I had a lot of fun creating this. White chocolate shell filled with a dark chocolate mousse and a chunky cherry jelly, sitting on a bed of ground ginger nut biscuit, topped off with a purple pansy and rosemary flowers. It also has cherry juice in the indentation on the top. I am so chuffed with how this turned out! It is utterly delicious, the flavours compliment each other well. I made up this recipe the other night using brown rice pasta, and the base alfredo sauce was with nutritional yeast! First time I've used it in that type of a dish and it was delicious! I did use ghee for the fat, with cassava flour to make the roux. In case you didn't know it, I love to cook! That is why I say I make healthy easy! A little hot chocolate with a side of goal setting. Hot chocolate 1/2 tsp maca Powder 1/4 tsp turmeric 1/2 tsp cinnamon 1 tsp coconut sugar 1 tablespoon cocoa powder 1 cup milk Put all ingredients in a pot and put over a low heat on the stove. Ive been making my own granola for a few years now. Its so easy to whip up on a weekend to take you through the week. I generally intersperse this with my cooked oats during the week. Is a very forgiving recipe that allows you to use what nuts and seeds you have along with the binder of rice malt syrup and coconut oil. (Or you could use honey/maple syrup) . . I use: 1 cup buckini 1 cup rolled oats 1/2 cup pumpkin seeds 1/2 cup sunflower seeds 1T hemp seeds 2T chia seeds Cinnamon to taste Then 1/2 cup melted coconut oil and 2T rice malt syrup Mix it up and add nuts or different seeds as long as the ratios are similar. I created this gluten and dairy free Zucchini Cannelloni recipe last year when I was studying to become a Culinary Nutrition Expert at the Academy of culinarynutrition. Unlike a lot of my recipes it is fairly involved and has a number of steps including making your own cashew ricotta and tomato sauce but it is definitely worth it! I had some loose Italian sausage in the fridge that I didn’t get to this week, so I sautéed it with a chopped red pepper, shallot, and fennel bulb. After softened, I added a dash of Pernod, oregano, chicken and clam broths, and let simmer. After tasting, I added a little tomato sauce (from last night), but paste would work. Meanwhile, I heated my washed clams in a covered pot until they opened and released all their juices for about 5 minutes (you could cook in the sauce, but I hate sandy food!). I added the clams to the sausage mix and strained the juice in and simmered to combine flavors. I’m writing all this because my husband said, “It’s perfect! So it might not look too appetising, but jwg_stokes assured me that thiswas one of the best dimmers I've made in a while, so I'm happy 👍 So quick, so simple and so rewarding for a Friday night on the sofa 📺 This literally took 20 minutes, courtesy of the creativity explained below: 1. Lightly sauté 150g mushrooms with 5 garlic cloves in a little cooking spray. 🍄 2. Mix in a tin of drained black beans. 3. Reduce the heat to low and add to the pan a whole tub of nushfoods almond cream cheese 🧀 (aka the bees knees 🐝) 4. Let the cheese melt and turn to a dreamy creamy sauce - DO NOT BOIL. 5. To help the sauce go a little further, add approx 80mls unsweetened non-dairy milk (I used soya). 🍶 6. Whilst the sauce heats, boil some broccoli in some stock in a second pan. The total cooking time for this broccoli will be 5 mins, so after 2 minutes, add in your gnocchi (which when fresh takes 3 mins to cook). 🌳 7. Once the gnocchi has simmered for 3 minutes and has risen to the top of the pan, drain it and the broccoli. 8. Add the gnocchi and broccoli to the dreamy creamy sauce 🧀 9. Mix it all together and season with Oregano, some nooch for added cheesiness, plus some extra vegetable bouillon and plenty of salt and pepper 🥄 10. Plate up this yummyness without drooling all over the plates first 🤤 12. Sick Mans Soup 🍜 We have a sicky in the house so I decided to make what I’ve coined as “sick mans soup” with all of the ingredients that my grandma told me would make you better; garlic, ginger, turmeric and spice! 