.⠀ .⠀ Lentil Pasta with (Lower-Fat) Pesto⠀ .⠀ ◼️ Ingredients⠀ Tolerant Green Lentil Rotini - 110 grams⠀ No-salt canned white beans - 110 grams⠀ Garlic - 1 1/2 cloves⠀ Fresh basil - 60 grams⠀ Mixed nuts - 45 grams⠀ Spinach - 90 grams⠀ Water - 1/8 liter⠀ .⠀ ◼️ Directions⠀ 1. Cook the lentili pasta per directions on the box.⠀ .⠀ 2. Rinse and drain the canned white beans. Peel the garlic. Add half the beans, fresh basil, garlic, mixed nuts, olive oil, spinach and water to a food processor or blender. (To make this recipe oil-free, substitute water in place of olive oil.) Puree the ingredients until you get a smooth, creamy sauce. That's it. Really!⠀ .⠀ 3. Drain the lentil pasta. To plate, top the pasta with the pesto sauce. Add extra beans on top, or save them for later.⠀ .⠀ 4. Kid-Friendly Tip: When making the pesto, take into consideration how much your child likes raw garlic. Not a fan of spicy raw garlic? Hold the garlic when making the sauce. Plate your child's pesto pasta, then add the garlic to the remaining pesto and reblend. Not into fresh basil either? Every year towards the end of the spring and into the early days of the summer, we are treated to a magnificent vegetable here on the east coast. They are called fiddleheads because - wait for it - they look like the head of a fiddle! They are beautiful in both look and taste, and go well with fish, poultry, pork or beef. They are also nice as a late night snack... However - make sure you wash them well! They are known for harbouring salmonella. Ground turkey version of Korean Ground Beef! 🍚😋To make the sauce: 1/4 cup low sodium soy sauce, 1/4 cup of brown sugar or similar alternative, 1 tbsp sesame oil, 1/2 tsp of ginger (although I probably put 1 tsp lol) and red chili pepper flakes to taste! Try this healthy recipe for buffalo chicken pasta! Ingredients: 1 large spaghetti squash, cut in half lengthwise 2 tablespoons fat 1 pound boneless, skinless chicken breasts, cubed 2 garlic cloves, minced 1/2 sweet onion, finely chopped 1 large carrot, finely chopped 2 stalks of celery, finely chopped 1/2 cup hot sauce salt and pepper, to taste chopped green onions, to garnish sprinkle of red pepper flakes For the mayo (this will render about 2/3 cup mayo) 2/3 cup avocado oil 1 egg 1 teaspoon lemon juice 1/2 teaspoon dijon mustard 1/8 teaspoon garlic powder salt and pepper, to taste Directions: 1. Preheat oven to 415 degrees 2. Place spaghetti squash open side down on a baking sheet. Bake for 20-25 minutes or until skin of squash is slightly soft and the threads of the squash easily come out with a fork 3. While spaghetti squash is cooling, place a large pan over medium heat. Once pan is very hot, add fat and chicken to brown with a bit of salt and pepper. Once chicken has browned and no longer pink, remove from pan and place in a bowl 4. In that same pan, still over medium heat, add garlic, onion, carrot and celery to the pan to cook. Sprinkle with a bit more salt. Once onion has become translucent, remove from heat. 5. Now make the quick mayo. Add all mayo ingredients to a tall container, place an immersion blender to the bottom and turn on. Once the mixture begins to become thicker, slowly pull the immersion blender up the container to make sure mixture mixes completely. 