top. . Scallion Noodles with Sesame Stir Fried Beans⁣ ⁣ This is a quick , easy ,no fuss , green and vegetarian recipe with some amazing flavours.⁣ I love spring onions and usually add it to a hung curd dip or use it for garnishing. When i had these simple scallion noodles in Taiwan, where they are a staple, I knew I would be making these in my kitchen for sure. ⁣ Scallion noodles are to Asian cuisine what Aglio e Olio is to Italian !! 😋 With a handful of ingredients you end up with a delicious dish!! In this case just FIVE!! ⁣ ⁣ Recipe📝⁣ 🍜cook some noodles in boiling water as per the packet instructions.⁣ 🍜in a pan, add 3 tbsp of sesame oil and once hot add 1 cup of chopped spring onions and fry them.⁣ 🍜Add 2 tbsp of dark soy sauce + 1 tbsp light soy sauce + 1 tsp brown sugar and salt to taste. be mindful of the salt in the soy sauce. ⁣ 🍜add the cooked noodles to the pan and toss well and you are done!!⁣ ⁣ For the sesame stir fry beans⁣ 🍜 add 2 tbsp sesame oil in a pan and saute 4 cloves of chopped garlic.⁣ 🍜add steamed french beans and toss well.⁣ 🍜add salt to taste + 1/2 tsp brown sugar + 1 tsp soy sauce +1 and 1/2 tsp sesame seeds. toss and cook for a few minutes.⁣ ⁣ ⁣
