Tbt to this east mid week supper inspo. Roasted sweet potatoes, coriander pesto and roasted crunchy chickpeas. We roasted up some sweet potatoes until they were soft. Drizzled some chick peas with olive oil and a tsp of cumin and baked them for about 40 mins on 180°c until they were crunchy. Chaque année, j'attends les mois d'août et septembre pour les retrouver et en profiter un maximum. Blanches ou vertes, pleines de bons vitamines et minéraux et très peu calorique, elles se dégustent autant en plat salé que sucré. A ce propos, avez-vous déjà goûté ma recette de poulet aux figues? Pour 4 personnes : • 4 blancs de poulets • 4 figues fraîches en morceaux • Huile d’olive • Amandes effilées Faites cuire des blancs de poulet 5 min de chaque côté dans une poêle anti-adhésive. Dans le même temps, faites poêler dans un peu d’huile des figues émincées finement et faites dorer des amandes effilées sous le gril du four. Salez, poivrez et servez le poulet avec les figues. Parsemez d’amandes. PS : cela marche bien aussi avec des abricots ou avec des raisins secs. Chorizo, Chickpea and Rocket Salad. This is a cracking lunch that is bursting with flavour and has a little but if kick to it and obviously can adjust to taste depending on how spicy you like it 🌶 How to: 1. Sauté some red onion or shallots in a pan with some oil, chorizo cut into chunks, garlic, chopped celery and garlic. 2. Add 1 tsp of paprika and 2 tsps of Harrisa paste and 1 can of drained chickpeas and stir through. Once heated add 1 tbsp of tahini paste and the juice of 1/2 a lemon and salt and pepper to taste. You can adjust the spiciness should you wish. Stir through and remove from the heat. 3. Toss through rocket leaves and serve. If you like more kick some chopped red chilli is lovely! This is lovely served warm or packed up cold in a lunchbox. If serving cold allow the mixture to cool before adding the rocket. Tonight’s Dinner 🍽, healthier option Red Lentil soup serves 3-4 Very easy and delicious 😋 - 3-4 tbsp extra-virgin olive oil - 2 shallots, diced - 2 garlic cloves, roughly chopped - 4-5 cherry Tomatoes 🍅 (if no tomatoes, substitute with 1 tbsp tomato purée), diced - 1 large carrot 🥕, diced - 1 large potato or 2-3 small, diced - 1 red pointed sweet pepper, diced - 1/2 cup red lentils - 4 tsp ground paprika (divided) - 1 tsp butter - 1 tsp parsley - 1 tsp cumin powder - 1l vegetable broth (I used knorr) - pinch of chilli flakes to taste - salt and pepper to taste - 1 lemon 🍋, divided In a medium-sized pot with medium-high heat add olive oil and shallots and heat until translucent. Add garlic, potatoes, carrot, pepper, lentils, paprika, parsley, cumin powder, chilli flakes and cook for approx. 5-7 mins. Add broth, and salt and pepper to taste and a squeeze of half the lemon and let it simmer for approx.. 20mins or until lentils and the vegetables are cooked through. When cooked through, add the soup to a blender to blend it to a constituency you desire. (Paprika oil) In another small pot while the soup is simmering, melt butter and add the rest of the paprika. Cook for 1 minute until you see the paprika starting to bubble. Simple Barley Broth 🍵🥣 I wasn’t feeling the greatest last week, and years ago my answer would’ve been to eat a big bowl of chicken soup. Now that I don’t eat meat it’s been a hard thing to substitute, however this recipe for a Simple Barley Broth is definitely a strong competitor! 👊🏼 I’ve written the recipe below and it’s up on the blog too: ✨ 1 tbsp rapeseed oil 2 large carrots 1 large leek, sliced 2 large cloves of garlic 4 cups vegetable stock 1/2 cup pearl barley ✨ 1️⃣ Slice your carrots in half lengthways, then in to semi-circles. Salads..... can be from limp and boring to interesting and vibrant and also a meal in their own right. Here is an example of a chopped salad with a big range of ingredients, so with every bite you get something different as the flavours burst in your mouth. Don’t forget to add lots of fresh herbs and I love a squeeze of lemon over the top and some really good peppery extra virgin olive oil, but all sorts of dressings work well here. Saw this Vegan cheese sauce today in Waitrose and thought I would give it a go! I just love this dish and it’s my favourite way to cook quinoa! It comes out perfect every time... very quick to prepare and 20 minutes in the oven and you have a lovely meal! Our Saturday Lunch 🍴 - Linguine alle vongole- Linguine with clams Recipe: Ingredients: -500g fresh clams in shells washed and drained several times to remove any dirt -3 tbsp extra-virgin olive oil -2-3 tomatoes 🍅 chopped, depending on size -1-2 shallots chopped -2 garlic cloves minced -100ml dry white wine -spoonful butter -pinch of red pepper flakes -200g linguine -fresh parsley and basil finely chopped -50g parmesan cheese -50ml double cream (light cream for lower calories) -salt and pepper Wash the clams thoroughly to remove any sand and throw away any broken shells. Boil a pot of water and add salt (not too much as the clams have some salt in them) and linguine and cook the pasta al dente. In a seperate deep pan, add olive oil and a spoonful of butter(the butter can be omitted but it gives a nicer taste), fry the shallots for 2 mins then add garlic, fry for a further 1 minute. Add the tomatoes, white wine, chilli pepper flakes and cook for 5 minutes. Add double cream, parsley and basil, washed clams, a glass of the pasta water, parmesan cheese, salt and pepper to taste. When the pasta is cooked, drain and add to the pan to mix through with the sauce.
