RECIPE OF THE WEEK: SPINACH & POMEGRANATE SALAD Ingredients: For Dressing: ¼ cup olive oil 2 tbsp balsamic vinegar ½ tsp honey ½ tsp dijon mustard 1 pinch garlic powder, or to taste Salt and pepper to taste For Salad: 1 bag (10 oz) baby spinach ½ cup walnuts ½ cup feta cheese, crumbled 1 pomegranate, seed removed 2-4 grilled boneless, skinless chicken breasts DIRECTIONS: 1. Combine olive oil, balsamic, honey, dijon mustard, garlic, salt and black pepper together in a glass jar with a lid. Place the lid on the jar and shake to mix ingredients thoroughly.  2. In a large salad bowl place spinach, top with walnuts and feta. Sprinkle with pomegranate seeds and sliced, grilled chicken breasts.  3. Cheese is high in calcium and delicious. Cheese can also help lower the acid levels in your mouth and increase saliva production. High acid levels in your mouth can increase the wear and tear of your tooth enamel, when the enamel gets thinner it increases the likelihood of getting cavities. Saliva helps wash away food particles and bacteria, giving your mouth a quick rinse. This week’s recipe from the_chunky_chef has three kinds of delicious cheese. Let us know what you think! 8 slices of good quality bread Mayonnaise for spreading 12 oz Gruyere cheese sliced thinly OR grated, at room temperature 6 oz White cheddar cheese sliced thinly OR grated, at room temperature 4 slices thin Muenster cheese at room temperature 2 yellow onions diced 1 tsp fresh thyme minced 2 tsp fresh rosemary minced, divided 1 tsp brown sugar Salt and pepper to taste 3 Tbsp butter divided 1 Tbsp olive oil Add 1 1/2 Tbsp butter and olive oil to a skillet and heat over MED-LOW. Add diced onions, salt, pepper, fresh thyme and 1 tsp of fresh rosemary to the hot skillet and saute, stirring often, until onions are soft and starting to brown, about 10 minutes. Stir brown sugar into the onions and cook another minute. Transfer onions to a plate. Spread one side of two pieces of bread with a little bit of mayonnaise. To the same skillet, add remaining butter and rosemary, and heat over MED. Swirl to coat the bottom of the skillet with the melted butter. Add both pieces of bread to the skillet, mayonnaise side down. Add a bit of cheese to the top of each piece of bread when it’s in the skillet. Once it starts to melt, sprinkle a couple tablespoons of the caramelized onions over the top of one slice of bread. When the bread is golden brown and crunchy - about 2-3 minutes - sandwich the pieces together and cook on LOW until cheese is fully melted. Transfer to a plate, repeat with remaining bread and ingredients. Slice and enjoy! . . . . . . . Y’all voted for a savory breakfast, so I whipped one up my way: spicy🌶. Inspired by ambitiouskitchen, I decided to make mini gluten free quiches with a sweet potato crust! This recipe is super simple and takes about 30 minutes to make in total. Check out my latest IGTV to see how it’s done! cookingwithjcorinna Find all of the recipe deets below ⬇️ _ INGREDIENTS: * 6 eggs * 1/2 bag (10oz) sweet potato tots (I used the wholefoods brand) * 2 chicken sausage (I used the southwest green chili variety by bilinskisausage) * 1 cup broccoli * 1/2 cup crumbled feta * 2 tbsp water * Seasonings of choice (I used the traderjoes “Everyday Seasoning” which is a mix of sea salt, mustard seeds, black peppercorns, coriander, onion, garlic, paprika, and chilli pepper) _ INSTRUCTIONS: * Preheat oven to 375 F. Grease muffin pan and line each section with 4 sweet potato tots. Bake for 15 minutes. * While the tots are baking, chop the broccoli and chicken sausage into small pieces. * In a food processor, combine the eggs with the water and blend until fluffy. * Once tots are baked, remove from oven and flatten with a fork to create a “crust” at the bottom of the pan. * Add chicken sausage, broccoli, and feta on top of the sweet potato crust. Pour egg mixture over top and sprinkle seasoning last. * Bake the mini quiches for another 15-20 minutes, or until fluffy and golden. * Enjoy with hot sauce (obviously I used the yellowbirdsauce habanero), avocado and a side salad, or grab it and go! Can be easily reheated in the microwave for 45-60 seconds.

