Chaque année, j'attends les mois d'août et septembre pour les retrouver et en profiter un maximum. Blanches ou vertes, pleines de bons vitamines et minéraux et très peu calorique, elles se dégustent autant en plat salé que sucré. A ce propos, avez-vous déjà goûté ma recette de poulet aux figues? Pour 4 personnes : • 4 blancs de poulets • 4 figues fraîches en morceaux • Huile d’olive • Amandes effilées Faites cuire des blancs de poulet 5 min de chaque côté dans une poêle anti-adhésive. Dans le même temps, faites poêler dans un peu d’huile des figues émincées finement et faites dorer des amandes effilées sous le gril du four. Salez, poivrez et servez le poulet avec les figues. Parsemez d’amandes. PS : cela marche bien aussi avec des abricots ou avec des raisins secs. The upshot of my day is that I don't know how to take photos of shiny things. However, look at what came in the mail! ⠀⠀⠀⠀⠀⠀⠀⠀⠀ To do the job right, you need the right tools. Over time, I have been expanding my investment into my knife collection. My 8" Shun Premier Gyuto has been my go-to for a long time now, but it was time to add a few more to the collection. I came across yoshihirocutlery recently and was very impressed by what I saw and read online. I decided to bite the bullet and give a few of their knives a try. I ordered these last night and they showed up by 9am this morning. Wonderful service and turnaround from these guys! ⠀⠀⠀⠀⠀⠀⠀⠀⠀ On the left is their 7" VG-10 Santoku and on the right is their 6.5" VG-10 Nakiri. They were both razor sharp out of the box, made from 46 layers of hammered Damascus steel. Very well balanced and both feel incredible in the hand. One thing I try to highlight is my commitment to local farmers, artisans, and small businesses. I happily take any opportunity to meet passionate, local creators. These partnerships are what keep me motivated. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ I was first introduced to Lynne of lot.15 a few years ago through Instagram. Her handmade ceramics were strikingly beautiful and I was immediately drawn to her style. There is both a rusticity and elegance to her designs that I love. I made a visit to her studio and grabbed a few pieces to add to my cupboard. She is an incredible human and very passionate about what she does. You can sense it just from talking to her. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ After I started taking this project a little bit more seriously, I reached out to her. I wanted to have a variety of plates and bowls to use for my plating and photography, and I wanted to showcase her handmade ceramics. She was incredibly supportive and totally up for it. I purchased a lot of her in-stock items, and she has also made numerous custom pieces for me based on my vague text descriptions and rudimentary sketches and explanations. She is the ultimate collaboration partner who totally "gets" me. Given how busy she is, I'm surprised she still responds to my texts! In one instance, I had given her dimensions for a bowl that I wanted to commission. She made it to my exact spec, but also made another one that she thought might be a better option based on what she knows about how I plate. She was right! ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Every piece I have from her is handmade and gorgeous. Scroll through to see just some of the many pieces I have in my collection. Beefy Barley Soup (FreezerMeal) 1 lb ground beef, browned 1/2 onion chopped 2 cloves garlic, minced 2 carrots chopped 1 cup pearl barley 2 cups beef stock(or vegetable) 1 can diced tomatoes 1/2 tsp salt 1 tsp oregano • Brown beef, onion and garlic together in a pan until beef is cooked. • let beef mixture cool and place all ingredients into a large freezer bag. Chicken and vegetable ramen Prep: 10 mins Cooking time: 10 mins Serves: 3 Ingredients: - 2 packs of ramen noodles (any brand, discard the spice from pack) - 5 button mushrooms, sliced - 1 carrots, julienne - 1 small brown onion, thinly sliced - 3 cloves garlic, minced - 1 bunch bok choy, 4 parts - 150 grams chicken thigh fillet, diced - 1 tablespoon cooking oil - sesame seeds, for topping - 315 ml water For sauce: - 2 tablespoons dark soy sauce - 2 tablespoons oyster sauce - 4 teaspoons Hoisin sauce - 2 tablespoons Chinese cooking wine Method: 1. In a large deep pan or wok, cook onions until fragrance. Then put garlic and continue cooking for one minute. 