Sometimes you need a snack or healthy pick-me-up in the middle of the day, before a workout, or in between meals! _ For those of you guys who don’t have an oven, these don’t require any baking, just mixing and rolling. 🍫🥜🍯 And it uses just 4 simple ingredients that most of us have lying around the house! _ You can experiment with adding your own fun ingredients such as chia seeds, flax seeds, raisins etc. 👍🏼 Experiment with your faves! _ To make: Grab a bowl and mix up all of your ingredients well. Put it in the fridge for about 30-45 minutes to make rolling a little easier. Take it out, roll approx 12 balls, and you’re done! I love Puerto Rican food so much! I just had to learn some recipes I can make at home. I decided to contact my friend @snapandsear who’s a classically trained chef to help me with that. I wanted to learn how to make a traditional Puerto Rican Mofongo dish. Man! Did he come through! . . The green plantains were cut up, deep fried then mashed in a mixture of cilantro, garlic, salt, onion and olive oil which gave it great flavor! . . He formed the mashed plantains into three small balls and placed them in a pool of broth. After that he topped the plantain balls with a homemade criolla sauce, pork and cilantro garlic sauce. To add those finishing touches he added some fresh cliantro on top and placed avocado slices on the side. . . Good morning! Today's RECIPE is a favorite of ours, Pumpkin Kuih/Steamed Savory Pumpkin. It's nutritious and a great breakfast or teatime item. PUMPKIN KUIH by Mama Ding's Kitchen Prep time: 15mins. Cook time: 35 mins. Servings: 6 - 8 Ingredients: 500g of steamed and mashed pumpkin 200g minced meat(chicken/pork) 20g/8 pips garlic, finely minced 80g/3 thumb-sized piece ginger, skinned and pounded/blended 1 tbsp sesame oil 1 and 1/2 cup rice flour 1/2 cup tapioca starch 1 tbsp glutinous rice flour(optional) 1 and 1/2 cups water 1 tsp salt or to taste 1/2 tsp white pepper powder or to taste 2 tbsp cooking oil Ingredients for topping: 3 chillies, deseeded and finely chopped 4 stalks spring onions, finely chopped fried shallot crisps, as much as desired METHOD: Heat cooking oil in a wok/pan. Saute ginger until fragrant and slightly browned. Add in minced garlic. Stir fry till slightly browned. Add the mince meat and mix well. Season with salt and pepper to taste. Cook for 5mins then dish up and set aside. Prepare an 8x8" tray for steaming. Line with parchment paper/banana leaves. In a large bowl, mix the pumpkin puree, rice flour, tapioca starch, glutinous rice flour(if using), water, salt and pepper to taste. Mix well until you get a smooth mixture. Heat a wok/pot to medium. Add the pumpkin mixture and cook over medium heat for 5mins or until thickened. Add the semi-cooked minced meat mixture. Mix well. Turn off heat. Prepare a steamer. Scoop pumpkin and minced meat mixture into your lined tray. Flatten the top with a spatula. Steam over high heat for 25mins. When done, remove from heat. Sprinkle the top with fried shallot crisps, chopped chillies and spring onions. 🍌 🍨 Nice cream is never naughty and always nice! I know you guys like simple recipes, so heres the easiest ever 2-ingredient recipe! It’s also vegan and dairy free 🙌🏼 woo! _ First peel and freeze 🍌 bananas ahead of time, otherwise it won’t have the right consistency. And you can add a teaspoon of optional vanilla if you like! _ I use a regular blender or food processor, add chopped frozen banana + almond milk. Pulse until bananas are creamy, adding more almond milk and stirring until well blended. _ This literally took 5 minutes and was so good! This week is going to be an interesting week in meals because I haven’t gone grocery shopping in 8 days 😂 Since I’m leaving on Thursday night, this week is going to be full of clean out the fridge meals (and freezer meals if I run out of fridge food 🤷🏼‍♀️). Last night I used up most of the produce in my fridge to make this stir fry 🤤 All of the produce here is from local farms here in BC - I love supporting local, plus I find it tastes way better when it’s fresh local produce! ☺️ In this stir fry I have green beans, green onions, garlic, peppers, and carrots, and I also chopped up a block of tofu and threw that in there as well 😃 Anyone else find that getting tofu to be crispy takes FOREVER? 