My Chewy Mounds Coconut candy, the easiest #ketocandy I've ever made. It's #5ingredientsorless and so tasty, my husband keeps aking for these! Recipe below, and also up in my highlight reel. 30g unsweetened shredded coconut 1T crunchy nut butter (I used peanut) 1 generous TBSP of @choczero maple syrup Chocolate for dipping/drizzling/dolloping on top. I used @cocopolosuperfood Almonds, optional Flake sea salt, optional Place coconut, syrup and nut butter in a small bowl. Microwave for 15 seconds. Mix really well and roll into small bonbons or push into silicone mold. Dip in, drizzle or dollop melted chocolate on top. You can also add an almond to marke this an #almondjoy candy. Turkey Loaf with Lots of Veggies and Gluten Free One for Now and One for Later Swipe for the recipes you’ll need for this Loaf I usually bake one monster 2 lb. Turkey Loaf. This time, I split the recipe and made 2 loaves. One for now and one for later. We’ll have to see how “later” the second loaf is used. I may or may not freeze it. A couple of slices for dinner with a side Chopped tonight, Turkey Loaf Quesadillas for lunch and a Full Meal in a Bowl using Chopped Turkey Loaf, plus snacks right out of the fridge may just use both. Taking inspiration from different cuisines is my “go to” for meat loaf. I’ve gone Italian, Mexican, and Southwest. In a bowl combine chia seeds and almond milk. Whisk together with a fork, then wait a couple minutes and whisk again (this will stop the chia seeds from clumping). Add maple syrup and whisk again to combine. 2. Cover and transfer to fridge. Allow chia seeds to absorb liquid mixture for at least 10 minutes, or until thick pudding consistency. (I like to keep mine covered in the fridge overnight). Good coffee and breakfast hunting _ I’ve posted every day since Friday 🙊 after being so quiet but I am loving sharing with you all again after my little mental break. _ I have roughly 3 months left of my course until I will be a qualified nutrition coach 🥳 along with this I’ve been chatting to a girlfriend about getting back into PT and doing in person training and nutrition coaching as well as taking clients online, and somewhere in there I would actually love to do an Ebook. I have so many recipes I haven’t even shared yet. I have a text book full of scribbles and so many recipes and failed recipes. I would love to type these all up and get some great pictures 🙌🏽 and then be able to share everything with you all so you have it. Lots of kids recipes too. And things done on a budget. As the sun rose today on my 9th and final morning in Nantucket, I confronted lots of emotion... . I felt frustrated. Between getting over an infection and work, I was far less present during my vacation than I wanted to be. Even though I stayed more days than last year, the trip felt shorter. I realized I wasn’t fully present with my family or in the day to day. I allowed my consciousness to be captured by thoughts of the future and anxieties of the present. Time is precious and I feel bad that I let it slip through my fingers. . I felt a bit blue. There’s always that feeling when your long awaited vacation is over. A year I wait to return to this oasis and in the blink of an eye it’s gone. Summer itself is also fleeting, which is something that’s always been difficult for me and I feel into hard. . I felt worn down. I wish I’d invested my time more wisely this trip - really made space to resuscitate from the grind. . With that said, anxiety about going home only mounts by sulking in the feelings. So I’m choosing to let them go and move forward. I have so many people that I love and miss dearly waiting for me at home. Yesterday my husband and I celebrated one month of being married. I wanted to do something a little extra and decided because Bobby looooves strawberry shortcake so much, to make him that special treat. I took the traditional recipe and made it a bit healthier without sacrificing any texture or taste factors. Add this to your summer treat list!! #healthyrecipe 12 egg whites 1 1/2 tsp cream of tartar 1 tbsp water 1 tsp almond extract (or vanilla) 1 cup stevia (or granulated monk fruit) 1/2 tsp salt 1 cup cake flour 1. Prep your pan well for nonstick. I used unrefined coconut oil. 2. In mixing bowl add egg whites, and mix on high until soft peaks begin to form. Then add cream of tartar, water, and almond extract. 