2. Add chicken and cook until chicken is cooked. 3. Add all vegetables and stir. Transfer the sauce mix and stir again. Make a hole in the middle and put water in. 4. Transfer noodles and cook for approximately 45 seconds. Using two spatulas, flip the noodles and ensure it's cooked. 5. Stir well to combine and simmer in low heat until sauce is thicken. Serve with sesame seeds topping. You can't put a rice on good homemade dessert. 🍯🍯🍯🍯🍯 It's almost autumn so I'm getting ready and getting my arroz con leche chops back up to scratch. This is my favourite of all Spanish desserts, and this weekend I decided to try something new: a brown rice arroz con leche! The nuttiness of the rice went crazy well with the cinnamon and nutmeg, and the creaminess of the extra starch let me cut down on the dairy. All in all, a total success! Sambal (Indonesian style chili paste) Prep: 10 mins Cooking time: 50 mins Serves: 10 Ingredients: - 800 grams red chilies, cut into 4 big chunks - 200 grams Thai chilies (or birds eye chilies) - 1 large red tomato, cubed - 1 large brown onion, cubed - 5 cloves garlic, halved - 4 tablespoons chicken stock powder - 1 teaspoon ground coriander - 1 teaspoon ground pepper - salt to taste - 100 ml vegetable oil Method: 1. Using a deep pan, preheat the cooking oil in medium-low heat. 2. Transfer all ingredients into the pan and stir every 3 minutes. Cook all ingredients until soft. Add more oil if needed. 3. Once all ingredients soften, transfer the sambal mix into a heatproof container, preferably a big deep bowl. 4. With a hand blender, blend all ingredients until get the consistency like paste (it's okay to be oily). 5. Transfer the paste into the same pan and continue cooking in medium-low heat until the color turns into darker red. Add more oil if needed. 6. Taste the sambal and add more salt if needed. 7. Put it into a container and let it cool off. You can freeze it up to 3 months. For ease of use everyday, divide sambal into two containers. One in freezer and one in fridge. It can be kept in fridge for up to two weeks. 8. Beef and vegetable stew Prep: 15 mins Cooking time: 1 hr 45 mins Serves: 4 Ingredients: - 1 kg chuck casserole meat, cubed - 1 tablespoon olive oil - 1 large onion, sliced - 4 garlic cloves, minced - 3 large carrots, peeled and cut into big chunks - 3 celery stalks, cut into big chunks - 150 grams button mushrooms, halved - 3 cups beef stock - 2 cups water and add 2 teaspoons brown sugar - 2 teaspoons Worcestershire sauce - 2 bay leaves - 1-2 teaspoons dried thyme - 2 tablespoons tomato paste - 1/3 cup plain flour - salt and pepper to taste - mashed potatoes, to serve Method: 1. Brown beef and set aside. Best to do it in batches. I did mine in 2 batches. 2. Heat oil in low medium heat in a cast iron ovens pot. Cook onions for 4 minutes or until soften, then add garlic, continue cooking for 1 minute. 3. Add all vegetables and stir in flour until well combined. 4. Add beef stock, brown sugar water, tomato paste, Worcestershire sauce, bay leaves and thyme. Bring to boil and simmer covered in low heat for 1 hour 45 minutes or until the meat is tender. Stir every 20 minutes. 