Serves 6. 556 calories per serving ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Ingredients ⠀⠀⠀⠀⠀⠀⠀⠀⠀ * 6 chicken thighs bone-in, skin on or off * Salt and pepper to season * 2 tablespoons olive oil (more if needed ) * 2 pounds (1 kg) baby potatoes halved or quartered * 2 tablespoons minced garlic (or 8 cloves) * 1 medium onion roughly chopped * 1 small yellow pepper deseeded and diced * 1 small red pepper deseeded and diced * 2 carrots peeled and sliced * 14 oz (410g) can crushed tomatoes * 14 oz (400g) bottle tomato passata (tomato sauce or puree for US readers)* * 150 ml red wine (optional -- substitute with beef broth IF DESIRED) * 2 tablespoons tomato purée * 2 tablespoons freshly chopped parsley * 1 teaspoon each dried basil and oregano * 1 beef bouillon cube crushed * 1 teaspoon salt (adjust to your taste) * pepper (adjust to your taste) * ½ teaspoon red pepper flakes (optional) * 1 cup sliced mushrooms * ½ cup pitted black olives ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Instructions ⠀⠀⠀⠀⠀⠀⠀⠀⠀ (OPTIONAL STEP): Season chicken with salt and pepper. Heat a small amount of oil in a pan or skillet. Sear skin-side down (if using skin on thighs) first for 3 minutes, until deep golden brown. I loveeeee when Norm cooks dinner because...well look at this meal😂👏🏻it was to die for! when I started my coaching journey, I didn’t have any hesitations when I joined, seriously not one. Something I’ve been concentrating a lot on this month is self-love and self-care which has come in handy over the last few days as there have been a few speed bumps 😕⁣ ⁣ I’ve always found it hard to find the balance between hustling and moving the needle forward while also giving myself a break to show myself that self-love and self-care. And while it is something I talk a lot about, it doesn’t mean I’ve perfected the balance, far from it! ⁣ ⁣ In saying that I’ve chosen to show myself the self-care I desperately need today instead of finalising my blog post and podcast. Which part of me is annoyed at because I feel I need to keep the momentum going and follow through with new content on a Monday like promised. And the other part knows that taking a break will do me better in the long run. .⠀ .⠀ Spicy Pico de Gallo Lettuce Tacos 🌮⠀ .⠀ ◼️ Ingredients⠀ No-salt canned black beans - 260 grams⠀ Taco seasoning - 2 tsps⠀ Frozen corn - 240 grams⠀ Romaine lettuce - 190 grams⠀ Avocado - 1/2⠀ Jalapenos - 1/2⠀ Pico de gallo - 260 grams⠀ .⠀ ◼️ Optional⠀ Salt & pepper - to taste⠀ Cayenne pepper - 2 grams⠀ .⠀ ◼️ Directions⠀ 1. Rinse and drain the no salt added canned black beans. In a pan or wok, warm the beans over low heat with the taco seasoning, adding a little bit at a time and tasting before adding more. Taco seasonings vary greatly by brand and batch, so tasting as you go is key! Add a sprinkle of cayenne pepper to taste if you have it. Mix the frozen corn in and heat until warm throughout.⠀ .⠀ 2. Produce Prep: Rinse the romaine lettuce to remove any dirt and pat dry with a paper towel. Rinse the avocado and cut it around the pit lengthwise. Twist to open and scoop out the inside. Rinse the jalapeno and dice. Remove the seeds for a milder heat. Beware! Do not touch your face after handling jalapenos. It will burn! ⠀ .⠀ 3. Fill the romaine lettuce leaves with beans, avocado, jalapeno and pico de gallo. That need to be all things to all people at all times. We pride ourselves on being exceptional multitaskers, who can exist on very little sleep, and have no limits to how much we can accomplish in a single day. We truly believe we are Wonder Woman: We can do it all — and do it all by ourselves. (Sure, some men have a problem saying no but since the cave days when men were hunters and women were gatherers, women have been the ones who tend to find "no" the most elusive.) Saying "no" and setting clear and intentional boundaries increases your confidence in all areas of your life. It elevates your authority and people take you seriously.
