Blueberry Chocolate Mousse Ingredients 250g cream cheese, at room temperature 1/4 cup cocoa powder 1/8 tsp vanilla 3tbsp sugar 1/4 cup double cream, whipped to soft peak 250g fresh blueberries to decorate For the Blueberry Compote 150g fresh or frozen blueberries 2 sugar or any sweetener of your choice 1/2 of a lime 1 tbsp vanilla 1 tsp cornflour mixed with 1 tbsp water Make the compote first Combine the blueberries, sugar and lemon juice in a pot and simmer for 5mins till some of the berries have broken down. Add the cornflour mixture into the pan and cook till slightly thickened. Remove from heat and add the vanilla. Scoop into a jam jar and close the lid. Allow to cool completely before storing in the fridge. To make the mousse, combine the cream cheese, cocoa powder, vanilla and sugar and whip till combined then fold in the whipped double cream till combined. Soop some compote into dessert glasses of your choice followed by some fresh blueberries then some chocolate mousse. Creamy Chicken, Bacon and Leek Soup 1 tbsp olive oil 1 onion, finely chopped 2 large leeks, thinly sliced 3 bacon rashers, chopped 1 clove of garlic, minced 2 cups cooked chicken and chopped 1 tsp of wholegrain mustard 2 tsp of mixed herbs 6 cups of chicken stock 400ml of coconut milk Salt and black pepper to taste Pinch of chilli flakes Heat the oil in a large saucepan, add the onion and bacon and cook till golden Add the garlic and leeks and continue to fry to soften. Add the whole grain mustard, mixed herbs, chilli flakes and chicken stock Bring to a boil and then reduce heat, cover and simmer or 40 mins. Line a 12-cup standard muffin tin with paper liners To make the crumb topping, combine sugars, cinnamon and salt in a medium bowl. Whisk in melted butter. Add flour and stir using a fork until combined. Spread out mixture on tray to dry until ready to use. In a large bowl, combine flour, sugar, baking powder, cinnamon, baking soda and salt. In a large bowl, whisk together milk, oil and egg. Stir the dry mixture into the wet using a rubber spatula until no more flour can be seen. Scoop the batter evenly into the muffin tray. Press few chopped strawberries into each batter. Sprinkle the crumb topping over using your fingertips to gently press the crumbs into the batter. Place into oven and bake for 15-17 minutes, or until a skewer inserted in the center comes out clean. To make the glaze, combine icing sugar, vanilla and milk. Whisk until smooth. If the glaze is too thin, add more icing sugar as needed. Stir in the freeze dried strawberries When the muffins are done, cool for 10 minutes and drizzle the glaze on each muffin and place half a strawberry on each Allow glaze to set before serving. In this rainbow fruit popsicles, for the color of red, I used strawberry. Mango for orange, pineapple for yellow, bokcoy and pineapple for green, blueberry for purple and dragonfruit for magenta. I used yogurt to the rainbow fruit popsicles for a softer texture. For every color, I add a little bit of powder sugar to make it not too sour. Since I can’t find blue fruit, so I change it with magenta instead. Garlic Knots For the Pizza Dough: 3 ½ cups of All Purpose Flour 2 tsp Salt 1 tsp Sugar 2 Tbsp of Extra Virgin Olive Oil 1 1/3 cups of Warm Water, 110 degrees 1 Envelope of Yeast . . For the garlic oil 5 Cloves of Garlic 2 Tbsp of Fresh Parsley ¼ Cup of Extra Virgin Olive Oil Salt and Pepper to taste . . Add the yeast and sugar to the warm water and set it aside for about 3 minutes. In the bowl mix together the flour, salt, and olive oil. Pour yeast water into the flour mixture. Mix and knead for 10 mins until smooth. Form it into a large ball then oil a large bowl with some olive oil and place the dough in and brush the top with a little oil as well. Cover with clingfilm and place it somewhere warm to rise and double in size. Preheat the oven to 180 degrees, line a baking sheet with parchment paper. Place the ball of dough on a floured surface and cut it ½ inch strips. Form the knots from each strips and place them on the baking sheet. Bake for 15 to 20 minutes or until lightly golden brown, meanwhile make the garlic oil. In a small food processor, add the garlic, oil and parsley and blend until smooth. Immediately out of the oven add the knots to a large bowl and pour over the garlic oil, season with a little salt and pepper and toss together until they are well coated in the garlic oil.
