I know if I lived in Seattle I’d be there every week bringing home a bouquet. Currently we’re back at the airport and boarding our red-flight. . We totally went to Seattle on a whim. I came across an eleven hour layover in Seattle before our final destination of Atlanta to celebrate our 10 year anniversary. I figured why not?? We haven’t visited before, we’ve always wanted to. let’s take advantage of the layover and spend the day in Emerald City and see some incredible landmarks and get a feel for the city. .. It's 1pm and I just cooked myself some breakfast/ lunch hehe 😊 On my COOKTOP 💃 I've been to the Gym anytimefitnessbelmontnsw - got home to take the kids to school and then shopping with my mumma for her birthday which is today and my birthday(still over a month away😛). I did all this on an empty stomach only a banana & Chai . Are you like me and sometimes in a rush and just don't have time for breaky? Would you usually opt for the easy takeaway - something that's deep fried and quick to eat because you're starving & can't wait until you get home ? This was once me... I wouldn't get up that little bit earlier and Make myself a decent breaky - i wouldn't prep my lunch - or snacks - I'd reach for something that wasn't giving me energy and over all wasn't making ME happy. I've always loved food - ALWAYS - I've always enjoyed cooking - BUT I haven't always had the patience or the organisation to stay on track. Now it's the little things - like when I do my groceries I make sure I grab something healthy to snack on whilst doing my groceries - a piece of fruit or crackers & cheese. I'll have a chai on Almond to stop those tummy grumbles... I think of something healthy (like today) to make when I get home - I grab the ingrediants when I'm out - this way it makes me excited to get home and cook it.. (yes even if I have most of it at home ,it never goes to waste with me hehe - except the eggs of coarse ). Hope these little tips help someone ❤❤

10 days until Rosh Hashana (how that came to be I’m still not sure timeflies) so I’m throwing at you all the recipes I have in my archives that I still didn’t get a chance to publish on the blog. Let’s start with this Homemade Apple Butter. The perfect way to use that bag of apple you picked at the orchard last week. Or more realistically, the market. . HOMEMADE APPLE BUTTER . Apple butter is the thicker, more spiced, sweet cousin of applesauce. It can be used like a spread; on toast, crackers or sliced cake. Or it can be folded into other recipes for extra depth of flavor and texture. It’s easy to make, I don’t bother peeling the apples. The peel adds flavor and saves a lot of effort, which means it’s more likely to happen come fall. . Yield: 3-4 cups . 6lb (any variety) apples cut into chunks 1 cup apple cider or apple juice 1 cup brown sugar (light or dark) Pinch of kosher or sea salt 1 tablespoon lemon juice 1 tablespoon ground cinnamon ½ teaspoon ground allspice (optional) Pinch of ground cloves (optional) 1 tablespoon vanilla extract . Slow cooker method: . Combine all the ingredients in a slow cooker and stir well to combine. Cook on low for 10 hours, stirring occasionally. Using an immersion blender, puree the mixture and allow to cool. Transfer to an airtight container and store in the fridge for 1-2 weeks or in the freezer for 3 months. . Stovetop method: . Combine all the ingredients a large pot and stir well to combine. Cover partially and bring to a boil over medium heat. Cook until apples are tender. Remove from heat and use an immersion blender to puree mixture. Alternately you can use a blender to puree in batches. Return to the pot to cook and reduce heat to low. Cover and let simmer for 2-3 hours, mixing occasionally to prevent the bottom from burning. . Apple butter is ready when it gets to a thick, jam-like consistency.Transfer to an airtight container and store in the fridge for 1-2 weeks or in the freezer for 3 months. Bacon Wrapped Scallops are a delectable appetizer for any party or special occasion. They have a savory, buttery flavor, with a bit of spice thanks to the hot pepper jelly on top. This bacon wrapped scallops recipe is so easy, and so delicious! INGREDIENTS 1 pound bacon 16 slices 16 large sea scallops Kosher salt 10 ounces hot pepper jelly INSTRUCTIONS Adjust oven rack to upper-middle position and set oven to broil. Line a rimmed baking sheet with foil. Spray the foil with nonstick cooking spray. Remove the side muscle attacked to each scallop and, if necessary, cut the scallops to the same size. Pat the scallops with a paper towel. To ensure the bacon crisps and cooks throughout during broiling, it is necessary to parcook the bacon before wrapping the scallops. The most proficient way is to line a microwave-safe plate with 4 layers of paper towels and spread 8 bacon slices on top. Cover the bacon with 2 more layers of paper towels and microwave on high 1½-2 minutes or until the bacon fat begins to melt but is still pliable. Transfer the first 8 slices to the counter and repeat with the remaining 8 slices of bacon. Place the scallops on a plate and season with kosher salt. Cut one slice of bacon (width and length) to fit around one scallop with just enough overlapping to secure with a toothpick. Place the scallop on the prepared baking sheet and repeat the process until all scallops are wrapped. Top each scallop with 1-teaspoon pepper jelly. Broil the scallops 3-4 minutes, spinning around the baking tray after 2 minutes. The scallops are done when the edges of bacon have browned, the scallops are opaque and bounce back slightly when touched. Transfer scallops to a serving tray and serve immediately. Enjoy!