3. White whites are mixing, sift together flour, salt, and stevia. 4. Gently add dry ingredients to egg whites and mix til fully incorporated. (I did mine half at a time). Me not that much actually, but I love savory flavors; especially fresh zingy Asian ones. . Of course there are a shit load of salads you can make with seasonal fruit and veggies. But in summer -especially when active- I feel like I can have some fish now and then. These burgers I made with canned wild salmon, maybe it’s a guilty pleasure, but I craved that over a piece of fresh salmon. It’s not that cheap but you’ll use less so in the end it’s cheaper then getting just a big piece of fish. Which is tasty as well but, ok I felt like this and mayo.🤷🏻‍♀️😅 Good thing is that you can make these in advance and it’s super easy to put this on the table in no time. Also only one pan needed; because you don’t wanna heat up your house even more ..and def not use the oven! . With summer you automatically crave freshness rather then heavy dishes, so listen to those craves! Most summer fruit and veg are designed to cool you down and hydrate. ⚡️👌 . Citrus is the best way to ad that zingy sour flavor to your meal, it doesn’t acidify* your condition (*I don’t know if that’s good translated, please let me know if it’s not the word). It is actually a fleeting acid you can breath out true your lungs, while vinegar can’t and can make you acidified. . Bitter flavors are also cleansing. Today's lunch - Nutritious & delicious moong dal khichdi prepared with some carrots, peas, soya, capsicum, tomatoes and sweet corn. Served with some curd at the side. The lentil-cereal combination provides good quality protein which is easily absorbed and assilimilated in the system. The vegetables ensure fibre to keep you satiated. ⁣ ⁣ RECIPE ⁣ 3/4 cup of moong dal⁣ 1 1/2 cup of rice ⁣ 2 tbsp oil⁣ 1 1/2 tsp jeera⁣ 1 tbsp ginger - garlic paste ⁣ 1 capsicum (chopped finely)⁣ 1 carrot (cubed)⁣ 1/2 cup sweet corn⁣ 1/2 cup green peas⁣ 2 medium sized tomatoes⁣ 1/4 cup of mini soya chunks⁣ (can also be substituted with chicken or meat) 1 tsp turmeric powder ⁣ 1 1/2 tsp red chilli powder⁣ Salt to taste⁣ Chopped coriander leaves for garnish ⁣ ⁣ METHOD ⁣ ⭐Wash and soak the moong dal and rice together in colander for a minimum of 1/2 hour. ⁣ ⁣ ⭐In a pressure cooker, add the oil and jeera. Once it splutters, add the ginger garlic paste and sautè until the raw smell goes away. ⁣ ⁣ ⭐Then add tomatoes and cook for until soft. ⁣ ⁣ ⭐Add the turmeric and chilli powder and cook for about 2 minutes on medium flame. ⁣ ⁣ ⭐Now add all the vegetables, soya chunks and mix. CHICKEN WITH PARMESAN CAULIFLOWER RICE💪🏼😍 ~ The chicken 2 large boneless and skinless chicken breasts halved horizontally to make 4 1/2 cup fresh Parmesan, finely grated Salt and fresh cracked pepper 2 large cloves garlic, grated 1 teaspoon paprika 1 teaspoon Italian seasoning 4 tablespoons unsalted butter divided For the cauliflower rice 3 cups riced cauliflower (about 1 medium head) 1/2 cup white onion, chopped 2 large cloves garlic minced 2 tablespoons vegetable stock Juice of one lemon (+ zest, if you like) Red chili pepper flakes, optional 1/4 cup fresh parsley chopped In a shallow plate, combine parmesan cheese, grated garlic, paprika, and Italian seasoning. Season the chicken with salt and pepper; dredge in the parmesan mixture; shake off excess and set aside. 