👵🏽. . Ingredients: ▪️6-8 garlic cloves, crushed and sliced ▪️Fresh ginger, size of your thumb, chopped ▪️Fresh turmeric root, the size of you pinky, sliced ▪️2 fresh lemongrass stalks ▪️2 kaffir lime leaves ▪️1 hot chili of your choosing, chopped with seeds ▪️2 Tbsp fish sauce ▪️1 tsp rice vinegar ▪️1 Tbsp soy sauce ▪️1 tsp cumin ▪️1 tsp coriander ▪️1 box chicken stock ▪️1 can of coconut milk ▪️Whatever vegetables you have in your fridge! I used mushrooms, red cabbage, onion, celery, and shrimp Directions: ▪️Add a little bit of oil, garlic, ginger, turmeric root, and chili into a deep pan (that can hold 4-6 cups of soup). ▪️Add hardy vegetables first - like celery, cabbage, onions, carrots etc. cook on high for 5 minutes ▪️Add softer vegetables like mushrooms next ▪️Add cumin and coriander ▪️Pour in chicken stock, coconut milk, fish sauce, rice vinegar, and soy sauce. ▪️Add lemongrass and kaffir lime leaves, then add shrimp and bring to boil ▪️Once at a boil, simmer. ▪️Serve alone or with ramen noodles

Zucchini, coconut & cacao loaf🌱🍫🥥⠀ I’ve been snacking on this the last few days and its had people saying omg that smells so good, what is that? So here is the recipe for those asking. A yummy healthy snack that’s also gluten, dairy and refined sugar free.⠀ ⠀ • 1 1/2 zucchinis, grated and moisture squeezed out⠀ • 1/3 cup coconut oil, melted⠀ • 1/3 cup honey⠀ • 2 eggs⠀ • 1 cup almond meal⠀ • 1/2 - 2/3 cup buckwheat flour⠀ • 1/2 cup desiccated coconut⠀ • 1/2 cup cacao powder⠀ • 1 tsp baking powder⠀ • 1 tsp cinnamon⠀ • Pinch salt ⠀ ⠀ 1. Grate the zucchinis and squeeze out excess moisture then place in a food processor or high powered blender.⠀ 2. Add melted coconut oil, honey and eggs to the blended and blitz until liquidy and fairly smooth.⠀ 3. Combine all dry ingredients in a bowl then add wet mixture. Mix together until well combined.⠀ 4. Pour batter into a small-medium loaf tin lined with baking paper and bake for around 40-45 minutes on 150 degrees, or until a skewer in the centre comes out clean.⠀ 5. Allow to cool then slice, toast and serve with nut butter & cinnamon.

Today I had some leftover aquafaba and I thought I'd really love to make macarons. Since I made a delicious pavlova last week I thought it can't be too hard, surely. I did some research and man it seemed complicated (like you had to hold your head just the right way, hold every second breath and wait for Jupiter to be aligned with the Sun... way too many instructions and complicated rules) So of course I threw caution to the wind and just did it in true Carley form, wing it and hope for the best. 🤞🤞🤞 They came out great. My love for tea is a well known fact 😆 ☕️ 🙌 But masala tea/chai is a once in a while luxury. If you’re keen on trying out this Indian/Pakistani style ‘Adrak Wali Chai’ then have a look at the second picture in the slides. All I did was added these ingredients to the boiled water with a few Joko teabags in a tea pot and allowed the tea to come to a slow boil until the whole spices were well infused. Add condensed milk and strain into cups. Enjoy with your favorite dipper... perhaps some chai biscuits..... The recipe for the chai biscuits on the third picture can be found further down on my feed. Honestly just WOW this past week has been a huge milestone for both Matt and I with the official launch of The HealthNut Cookbook. 🥑🙌🏼 Being able to celebrate our “Book Wedding” with so many truly amazing people was the most magical and loving experience and the turn out/support was beyond my expectations. 🥰⁠⠀ .⁠⠀ There were many tears (happy ones), good food, drinks, music, book selfies and all the bear hugs. ☺️ I was blown away by the support of not just our online community of amazing HealthNuts throughout this process but our family, friends, fellow content creators, staff and book team.
