QUINOA STUFFED PEPPERS: . . INGREDIENTS: . . 1 cup dried quinoa 1 3/4 cup water or vegetable broth 2 teaspoons chili powder 1 1/2 teaspoons cumin 1/2 teaspoon garlic powder good pinch pink salt 1 can (14 oz) corn, drained 1 can (14 oz) black beans, drained and rinsed 1 cup pico de gallo, plus more as needed 6 medium bell peppers, use your favorite color/s cilantro, to serve avocado, to serve . . INSTRUCTIONS: . . Preheat oven to 375 degrees F. Quinoa: In a medium size pan, add water/broth, quinoa, chili powder, cumin and salt, bring to a boil, cover, reduce heat to low and simmer for 15 minutes. Remove from heat, let cool about 5 – 7 minutes. Add in corn, black beans and pico de gallo, mix to combine. Add extra pico de gallo as you like, I used about 1 1/2 cups. Taste for seasoning adding salt or other spices to your liking. Prep: Slice bell peppers in half and remove seeds. Assemble: Place peppers on a baking sheet lined with parchment paper or a silpat. Fill each half with quinoa. Place sheet in oven on middle rack and bake for 20 minutes, or until peppers are just al dente and nearly soft. Serve with sliced avocado and a sprinkle of chopped cilantro. Cajun Turkey & Quinoa Stuffed Peppers #lifeatabalance . . It’s been a while since I made stuffed peppers, so I thought it would be a fun dinner last night. The best part about stuffed peppers is that there are so many variations you can make. I decided to mix it up a little & use Cajun seasoning. It was an experiment for me, but I thought they turned out well! 😍 . These peppers are stuffed w/ a mixture of quinoa, mushrooms, onions, mini peppers (you can also use large bell peppers, but I had some minis that were about to go bad 😀), a very small amount of grated parmesan, & turkey meat all sautéed in @spiceology cajun seasoning. To garnish I added some avo on top & sprinkled some red pepper flakes. . . . Product of the week will be quinoa. I have to get back into my home cooked meals. The body is constantly communicating with us. As good as we think we're eating at times we never know what's being used in our foods when eating out. We never know the energy or intentions of the person or people preparing our foods. My body feels it's best when I cook and prepare my own meals and I owe my body the respect of listening to it as it communicates with me. If we continue to ignore the signs of communication that the body gives it will begin to speak in a harsh manner. This is what we call illness and dis-ease. Wake up and listen to the body as it speaks. Do the things that makes you feel your best and do it over and over again until you become your best.
