falafel's day Homemade Falafel #recipesfati @recipefati @cucinarefati Ingredients 250g chickpeas from a can 1 medium onion, finely chopped 2 garlic cloves, crushed 2 tsp ground coriander 2 tsp ground cumin small pack flat-leaf parsley, chopped 2 rounded tbsp plain flour 2 tbsp vegetable oil 100g houmous 4 burger buns, cut in half watercress, to serve Method Drain, rinse and dry the chickpeas thoroughly, then tip into the bowl of a food processor. Pulse until lightly broken up into coarse crumbs. Add the onion, garlic, spices, parsley, flour and some seasoning, and continue to pulse until combined. Using your hands, gently form the mixture into 4 patties about 10cm in diameter and 2cm thick. In a large pan, heat the oil and fry the falafels on each side for 2-3 mins or until golden (you may need to do this in batches). Lightly griddle the burger buns on the cut side in a griddle pan, or toast under the grill. [AD] Are you a breakfast person? I’m not a big breakfast person but I love breakfast foods and will often have ‘breakfast for lunch or dinner’. No.100 Silk Road Lamb Ribs 🐑 my new favourite way of cooking lamb Serves: 3-4 Time: 3 hours Difficulty: Straight forward 1kg Lamb Ribs or Lamb Breast 1 teaspoon Ground Cumin 1/2 teaspoon of Ground Cinnamon 1/2 teaspoon of Ground Cloves 1/2 teaspoon of Ground Nutmeg 2 Dried red Chilli 1 teaspoon Black Pepper 1 teaspoon Salt 4 tablespoons of Black Treacle or Pomegranate Molasses 1. Preheat the oven to 140 degrees Celsius (280 degrees Fahrenheit). 2. Prepare the spice blend by crushing the chilli in a mortar and pestle. Then add the salt and all spices together. 3. Trim the lamb removing any excess fat. Apply the spice mix. 4. Take a wire rack and put on top of a oven proof dish. Add some water to the dish and the lamb on top of the rack. Cover with tin foil. 5. Cook in the oven for 2 hours. 6. Remove the lamb from the oven. Add enough recently boiled water to black treacle to make it easy to brush onto the lamb. 7. Apply the black treacle mixture to the lamb and cook uncovered for 15 minutes in the oven. You can do this on a BBQ. 8. Apply another layer of the black treacle mixture and cook for another 15 minutes. 9. Cut the whole chicken into quarters and season liberally with the rub. Cook skin side up on a parchment lined sheet pans and roast the lemon halves with the chicken as well. Prep Time :5 minutes Cook Time :1h 05 min Yield : 6 servings Ingredients Chicken breast - 2 Onions - 1/2 Tomato - 2 Garlic - 3 cloves Jalapeno - 1 seeded Coriander - 1/4 cup Lime - 1/2 of a Cumin powder - 1/2 tsp Salt - 1 tsp Black pepper - 1/4 tsp Creole seasoning - 1 TBSP Oil - 2 tsp For Toppings Tostadas Refried beans Cheddar or Mozzarella cheese Diced tomatoes Guacamole Sour cream Chopped Coriander Instructions In a small food processor, add the tomato, onion, garlic, jalapeño, coriander, . Pulse until you no longer have large chunks. In a medium size cast iron pot, heat up the oil and add the chicken, pour the sauce in the pot and add about 50 ml of water to the food processor to get the remaining bits, add to the pot then put the Creole seasoning, salt, pepper, cumin, and lime juice. Cover with a lid and simmer on low for about 20 minutes or until the chicken is cooked and you can shred it with a fork. Tonight’s dinner, one of the meals from my @mindbodyoverhaul2.0 plans. So healthy and YUM! 😋 Be sure to save this one and give it a try! . Salmon with Potato & Asparagus 👌🏼. . INGREDIENTS: . -450 g small new potatoes, scrubbed clean and halved . . - 2 Tbsp olive oil. . -1/2 teaspoon salt. - 225 g medium asparagus, trimmed and sliced on the diagonal, 1-inch long pieces . - 1 Tbsp chopped fresh dill . -1 strip of lemon zest . - 1 small garlic clove, coarsely chopped . -Freshly ground pepper . - 680 g of salmon fillets or salmon steaks cut about 1 inch thick . -1 lemon, cut into large wedges . . METHOD: . ✅ Roast the potatoes: Preheat oven to 205°C. In a sheet pan, or a large, shallow roasting pan (not glass, as it might break in an oven that hot) toss the potatoes with olive oil and sprinkle all over with salt. . ✅Place the potatoes cut side down in the roasting pan and cook for 10-12 minutes, until the potatoes begin to brown on the bottom. Turn the potatoes over and roast another 10 minutes until browned on top. Remove the roasting pan from the oven. . ✅Toss asparagus with dill, zest, garlic, salt, olive oil, and mix with potatoes: In a medium bowl, toss the asparagus with the chopped dill, lemon zest, garlic, about 1/2 teaspoon of salt and a little olive oil. . ✅ Add the asparagus mixture to the potatoes and stir to combine. . ✅ Make room for salmon fillets in the pan, and roast: Push the vegetables to the side of the dish to make room for the salmon. If you are using fillets, put them skin side down. . ✅Salt the salmon well and return the baking dish to the oven. #recipeoftheweek beet gazpacho 😊🤤 Ingredients: 3 large beets 3 cloves is garlic 1 cucumber 1 red onion 1 spring onion 1 avocado 1 carrot A pinch of salt Black pepper Table spoon of olive oil Take spoon of wine vinegar 1 cup of beet juice Preparation 1. Boil your previously peeled beets over low medium heat for 45 min. Set aside to cool off completely. Do not throw away the juice, you will use it for later. 