Nut milk is the Easiest to make and the result is always so rewarding! You just need 1 cup of Nuts, 3 to 4 cups of Water and you are good to Go!! Soak your Nuts a few hours before making your Milk. Rinse, add to a High speed blender with the Water and Blend around 2 to 4 minutes. Once blended, strain using a Nut milk bag or a Cheesecloth. Keep squeezing the Bag until all the milk is out. You can then add a Sweetener like Maple syrup. Start with 1 tsp and add If needed. I like to add a little lemon juice as well to preserve the milk, around 1/2 tsp not more. Store in a glass Bottle 4 to 5 days in your Fridge. As for the Pulp, Dehydrate it and use it as flour in your baked goods. NOTE: I made my milk using a mix of Hazelnuts and Brazil nuts and added a little Maple syrup. Rien ne se perd tout se transforme ! J’adore cette expression qui est tellement actuelle dans ma Cuisine de Vie, car ça m’arrive à moi aussi d’oublier des aliments mais par contre avant qu’ils ne se perdent il y a toujours un moyen, une recette pour faire quelque chose avec et réaliser une petit truc délicieux. C’est ce qui s’est passé avec ces quelques fruits et j’hésitais entre un Crumble multi fruits et une Compote, bingo pour la compote aux fruits oubliés. Voici la recette de ce début de semaine, toute simple, très courte et zéro gaspillage, pleine de de bons nutriments et vitamines dont nous avons bien besoin avec le changement de saison. Veggie Shepherd’s Pie I’ve made vegetarian shepherd’s pie using lentils and Quorn in the past. This recipe was inspired by the veggie Shep Pie I had at The Ivy recently. Radical for me as I never normally order the veggie option when eating out but believe it or not (despite yesterday’s slow cooked pork with amazing crackling!) I am trying to eat less meat. For this pie the base was made with veggies, chickpeas, quinoa and Moroccan spices. It also had an oyster mushroom in the middle which I didn’t think added anything. Obviously The Ivy don’t share their recipes so I had a play at home at recreating it. The resident veggie and meat eaters agreed it was really, really tasty. And very very healthy. Definitely on the veggie favourite list. INGREDIENTS for 4:- 2 tbsp oil 1 onion finely chopped 3 garlic cloves crushed 1 celery stick finely chopped 2 small carrots finely chopped 1 aubergine finely chopped 1 tbsp Ras El Hanout 400g chopped tomatoes 200ml vegetable stock 1 can (400g) chickpeas drained 60g quinoa Mashed potato to top - if Vegan mash with olive oil and/or coconut oil METHOD Heat the oil in a pan and add the onion, celery, garlic, carrot and aubergine together with 1/2 tsp salt and lots of black pepper (about 10 grinds). Soften all the veggies for 10-15 minutes before adding the Raw El Hanout, Quinoa, Chickpeas, Chopped Tomatoes & stock. Bring to the boil and simmer for 20 minutes. Spoon into an ovenproof dish and top with mashed potato. Either spoon it on or pipe. I make my mash using a ricer so it’s smooth. I add butter and milk to the potatoes together with seasoning but if you want to keep the dish vegan mash the potato with olive oil and/or coconut oil. Cheesy Keju Sus Fruity Bahan: Kulit Sus: 125 g margarin 150 g tepung terigu 220 ml air 4 butir telur ayam Garam dan gula sejumput Bahan Isi Sus: 60 gr tepung maizena 100 g gula pasir 2 kuning telur 350 ml susu cair UHT cokelat 300 ml susu cair UHT plain 1/2 sdt bubuk vanili 100 g apel malang/apel granny smith, potong kotak kecil 10 buah stroberi, potong kecil 50 g CHEESY Spread Cheese & Chocolate Cara Membuat: 1.Kulit kue sus: masak air dan margarin hingga mendidih. Lalu masukkan tepung terigu, garam dan gula lalu aduk hingga kalis, angkat. Lalu diamkan hingga hangat. Masukkan telur satu persatu sambil terus diaduk hingga menyatu dengan adonan. 2.Masukkan adonan ke dalam plastik pipping lalu cetak adonan pada loyang yang sudah dioles dengan margarin, dan panggang di dalam oven dengan suhu 200 celsius selama 20 menit. Angkat, sisihkan. 3.Adonan Isi: masak susu UHT plain dan UHT cokelat bersama gula dan maizena hingga mendidih. Setelah mendidih, tambahkan kuning telur dan vanili kemudian aduk kembali hingga adonan meletup-letup. Masukkan CHEESY Spread Cheese & Chocolate, apel malang/granny smith dan stroberi aduk rata, masak sebentar. Angkat adonan dan tetap aduk hingga adonan dingin. 4.Penyajiannya, gunting/belah kue sus dan isi dengan menggunakan adonan isi di dalamnya dan tambahkan stroberi. TURKEY PATTIES I made this for meal prep. Will most likely use them for hamburgers and for salad. When making the patties the consistency is more runny but it still works fine. This made 6 patties INGREDIENTS 1/2 lb ground turkey 1/2 shallot minced (or one small one) 1 carrot chopped finely 1 egg 1 tsp Worcestershire sauce 1 tsp Maggi sauce Salt and pepper Avocado oil DIRECTIONS 1. In a bowl mix all ingredients together except oil 2. Heat up a pan and add 1 tbsp of oil or enough to cover the pan 3. Do patties with your hands and place them in the pan. This grain-free smoothie is loaded with goodness and goes down a treat. 😋 To make, blend: 1 large, ripe Robusta banana 1 cup plain yogurt 1 tbsp collagen peptides 2 tbsp unsweetened protein powder 1 medjool date, pitted 2 tsp tahini paste (use the best quality you can find) 10 almonds 1 tbsp flaxseeds 1/4 tsp ground cardamom/cinnamon 1/2 tsp pure vanilla in a high speed blender until smooth and enjoy. I want this with my beer! - ▪ INGREDIENTS: 160g Crabmeat, 1/2 Onion, 60g Butter, 80g Cream soup base, salt & pepper, flour, egg, panko - ▪ DIRECTIONS: 1. Chop 160g crab meat into small sizes. 2. Put 60g of butter in the pan and then sauté chopped onions. 3. Add 80g Cream soup base and 350g water. Season with salt & pepper. 4. Add chopped crab meat into the cream mix. When the cream gets thicker, pour it into a container that is wrapped with plastic wrap. 5. Put it in the freezer for about 2 hours. 6. Take it out from the freezer and cut it into 6 pieces. 7. Cover them with flour-> egg ->panko. 8.