Recipe of the week 😋 Ingredients 500 g pork mince 1 granny smith apple cored finely chopped large skin on 1 brown onion finely chopped 1 spring onion finely chopped 1/2 carrot grated small 1 tbs parsley finely chopped 2 tbs sweet chilli sauce 1 egg 1 pinch salt 2 tbs oil 1 cup dried breadcrumbs *optional Method Mix all ingredients, except oil and breadcrumbs, together in a bowl. If mixture is too wet, use stale breadcrumbs to bind together Roll mixture into balls and slightly flatten. Cook slowly over a low to medium heat in a little oil. Mexican Street Corn! What better way could there be to use the last of the summer's corn than by making Mexican Street corn? * Carbonara * . . . Our RecipeOfTheWeek is Donna Franca's Carbonara! There are many theories for the origin of the name carbonara, which is likely more recent than the dish itself. Since the name is derived from carbonaro (the Italian word for 'charcoal burner'), it has been suggested that it was created as a tribute to the Carbonari ('charcoalmen') secret society prominent in the early, repressed stages of Italian unification in the early 19th century. The names spaghetti alla carbonara are unrecorded before the Second World War. It was described as a "Roman dish" at a time when many Italians were eating eggs and bacon supplied by troops from the United States. Keep following us for many other homemade tasty Italian recipes! PASTA ALLA CARBONARA INGREDIENTS: - 1 package of Barilla thick spaghetti or linguine - 4 eggs - ½ cup of finely diced pancetta - ½ cup of grated Pecorino cheese - 4 tablespoons of extra virgin olive oil - salt and ground pepper to taste HOW TO PREPARE: In a large skillet with olive oil, sauté the pancetta until the fat has melted. Cook the pasta in a large in plenty of boiling salted water. Drain the pasta when it is “al dente” and pour it with the amount of pasta water into the large skillet where the pancetta has cooked. While the pasta is cooking, beat the four eggs in a small bowl, and add the pecorino cheese along with plenty of pepper. Over medium heat, pour the egg and cheese mixture over the drained pasta in the large skillet. Stir until the egg mixture is cooked. Place the pasta in a large serving bowl, and add two more tablespoons of grated Romano cheese and black pepper to taste. ONE PAN WONDER! A nutritious meal that only requires one pan has our attention! . INGREDIENTS: • 1 sweet potato. • 1 red onion. • 3 zucchini. • 1 pint mushrooms. • 1/2 bag baby carrots. • 3-4 chicken sausage links. • Olive oil. • Seasoning of your choice. . INSTRUCTIONS: 1. Preheat over to 400 degrees Fahrenheit. 2. Chop up sweet potato, onion and zucchini into bite-size pieces. 3. On a greased baking dish, mix sweet potatoes, onion, zucchini, mushrooms and carrots. 4. Sprinkle veggies with olive oil and season with choice of seasoning, we used oregano. 5. Add chopped up chicken sausage, mix and lay flat to avoid overlapping. 6. Bake for 10 minutes. Beetroot rolls 2 bunches scallions 1large clove of peeled garlic 1tsp ground cumin 800g chickpeas rinsed and drained 500g cooked beetroot (vacuum packed) 100g dried breadcrumbs (panko) 1 egg 1tbsp tahini Salt and freshly ground black pepper Puff pastry sheets defrosted if frozen 1 egg whisked with a little milk Sesame seeds Preheat the oven to 180C Line a baking sheet with parchment paper Whizz everything (apart from the pastry egg and sesame seeds) in a food processor in small batches, making sure to retain some texture. Unroll the pastry and slice in half length ways Spoon in the filling and squash into a rough sausage shape Brush the edge with egg wash and roll up sealing the seam of the pastry using a fork, so the pastry doesn’t unravel in the oven Brush with the egg wash Snip the tops with a scissors Sprinkle with sesame seeds and bake for approx 30 minutes Enjoy!!!

So pleased so many of you liked the look of these and wanted to know the recipe.⁠⠀ ⁠⠀ While I wouldn't recommend eating pastry every day, these can be great for lunch boxes and are packed full of protein and vegetables.⁠⠀ ⁠⠀ I used a sheet of ready made all butter puff pastry which I unrolled and then covered with pesto. I made my own pesto with added spinach and avocado oil.⁠⠀ ⁠⠀ I sprinkled over ⁠⠀ * 2 tbsp of hemp hearts⁠⠀ * handful of chopped spinach⁠⠀ * 1 tbsp chia seeds⁠⠀ * cooked sweetcorn ⁠⠀ * cooked peas⁠⠀ * grated courgette⁠⠀ * I added mozzarella ⁠⠀ ⁠⠀ I then rolled it up along the long edge, like a Swiss roll. With the seam facing down, I cut the sausage up in to approximately 2cm pieces. Place them flat on a greased breaking or silicon mat and pop in a heated oven at 180C for approximately 15 minutes, until cooked and golden brown. ⁠⠀ ⁠⠀ This recipe is so versatile that you could really add any vegetable of your fancy and try with different flavour combinations. RECIPE OF THE WEEK 2 Fall Salad (can be served warm or cold) Ingredients: For the salad: 1 bunch shaved Brussel sprouts (find pre shaved or scroll to video 2 to see how to shave yourself) 1-2 handfuls of arugula 1 large sweet potato 1-2 TB avocado oil 1/3 cup pecans, chopped 1/3 cup dried cranberries (stevespaleogoods has a great sugar free version!) For the dressing: 4 TB avocado oil 2 TB Apple cider vinegar 1 TB maple syrup 1 TB Dijon mustard Salt and pepper to taste 1- preheat oven to 400. Cut sweet potato into small squares and drizzle avocado oil on top (optional: sprinkle with pumpkin pie spice! 🎃 If you aren’t a pumpkin person, you can add cinnamon or salt and pepper). Cook for 20-30 min or until slightly crispy on the outside 2- while sweet potatoes cook, mix together all the dressing ingredients in a shaker cup. 3- during the last 5 min of cooking, add pecans to the sweet potatoes. **if you want a warm salad, drizzle a small amount of oil over brussel sprouts and cook them for about 15 min 4- mix all salad ingredients in a bowl and add dressing. Toss well. **if eating cold, I recommend letting the salad marinate in the dressing while the sweet potatoes cook to help soften the brussel sprouts. Serve this with some grilled chicken or steak and you’ve got a complete meal!