6. Now finish the dish off by adding the spaghetti squash threads to the pan, along with chicken, mayo, and hot sauce to the pan. Mix together and sprinkle with a bit more salt and pepper. Ok so when I was a little kid I knew my way around a chicken nugget 😂 honestly I was picky and demanding and knew what I wanted to eat every night... Perdue fresh chicken nuggets (with or without the cheese, holla if you know what I’m talking about 🤣) with a side of ketchup and a side of honey. I can’t count how many times I ate that for dinner, but I’m sure it’s over 100. So this recipe from @bunsinmyoven really throws it back for me. Ingredients are... ketchup! Honey! Chicken! 😂 along with some garlic, some soy sauce, and some dominos red pepper packets 🤣 Seriously y’all, it is hands down the favorite thing I have meal prepped and featured on here so far. Easy to make, absolutely delicious and versatile! Estimated for a 2/3 cup serving: 195 calories, 16g carbs, 7g fat, 19g protein 🥰 I’ll drop a link to the recipe in my bio, but y’all, it’s super simple 1) toss together sauce ingredients 2) pour sauce over chicken in crockpot 3) let it cook 4) shred chicken 5) if you want a thicker sauce add some cornstarch/water and cook a bit longer 6) chow down and enjoy! I used chicken thighs but you can substitute thighs for breast if you want. Build-your-own pizzaaaaa 🍕🍕🍕⁣⁣⁣⁣⁣ ⁣⁣⁣⁣⁣ INGREDIENTS:⁣⁣⁣⁣⁣⁣ • flatbread, pita bread⁣⁣ or tortilla wraps ⁣ • tomato pizza sauce⁣ • mushrooms, sliced⁣ • red onions, chopped⁣⁣⁣ • 3 garlic cloves, minced⁣⁣⁣ • tomato, chopped⁣ • olives • spinach⁣ • pineapple tidbits (because pineapple belongs on pizza) ⁣ • protein of your choice. I use chicken, various sliced meats or chopped turkey patties⁣ • cheeeeese ⁣ • chili flakes⁣⁣⁣ ⁣⁣⁣⁣⁣ DIRECTIONS:⁣⁣⁣⁣⁣ • Put all the ingredients into bowls, as pictured⁣ ⁣• Spread a good amount of pizza sauce onto your flatbread⁣ • Add a layer of spinach on top⁣ • If you are using ham/ salami slices, add them next⁣ • Get the oven ready and preheat to 350 F⁣ • Now add the rest of your veggies and other protein⁣ • Sprinkle top with cheese and add chili flakes⁣ • The oven should be ready now - put your pizzas in the oven for 15 minutes ⁣ • Take out and let them sit for 5 minutes before cutting ⁣ ⁣⁣⁣⁣⁣ ⁣Using tortilla wraps actually yields a really nice crispy thin crust and helps cut down the calories, but using a flatbread or pita bread makes it taste more like a restaurant pizza. Moroccan Chickpea Salad ☀️⁣ ⁣ This is my absolute, go-to summer side. It is the perfect dish to take to a BBQ as it goes well with veggie options, fish and grilled meats. It also keeps well, so can be made a couple of days before or you can keep your leftovers to boost your lunches. And it is full of cupboard ingredients, so chances are you won't even have to go shopping! ⁣ ⁣ Of course it is vegan, it is also gluten free yet still packs a flavour punch. When I took it to a family get together everyone wanted my recipe...so here it is! ⁣ ⁣ 200g Quinoa⁣ 1/2 Gluten Free Veggie Stock Cube⁣ 1 handful of raisins⁣ 1/2 red onion, finely chopped⁣ 1 small carrot, grated⁣ 1/2 red pepper, finely chopped⁣ 1 small Courgette, grated⁣ 1 can of chickpeas, drained and rinsed⁣ ⁣ For the Dressing:⁣ 4tbsp Olive Oil⁣ 2 Garlic cloves, crushed⁣ 1tsp Cumin⁣ 1 handful fresh coriander chopped or 1tsp of dried corriander⁣ 1tbsp Lemon corriander⁣ 1/2tsp Salt⁣ ⁣ 1. Cook the quinoa as per pack instructions, with the stock cube added into the water to add flavour. Add the raisins around 5 mins before the quinoa has finished cooking.