🙃 That’s always the most tedious part of cooking tofu, but it is always worth it because it tastes amazing when it’s crispy 😍 . Happy Monday! 🥰 I’ve had a great start to the week, but I am in countdown to vacation mode 😏 The few days before a trip always seem to be the longest, at least for me 😅 I put all of that excitement and energy to good use and went for a nice long run when I got home from work today, and now I’m going to rummage through my fridge to figure out what to have for supper 😂 Hope you’re all having a great start to the week! 🤗

It has great flavor and when you factor in the caloric density, it’s just hard to beat! ⁣⠀ All thanks to the talented @themealprepmanual⁣ for making this post & recipe❤️ ⁣⠀ 📝INGREDIENTS:⁣ 138g (3) egg whites ⁣ 113g (1/2 cup) unsweetened applesauce ⁣ 25g (1) scoop casein ⁣ 4mL (1 tsp) vanilla ⁣ 2g (1 packet) stevia⁣ 1g (1/4 tsp) baking powder⁣ 30g (2tbsp) mini chocolate chips ⁣ 10g (2tbsp) cocoa powder⁣ ⁣⠀ 🍴PREPARATION ⁣ 1. Preheat oven to 325F⁣ 2. Beat the egg whites, vanilla, & baking powder until stiff peaks form. ⁣ 3. Add stevia & cocoa powder. ⁣ 4. Add in applesauce & casein. You’ll lose a lot of the volume here.⁣ 5. Pour into a greased 8x8. top with chocolate chips. ⁣ 6. Bake 20-23 minutes. ⁣ NUTRITION FOR THE WHOLE PAN⁣ 430 CALS | 42g C | 43g P | 10g F⁣ ⁣⠀ ❓Why is it called Perfect Chocolate Dream Angel Bake?⁣ ❗️Because it’s not a brownie and it’s not a cake. It’s somewhere in the middle and that name captures it perfectly and you would agree with me if you tried it.⁣ ⁣⠀ ❓Mine turned out really wet. ⁣ ❗️Let it cool completely. If you want to eat it right away it will be soufflé like. If it’s room temp it will set up. ⁣⠀ ❓What am I supposed to do with the egg yolks?⁣ ❗️Use liquid egg whites and you won’t have this problem. Or use regular eggs and figure it out yourself. It’s really not a hard problem to solve. ⁣⠀ ❓I don’t have casein can I use whey/plant?⁣ ❗️If you’re okay with it tasting like shit and being as dry as the Gobi then yes. ⁣⠀ ❓What’s casein and where can I buy it?⁣ ❗️It’s protein and a simple google search could have answered that one for you. ⁣⠀ ❓What can I replace the applesauce with?⁣ ❗️Nothing if you want to keep the macros the same. Make it yourself or buy it online. ⁣⠀ ❓Can I substitute _____ for _____?⁣ ❗️If you’re going to substitute anything just make regular brownies or cake. There’s a reason these recipes are written the way they are. I’ll drop the chicken recipe below and I’ll link the full biscuit and raspberry chipotle jam recipe at the end. ⠀ *1 1/2 lb Boneless Skinless Chicken Breast *2 tsp Ground Cinnamon *1 tsp Salt *1/2-1 tsp Black Pepper, to spice preference *1/4-1/2 tsp Cayenne Pepper, to spice preference *2 Tbsp Honey *2 C (56g) Corn Flakes ⠀ 1. Preheat an oven to 400F and place a wire rack over a baking sheet or line a baking sheet with parchment paper or foil. 2. Cut the chicken breasts into 8 pieces as evenly as possible. (If you have thicker pieces, you may want to cover in cling wrap and pound them to an even thickness.) 3. Place the chicken in a large bowl before adding the ground cinnamon, cayenne and black pepper, and salt. Stir well to fully coat the chicken. 4. Add the honey to the chicken after you've fully coated the chicken with the spice mixture. Stir well. 5. Crush the corn flakes before adding to the chicken and stir well. (You can crush the cereal in a small bag, with your hands, or with a food processor.) 