2. Dice your beets, red onion, cucumber and garlic. Put the ingredients inside a large bowl and add the juice, salt, pepper and vinegar. Blend until it's become a nice velvety pure. 3. Let chill in the fridge for 30 min. 4. Top with avocado, spring onion and carrot. 5. It's a cold one today. Very cold. This Beef 'n' Beer Stew is the perfect way to warm up over winter. Beef slow-cooked in a mixture of beer and water enriches and gives it a nut-like flavour to the meat. The bread on top is delicious too. 💡 Tip: You can use a slow-cooker to whip up this recipe while you're at work. Cook it on low for 8-9 hours or on high for 4-4 1/2 hours. 30 minutes before the end of cooking time turn the slow cooker to high (if cooking on low). Orange Cinnamon Slushies for a #summer #recipe Prep Time 2 hours 10 minutes Total Time 2 hours 10 minutes Servings 5 -6 servings Ingredients: 1 12 oz can frozen orange juice concentrate 1 cup water 2 cups unsweetened almond milk divided (or milk of your choice) 1/2 cup sugar 1 cup ice cubes 1 teaspoon vanilla extract Instructions: Place frozen orange juice, water, 1 cup milk, sugar, ice cubes, cinnamon and vanilla in a blender. Blend on high speed until smooth and ice chunks have disappeared. Pour into a 4 qt container and freeze until solid, about 2-3 hours. Break frozen orange into chunks and place in a food processor or blender. Pour remaining 1 cup milk over top and blend or pulse on high speed until thick and smooth. Homemade Pizza Recipe #recipesfati @recipefati @cucinarefati You can use any toppings you like, I kept it simple by making pepperoni and cheese but feel free to be creative and make it your own. Ingredients flour - 2 cups instant yeast - 2 tsp sugar - 1 tsp salt - 1/2 tsp olive oil - 1 TBSP milk and water - 3/4 cup combined pizza Sauce - 2 cups Mozzarella Cheese - 2 cups pepperoni - 2 fresh basil - 5 leaves Instructions preheat oven to 450 degrees F, the higher the better. Put the pizza stone on the last rack of your oven. In a large bowl, put the flour, instant yeast, salt, and sugar, and stir to mix. In a glass measuring bowl put the olive oil, milk, and water. Heat it up until it is warm. Make a well in the center of the flour, and pour the warm liquid in. Start mixing slowly and incorporate all of the flour until the bowl has no more flour. On a lightly floured wooden cutting board, place the dough in the center and start to knead. Knead and continue to add a little bit of flour if the dough gets too sticky. Continue this for 5-10 minutes, until the dough is elastic and smooth. Place the dough in a lightly oiled bowl and cover with plastic wrap, place it in a warm spot and let it raise for 30-60 minutes until it has doubled in size. Use your hands/knife to divide the dough into thirds. Roll it out until you like the thickness of the crust, and start assembling. Fresh Rhubarb Salsa! I know, I know, using fresh rhubarb sounds weird. But please bear with me! I've been wanting to try using fresh rhubarb in a salsa-type condiment, to top fish, fish tacos, salmon, with tortilla chips, pork, chicken, ect...⁣ ⁣ I'm happy to report it was delicious! Think salsa Verde with a lovely tang. ⁣ ⁣ Fresh Rhubarb Salsa ⁣ ⁣ 1 1/2 cups rhubarb, cut in 1/4 slices ⁣ 1/3 cup finely sliced green onion⁣ 1/2 jalapeño, seeded and minced (more or less to your tastes)⁣ 1 shallot, finely chopped ⁣ 2 teaspoons honey ⁣ 1 tablespoon cider vinegar ⁣ Kosher salt ⁣ ⁣ Blanche rhubarb by adding rhubarb to a pot of boiling water for 20 seconds. Scoop rhubarb out of water and place in a bowl filled with cold water with a couple handfuls of ice. Chill for a minute or two, and drain and transfer rhubarb to a paper towel lined baking sheet or plate. Dry by blotting with additional paper towels (the rhubarb doesn't need to be completely dry, just not dripping wet). Once dry, transfer rhubarb to a medium bowl and stir in remaining ingredients. Re- imagined meatballs & spaghetti 🍝🍝 1. Combine 1 pack of ground turkey with @traderjoes seasoning salt - I added some extra salt & garlic powder. 2. Add 1 grated zucchini & a handful of chopped parsley into the turkey. 3. Roll the turkey mixture into balls and lightly fry them (with OO spray) on each side until lightly browned. 4. In a separate pot, add 1 large can of crushed tomatoes, 2 garlic cubes, 2 tbsp of tomato paste, 1/2 cup water, salt & pepper to taste and bring to a boil. 5. Place meatballs in sauce and simmer for another 45 min. 6. Spiralize the zucchini (you can prepare it ahead, just keep it in an airtight container) - put meatballs on top when ready to serve. 7.
