a mouth watering, 15 minute, vegan pizza? i must be dreaming 💭 i’m sorry i went MIA for the last few weeks... my apartment has no AC so I haven’t slept here in weeks 🙃 this isn’t the type of heat i was asking for, Chicago! me + this heat = no bueno. me + this pizza = increíble! -pizza & sauce: spray both sides of 1 thin whole wheat pizza crust (mine was 365 everyday value from @wholefoods) in sprayable canola oil and put on pizza pan. We were up at 6am this morning to drop my parents in law at the airport. It has been an amazing week filled with ♥️ and good food hahaha . I'm so happy to be back to my normal routine and what a better way to come back than with PANCAKES!!!! I tried a new recipe this morning and holy shit look at the amount of pancakes I got out of the mix (11 🙌🏽) hahaha I'm not complaining but just saying hahahahaha 🙈 . I made this Hummingbird cake for my friends birthday. It had carrot, banana, coconut, pineapple, pecans, cinnamon and nutmeg- all the flavours my friend likes, plus it was super quick and easy (the only type of baking I enjoy doing!). I decorated it with a cream cheese frosting and flowers I bought that morning from @paddingtonmarkets (I cut the roses to size and wrapped the bottom of the stem with sticky tape before putting it in the cake). It was so good we ate it before AND after dinner! 😊 I used wholemeal flour, but you can definitely use gluten free flour and honey or maple syrup instead of brown sugar for a ‘gluten free, refined sugar free’ version! For those of you who aren’t ‘dessert people’- this cake is great for you because it’s not overly sweet. A tricky #pasta, the #carbonara, if prepared correctly, is such a delicious dish. Perfect for a Saturday night spent at home. We followed #jamieoliver 's recipe, which used asparagus as the twist to the classic. We left out the pancetta for a #vegetarian dish. Poke holes all around & heat in the microwave for 1 1/2 mins. Then cut into cubes. ▫️Prep your onion & garlic. Add that & your potatoes to a large pan with EVOO. Sprinkle with your spices & cook for roughly 10 mins. ▫️Meanwhile, cook your eggs sunny-side up in another large pan, 4 at a time. ▫️Also in a pot, cook your refried beans on low heat. Add a splash of water & season with salt & chili powder. 👉🏼 Serve in a plate your hash, beans, eggs, & avocado. Sprinkle your potatoes with the sliced baby spinach. Season your eggs with salt & pepper. Drizzle your favorite salsa on top of everything (I used my current favorite - Hot Doña Salsa by @tacodeli)