I love to eat Seasonal and take advantage of produce as it comes in season. My current happiness is caused by the fact that the Italian Prune Plums are now in season. Small and oblong shaped, they have a gorgeous deep purple thin skin and are dense in texture. They are amazing to eat raw or to bake with. But the season is very short so you need to take advantage of it while it’s here : : Italian Prune Plum Rosemary Tart : : : : Crust: ½ cup butter softened 1/3 cup sugar ½ tsp chopped rosemary 1 ¼ cup flour ¼ tsp salt Topping: 1 lb Italian prune plums (18-20) 1/3 cup sugar 1 tbsp cornstarch 1 tsp lemon zest * Preheat oven to 400F In a bowl, combine butter sugar until smooth. Add the flour, rosemary & salt and stir until the mixture looks crumbly. Use your hands to squeeze the mixture into a ball. Place the ball of dough into a 9 1/2” tart pan with a removable bottom. Press the dough into the bottom of the pan and a few inches up along the side of the pan. Freeze for 15 minutes. Mwanwhile, slice each plum into four slices. Stir the sliced plums, 1/3 cup sugar, cornstarch & zest together in a medium bowl. Set aside to allow juices to accumulate Remove shell from freezer & prick it all over with a fork. Cover w/ a piece of foil. Pour pie weights or dry beans on top of the tinfoil to prevent the shell from puffing up while baking. Place in oven and bake for 10 minutes. Remove from oven and carefully remove the tinfoil with the pie weights. Reduce the oven temp to 375 and bake uncovered for 10-15 minutes until the shell looks dry and is very pale gold along the edge. Remove from oven & Reduce the oven temperature to 350. * Stir the plums and sugar mixture to coat the plums in their syrup. Arrange the plum slices in circles overlapping slightly. Scrape all the syrup from the bowl and drizzle over the plums. Freezer organizing! (My own!) Kind of easy when there is only one thing going in the drawer...but it is a big deal for me. As some of you may know, I have some problem eaters at my house- one in particular! 🙄I went through years of trying everything, including PT and feeding clinics, and dealt with screaming, crying, throwing up at the table, refusing to eat for THREE DAYS...I could go on. It all had a huge impact on my mental health and even the health of my marriage. I basically took a break. For years. It’s almostfall & time to enjoy some butternutsquash . . swiperight➡️ to see the creation that became a fall spin on a Mediterranean power bowl. . Fill your sheetpan with butternut squash, baby broccoli, & onion. Drizzle olive oil all over and roast for 20-25 minutes at 400. {NEW} Roasted Butternut Squash Scoops 🍃🍂🍁 { Butternut Squash is Jason's (my fiance) absolute favorite dish! He would eat it every night if I cooked it! This recipe is PERFECT to serve alongside of your best Autumn meal such as roasted chicken or pork tenderloin with a big fall salad. OR, use this recipe to food prep (substitute squash for your typical healthy carb) Most of the carbs in our diet should come from nutrient-rich complex carbs, like those found in butternut squash. OR, use this recipe to prepare the squash for soup! Butternut squash soup is definitely a seasonal MUST-MAKE. Enjoy! ❤Rachel . makes 4 servings Ingredients: 1 medium-large butternut squash 2 Tbsps clarified butter / ghee, melted, OR avocado oil, OR extra virgin olive oil sea salt and fresh ground black pepper, to taste 1/4 cup water a small bunch of fresh thyme, or oregano. . Instructions: Preheat the oven to 375° degrees f. Cut the butternut squash in half, scoop out and discard the seeds. Place both halves in baking dish and season with sea salt and pepper, then brush with butter or oil. Turn the squash flesh side down and pour the 1/4 cup water into the bottom of your dish. Bake for about 40-45 minutes, until the squash becomes fork tender. Once cooked, allow it to cool a bit, then scoop out the flesh with an ice cream scoop nicely as shown. For dessert, I made a light lemon thyme pie topped with raspberries, strawberries and organic coconut flakes. The meringue "clouds" were made from egg whites, vanilla and a touch of maple syrup for some sweetness (hence, the darker colour). There are no refined sugars in the lemon curd or filling either, since I used coconut sugar instead. Although it might be hard to see in the picture, the thyme infused into the pastry crust added something truly magical to the pie!

Skinny Turkey Wraps + Creamy Tahini Sauce 🙋‍♀️👙🤲😍 { I'm feeling like a few lighter meals this time of year (especially) will do us GOOD! These wraps are simple, light, tasty and satisfying. ALL. THE. THINGS. I'm asked a lot about deli meat and cheese. As far as cheese goes: my family has ZERO intolerance to dairy, but we still consider dairy and cheese a condiment...something just for fun and taste on occasion. It's NOT for nutrition or an every day thing. Heres what to look for in a Deli Meat: Nitrate Free. No Antibiotics. No Growth Hormones. Humanely Raised. No artificial ingredients or chemical nitrites. Gluten Free. No GMO Ingredients. Makes 1 wrap Ingredients for EACH wrap: 2 large slices of crisp iceberg lettuce 2 very thin slices of cheddar cheese 6 slices nitrate free deli turkey meat 1 vine tomato, thinly sliced 1 small carrot, peeled then sliced with a peeler 1/4 English cucumber, sliced with a peeler as shown Tahini Sauce ingredients: 1 Tbsp tahini paste a pinch of sea salt and fresh ground black pepper a pinch of garlic powder 1-2 tsp warm water (plus more as needed) Instructions: In a small bowl, add all dressing ingredients and whisk rea to combine. Lay out the iceberg leaves, then layer the remaining ingredients as follows: cheese, tomatoes, cucumbers, turkey, and carrots. Drizzle dressing over then fold the bottom up, the sides in, and roll like a burrito. Slice in half then serve cold. These are great for make ahead lunches - just keep refrigerated in a glass sealed container!