6. Easy Homemade Pizza Dough Ingredients: 2 1/4 cups of all-purpose flour 1 tsp. salt 1 cup lukewarm water ¾ tsp active dry yeast 1 tsp extra-virgin olive oil Instructions: In a large mixing bowl, combine flour and salt. In a small bowl, sprinkle yeast over lukewarm water and olive oil. Wait 2-3 minutes, then pour into flour mixture. Stir ingredients together, then knead with your hands or a stand mixer with dough hook, for 3 minutes. Let the mixture rest for 15 minutes. Knead rested dough by hand or in stand mixer for 3 minutes. Cut into 1 large or 2 small equal pieces and shape each into a ball. Place on a heavily floured surface, cover with dampened cloth or plastic wrap. Let rise until doubled, about 2 to 3 hours at room temperature or 8 to 24 hours in the refrigerator. (If you refrigerate the dough, remove it 30 to 45 minutes before you begin to shape it for pizza.) To make pizza, place each dough ball on a lightly floured surface and use your fingers to stretch it gently, then your hands to shape it into rounds or squares. Top with your favorite toppings, and bake at 425 degrees for 12-15 minutes individual pizzas and 20 minutes or so for a full-size. . Once you’ve made this yummy dough you’ll be hooked! . 💚Meatless greens💚 You don’t need a big ham hock or bacon strips to cook a big, delicious bowl of greens! The spices and condiments in this recipe give plenty of flavor and create a much healthier dish perfect for a crowd! Ingredients: •1 small onion, diced •3-4 cloves garlic, minced •1 tsp red pepper flakes •2 pounds dark leafy greens of choice, chopped (enough to fill up a big pot about 2/3 to 3/4 full)— we used a mixture of kale leaves and beet greens with stems •2-3 Tbsp soy sauce •3 cups vegetable broth or water •1/4 cup Apple cider vinegar (or any vinegar you have on hand) •Black pepper ~ 1. Sauté the onion and garlic in the large pot over medium heat using a small amount of olive oil or vegetable broth for 3-4 minutes (until translucent) 2. Add the red pepper flakes and stir around for about 1 more minute 3. Add the greens, 3 cups broth or water (enough to cover the greens), soy sauce, and vinegar, stirring to combine 4. Reduce heat to low, cover pot, and let simmer for 1 to 1 1/2 hours, checking on them and stirring about halfway through ~ Serve topped with black pepper, hot sauce, or more vinegar to add even more flavor! You won’t regret giving these greens a try 💚

The more you NOH the better! #Say Total Time: 30 minutes Serves: 1-2 Ingredients 2 cups cooked white rice 1 packet NOH Loco Moco Brown Gravy (see back for instructions) 1 beef patty 2 Tsp. salt 2 Tsp. pepper 1 Tbsp. olive oil 1 egg, fried 2 green onions, sliced for garnish Directions: 1. Make the NOH loco moco brown gravy as directed on the packet. Keep gravy warm in the pan until ready to serve. 2. Season the burger patty with salt and pepper. Put a little olive oil in a pan and cook the burger on both sides until cooked through. Take out and set aside. 3. In the same pan fry 1 egg sunny side up. 4. Make the loco moco plate by adding the cooked white rice in the center, topping with the burger patty, loco moco brown gravy and the egg. Garnish the top with sliced green onions and a little more salt and pepper. Serve right away.

INGREDIENTS: 32 ounces 8 boneless, skinless chicken thighs, fat trimmed 1/4 cup low sodium soy sauce 2 1/2 tablespoons balsamic vinegar 1 tablespoon honey 3 cloves garlic, crushed 1 teaspoon Sriracha hot sauce 1 teaspoon fresh grated ginger 1 scallion, green only sliced for garnish INSTRUCTIONS: 1. Preheat the air fryer to 400F. 5. Remove the chicken from the marinade and transfer to the air fryer basket. 6. Cook in batches 14 minutes, turning halfway until cooked through in the center. 7. Meanwhile, place the remaining sauce in a small pot and cook over medium-low heat until it reduces slightly and thickens, about 1 to 2 minutes. 8. I'm a pasnipholic.. so here's a really delicious and simple recipe for parsnip fries ;-) You'll need: ½ pound parsnips peeled 2 tablespoons grapeseed oil 1½ teaspoons dried oregano 1½ teaspoons smoked paprika ¾ teaspoon onion powder ¼ teaspoon ground pepper ½ teaspoon salt The How: Position racks in upper and lower thirds of oven. Place 2 large rimmed baking sheets in the oven and preheat to 450°F. Cut parsnips into "fries" about 3 inches long and ½ inch thick (cut out the core if woody). Toss the parsnips in a large bowl with oil, oregano, paprika and onion powder. Spread on the hot baking sheets in an even layer. Bake for 10 minutes. Stir the parsnips and rotate the baking sheets top to bottom. Bake until browned around the edges, 10 to 15 minutes more. Season with salt and pepper and serve.