5. Serve stew with mashed potatoes. Another Classic Recipe. I made this pasta 🍝dinner in 6 minutes in my Instant Pot. Creamy Parma Rosa Ravioli. Here is what you need to make it:⁣⁣⁣ ⁣⁣⁣ • 1 25 oz package of frozen ravioli, I used the cheese one from aldiusa ⁣⁣⁣ • 1 14.5 Ounce Can of Diced Tomatoes⁣⁣⁣ • 3T of Butter⁣⁣⁣ • 14.5 Ounces of Milk ⁣⁣⁣ • 1 Envelope of knorr Parma Rosa Sauce Mix. Found in the grocery 🛒aisle with the powdered gravy. See my stories for a picture of this. ⁣⁣⁣ • Dried Parsley & Good Quality Parmesan for garnish.⁣⁣⁣ ⁣⁣⁣ ✔️Add all the ingredients to the Instant Pot except for the Parmesan and Parsley. ⁣⁣⁣ ⁣⁣⁣ ✔️Make sure the ravioli are covered in the tomato, tomato juices and milk. Cover, use the manual setting, set to high, and set the timer to 6 minutes. ⁣⁣⁣ ⁣⁣⁣ ✔️When the timer goes off, do a quick release. ⁣⁣⁣ ⁣⁣⁣ ✔️When it’s done, let it sit for ten minutes for the sauce to thicken. This dish doesn’t yield a super thick sauce, it is normal for it to be more like a broth. Top with the Fresh Parmesan and Parsley. I'll be first to admit that decadence is one of my favourite words. Scroll back and take a look at the Butter Soup dish that I made to see for yourself. However, there is also something to be said about lighter fare, even though butter is delicious. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ "Poached Chicken. Miso Garlic Emulsion. Carrot Parsnip Purée. Poppy Seed Cracker." ⠀⠀⠀⠀⠀⠀⠀⠀⠀ This is a take on classic chicken pot pie. Traditionally a hearty and comforting dish, to lighten it up, I made some conscious substitutions so that no butter or dairy could be found anywhere on the plate. I won't go as far as to make any claims on whether the dish is actually "healthy", but it is definitely "lighter". ⠀⠀⠀⠀⠀⠀⠀⠀⠀ The chicken breast was seasoned with lemon and herbs, wrapped in plastic, and gently poached in simmering water. The "gravy" is made from poached garlic and white miso, with silken tofu and soy milk used in place of a butter and flour roux and cream or milk. The carrot parsnip purée is also made with silken tofu and soy milk to achieve the velvety-smooth consistency. Rather than a butter-laden pie crust, I made a thin cracker from semolina, a little bit of olive oil, poppy seeds, and fleur de sel. The dish is finished with a simple salad of celery, celery leaves, and parsley dressed in lemon juice, for texture and temperature contrast. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Comfort food, reimagined. Remodeled? Reconstructed? Deconstructed? I'm not sure which word is best. Pick the word that works best for you! For me, the key to making lighter choices is to ensure that you don't sacrifice flavour. Using lots of herbs, lemon juice, garlic, and miso help cut down on some richness and fat while still ensuring the result is still flavourful and comforting. TMS style Kadhai paneer Ingredients Whole spices (clove 2 cinnamon 2" stick ,black cardamon 2 green cardamon 2 , black peppercorns 4-5 ,Bay leaves 1 ) 1 tsp Cumin 2 Whole red chillies 1 bay leaf 1 big onion chopped in cubes 1" Fresh Ginger grated 1 green chilli slit from center 4-5 cloves garlic finely chopped 1 green bell pepper chopped in cubes 1 tomato chopped in cubes 100 grms paneer chopped in cubes Salt Red chilli powder Coriander powder Turmeric 1 tsp TMS Garam Masala (the secret ingredient😉) 1 tbsp curd 2 tsp kasuri methi Fresh coriander to garnish Method : 1)In a deep pan put oil . 2)Add all the whole spices saute till it changes colour then take them out from the pan with a strainer or a spoon 3)Add cumin,whole red chillies and bay leaf 4)Now add onions saute for 1 min then add Ginger ,garlic and green chillies. 5)Add green bell pepper and cover for sometime . 6)When the bell peppers are almost cooked add tomatoes , salt , red chilli powder , coriander powder , turmeric and TMS Garam Masala . Saute till the tomatoes are cooked . 7)To this add curd and 1/4th cup of water . 8)Cursh some kausri methi and cook for another 1min 9)At last add paneer and mix in well gently.