2. In a large skillet melt 2 tablespoons of butter over medium-high heat. Cook chicken until golden on each side and cooked through – about 3-4 minutes for each side, depending on the thickness of your chicken. Transfer to a plate. The cauliflower rice 1. In the same pan, melt 2 tablespoons of butter. Fry the garlic and onion for 1 minute until fragrant — be careful not to burn. 2. Add the riced cauliflower to the skillet and stir to mix everything together well and coat in melted butter. Cook, stirring regularly for 1 minute. 3. Stir in the 2 tablespoons vegetable stock, about half the parsley, and lemon zest (if using). Cook for one minute to reduce juices then add the lemon juice and a few sprinkles of leftover parmesan cheese, if you like. 4. Adjust seasoning as needed. Stir in the remaining parsley. Return chicken over cauliflower rice and reheat quickly. Serve with fresh cracked black pepper, red chili pepper flakes, and more parmesan. Enjoy! The day before, make the vegan chocolate mousse:⠀ - Melt 200-250g vegan butter and 250g vegan (orange) dark chocolate, preferably using a bain-marie or alternatively in a saucepan on low heat. ⠀ - Whip up the aquafaba of one 400g-chickpea can to a light mousse while gradually adding in 60g caster sugar (NB: you may use less sugar should your chocolate be sweet enough already) ⠀ - Using a spatula, progressively add the whipped-up aquafaba to the slightly cooled melted chocolate.⠀ - Place in the fridge overnight. ⠀ ⠀ 2. On the day, make the speculoos biscuit & coconut pie crust: ⠀ - Using a blender, pulse 180g (or more depending on your cake tin’s diameter) speculoos biscuits until grounded. ⠀ - Add in 3-4 tbsp melted coconut oil, 2 tsp raw cocoa powder and the juice of half an orange (keep the other half to decorate)⠀ - Mix well until you get a rather thick paste. Salted Caramel Protein Balls!! SAVE THE POST FOR THE RECIPE 😋 These balls are a great pick me up snack and contain Carbs, Fats AND Protein. And only use natural ingredients. Make about 12 balls. Ingredients: 150g Medjool Dates (~10) 1Tbs Tahini 1 tsp Chia Seeds (optional) 2Tbs Protein Powder (I use unflavoured pea protein) 1/2 tsp Sea Salt Method: 1. Blend all ingredients together in a blender or food processor untill combined. 2. Roll mixture into balls using the palm of you hand. You can make them as big as you like. OPTIONAL: Roll the balls into coconut, cacao powder, oats, chia seeds, sesame seeds, crushed nuts etc. 3. Place in fridge to firm up. Keep in fridge or freezer. In honor of #CookieFriday (thank you @hungry.blonde for this contribution to society) I made @rachaelsgoodeats recipe for HEALTHY NUTTER BUTTERS🥜 They're #vegan and #glutenfree so you'll feel literally no guilt eating all of them. At least I won't. The only things I changed about the recipe were that I added a teensy tiny bit of pink salt to the dough and filling because my peanut butter is unsalted and I also added a little melted coconut oil to the filling then popped it in the fridge because my pb isn't as thick as I'd like it to be. These were SO easy and quick so I'll definitely be whipping these up for anybody who comes over because the ingredients are always staples here and I think it'll impress people. - Anyway Austin's band has a show tonight and these cookies are my pre-game so I'm having a pretty perfect Friday so far. Doing it Scared! I'm such a cheese ball. But I'm so into this fear crushing that I need to project it. This year has been such a whirlwind of action, creativity, finding my passion and presenting it to the world. I used to be a very fearful person. Living inside the ”what if’s” and the ”whats going to happen?” is soul-crushing. You’ll never get the answers by sitting in that space. Do it scared, but DO SOMETHING! My goal is to CRUSH my fears and Do It Scared. Look out people. I'm doing it every day and with that becoming the person I always knew was in there, somewhere. Fear is death.
