NoOnions NoGarlic Recipe Repost supruchi ... Bendekayi hasi gojju / Ladies finger gravy for chapati /rice (no onion, no garlic recipe) This is my all time favorite 😋 It reminds me of childhood days as this is the 1st ever gravy /curry I had cooked 😊 It's very easy and takes just about 2-3 main ingredients.. Preperation Time : 15 minutes Cooking Time : 15 minutes Serves : 5-6 Ingredients 1/4 kg ladies finger / Okra To grind 1 cup grated coconut 3-4 green chillies 1 tsp cumin seeds 1 tsp mustard seeds 1/2 tsp urud dal A lemon sized tamarind 1-2 tsp jaggery powder (optional) Salt to taste Water to adjust the consistency To temper 2 tsp vegetable oil 2 red chillies 8-10 curry leaves 2 tsp mustard seeds Pinch of Asafetida Method Grind all the ingredients from 'to grind' section. Keep it aside. Finely chop ladies finger into thin dices and keep it aside. In the heavy bottomed pan add 1 tsp vegetable oil. Heat it in medium flame and add chopped ladies finger. Add 1/2 tsp salt which helps in releasing the water and drying out the gooey substance. Mix well and turn the flame to low. Let it cook until the raw smell goes away and are no more sticky. Keep stirring it in between. This step may take anywhere between 8-10 minutes. After this add grinded paste and mix well. Add water if required. Let it cook with covered lid in low flame for 5-7 minutes. Prepare the tempering by adding 2 tsp vegetable oil to the tempering pan. Once it is hot, add mustard seeds, once they start to splutter add asafetida, red chillies and curry leaves. Switch off the flame and mix them well. Pour it over the gravy and cover the lid. Let it rest for 5-10 minutes and mix it well. Googled the recipe and modified it according to our liking. A little less spicy, a hit more creamy and voila, we have a flavourful, aromatic curry that goes perfectly with my jowar rotis. Recipe 2 Onions 2 Tomatoes One tbsp chopped garlic One inch ginger grated 2 cardamom 10-12 Almonds (I added 4/5 cashews) Few cloves 6-7 pepper corns 1 TSP garam masala Salt as per taste 1/2 cup grated coconut 3-4 green chillies 1 tbsp poppy seeds (khus khus) 3 tbsp oil 1 TSP red chili powder 1/2 TSP turmeric powder 1 TSP coriander powder 1 TSP cumin leaves 1 cup spinach 1/2 cup cream Coriander leaves for garnish 5-6 boiled eggs Saute onion, garlic, ginger, red chillies and almonds in one TSP oil. Remove from flame and grind to a smooth mix. Add one TSP oil in the same pan and add coconut, tomatoes, spinach, chillies, cardamom, cloves,pepper corns and poppy seeds. Saute for few mins and remove from flame. Grind to a paste. Add remaining oil to the pan, add cumin and the onion paste. Let it saute for 2 mins and add the tomato paste. Let it fry and add turmeric and chilli powder and garam masala. The gravy will leave oil in few mins. Add the cream and mix. Cut the boiled eggs and fry with cut side down. Remove from pan and top on the gravy mix. Garnish with corainder. This moreover because of my mom Amita Dessai who is a MA in Japanese (Translation and Interpretation) and I simply envy her for the same. She while on her tour to Japan brought back lovely things which I saw all the time during my childhood. At an early age I learnt to eat with the chopsticks as she taught me to. I saw the oriental circus during my childhood days repeatedly on the VCR and ate noodles which I love even now. A few days back I had done a pastel painting of the Mt. Fuji during a competition in office. Today while plating my breakfast in the morning I had the Mt. Fuji in my mind somewhere. This was absolutely unplanned and it happened! What you see on my plate today is a bread base which has a totally Indian kind of topping of onions and tomatoes. Up goes the poached egg which I regard to as the Mt. Fuji clad with snow. Its topped with black pepper which I have interpreted as the dust in the air. The vegetation around the Mt. Fuji is beautiful and that on my plate are the grilled mushrooms and the fresh parsley. I have also added some burnt garlic which gives a totally different dimension to the dish which are my version of the rocks from the sediments of the volcano. The other pic has the molten lava which is discovered when we dig into the egg! Til laddoos are prepared during Lohri/Sankranti festival in Punjab & other states of India. Lohri/Sankranti comes in winter season, and eating til in any form is a healthy option in this season. You must give it a go! Almond biscuit base 100g digestive biscuits 50g almond meal 30g light brown sugar 50g salted butter, chilled, cubed Lemony Cream filling 350g whipping cream+ 250g fresh/single cream 50 light brown sugar 1 tsp agar agar Zest of 1 lime Juice of 1 lime Almond biscuit base Preheat oven to 180C. Place all ingredients in jar of food processor & process briefly until fine crumbs firm. Turn into a lightly buttered 8" loose bottomed tart tin, and work up the edges. Pat firmly into shape. Bake for 15 minutes. Meanwhile Place the cream, sugar, zest & agar agar in a pan over medium heat. Bring to a boil, then keep at a simmering boil for 3-4 minutes, stirring often. Take off heat, add juice of 1 large lime and a few drops of almond essence, a dash of Kirsch is optional (yet wholeheartedly recommended!) Whisk to blend, stand for ten minutes, then strain into pouring jug. Pour into baked tart shell. Just a few basic ingredients blitzed until smooth and cooked to creamy pudding perfection. Oatmeal Chocolate Pudding: 1 cup rolled oats 2 tbsp unsweetened dark cocoa powder 2 cups filtered water 1/2 cup coconut milk (or any milk of your choice) Any sweetener of your choice to taste (I added 6 soft, pitted dates) 1/2 tsp ground cinnamon 1 tsp vanilla Pinch of salt Powder the oats in a high-powered blender. It was an overcast morning and I got tempted to pick up my camera (all I had on hand was a smoothie, so it became my subject). I’ve been shooting almost exclusively with artificial light of late and though I prefer the flexibility it affords, I do miss the dreamy softness of natural light (does anyone else agree?). Here’s the easy recipe for the green smoothie. Blend: 2 ripe frozen bananas 1/4 cup rolled oats 3/4 cup yogurt 1 cup greens (I used spinach and kale) 2 tsp chia seeds 2 tbsp protein powder 1/4 tsp ground cinnamon and 1/2 tsp vanilla in a high speed blender until smooth. Feel free to add a pitted date or some honey if you prefer your smoothies sweeter. Pour into a bowl and garnish with toppings of your choice.
