Get ready to go coconuts for this AIR FRIED coconut shrimp!! 🍤 As soon as I got my new Emeril Lagasse Power Air Fryer, I immediately wanted to make this. I mean, who can say no to crunchy coconut crusted shrimp that isn't greasy from pan frying in oil OR overcooked from baking in the oven. FINALLY A BETTER WAY! (Also, Adam and I devoured this whole batch in under 15 minutes, so it's safe to say I'll be making this a LOT more!) Here's how you make it:
1/4 cup flour
salt and pepper
1 large egg
2/3 cup unsweetened flaked coconut
1/3 cup panko breadcrumbs
12 oz peeled, deveined raw shrimp
Avocado Oil Spray
1. Season flour with salt and pepper in a bowl. Lightly beat the egg in another bowl. And in your third bowl, combine coconut and panko.
2. Grab a shrimp by the tail and lightly dip in flour, followed by egg. Next, press the shrimp into the coconut/panko mixture. (Seriously, don't be afraid to press it! on there!) Repeat until all shrimp are done.
3. Spray the fryer basket and the shrimp with a thin layer of avocado oil spray.
4. Add the shrimp to the fryer basket and air fry at 400 degrees for 7 minutes.
PS. There are 12 ways to use this amazing machine (air fry, rotisserie, dehydrate, bake, broil, toast, roast, make pizza, slow cook, bagel, keep warm, and reheat). I've already used the air fry and dehydrate settings... I'm thinking I should try rotisserie next? What do you think?