⁣ 2. Place the ingredients for the dressing into a small container and shake to mix. Set aside.⁣ 3. Place the chopped vegetables, chickpeas, cooked quinoa and dressing into a bowl. Mix generously.⁣ 4. Delicious lamb steaks, chops or cutlets served with a home-made flavourful watercress pesto is a sure fire way to impress 👌 #TasteItLoveIt 2 boneless lamb-leg steaks For the watercress pesto: 25g unsalted pistachio nuts 25g watercress leaves 25g freshly grated Parmesan cheese 60ml rapeseed or olive oil 1. For pesto: put the nuts, watercress, Parmesan and 50ml oil into a blender, season and whizz together to make a chunky pesto. 2. Heat a non-stick frying pan under moderate heat until hot. Brush the steaks with remaining oil and cook for 6–8 minutes on each side. Transfer the steaks to warm plates. 3. Place a small spoonful of pesto on each of the steaks (slice, if preferred) and serve with roasted peppers or cherry tomatoes and crusty bread. Honey Sesame Chicken Thighs 🤤 . Ingredients: •3 ½ lb boneless, skinless chicken thighs •½ C fresh ginger, minced •½ C fresh garlic, minced •½ C fesh cilantro, rough chop •2 tbsp Tamari, Shoyu, Soy Sauce, or Coconut Aminos •2 tbsp raw honey •2 tbsp sesame oil •1 tbsp white sesame seeds . Directions: Combine all ingredients in a bowl and marinate for 30 minutes, or up to 24 hours. Cook chicken thighs on a grill OR heat a large, non-stick pan over high heat and sear chicken thighs for 3-5 minutes on each side. Your goal is to achieve a caramelized outer, which will be dark brown in color. Be careful of overcrowding pan, 5-6 thighs at a time will be plenty. Otherwise, the pan will cool down too much and you won’t achieve the flavorful crust. Remove thighs to a bowl and wrap in plastic wrap to trap in heat. You need to achieve an internal temperature of 165° F. If that is not achieved through the carry over cooking of the bowl wrapped in plastic, then finish the thighs on a sheet pan in a 350° oven. POUR EGG MIXTURE INTO THE YEAST MIXTURE AND COMBINE ON MEDIUM SPEED. ONCE COMBINED, ADD IN THE REMAINING INGREDIENTS TO THE STAND MIXER BOWL. Mushroom, zucchini. and squash stew over rice. This was inspired by many meals I've had as a child but usually they had meat. I'm making this completely plant based, nut free, and vegan. My kids loved this dish. If you make it (and I hope you do), please tag me. Ingredients for 3-4 people 1 squash 1 zucchini 10 oz mushrooms 1/2 onion, diced 2 minced garlic cloves 1/2 jar marinara sauce 1 teaspoon cinnamon 1/2 teaspoon allspice 1/2 teaspoon tumeric 2 teaspoons salt 1 teaspoon pepper 1 tablespoon olive oil 1 cup rice 2 cups veggie broth Instructions: Wash and chop all veggies into small pieces (I finely chop my mushrooms and make the other veggies bite size). Start cooking rice - in small pot, place 1 cup rice and 2 cups veggie broth and sprinkle some salt. Cook on high heat until it begins to boil. Reduce heat to simmer and cover. Cook for about 20 minutes. While rice cooks, heat oil in medium size pot on medium heat and sautee onions and garlic for about 2 minutes. Then add all zuccinis, squash and mushrooms and cook for about 5 minutes. Add cinnamon, salt, pepper, all spice, tumeric, and marinera sauce and stir. Cook for about 10 minutes. Serve over rice. Enjoy!

Ingredients For marinating the prawns in batter 500 GM's prawns 3 tbsp corn flour 3 tbsp all purpose flour 1 egg 1/2 tsp salt 1/2 tsp pepper(crushed) For making gravy 1 capsicum(cut into cubes) 2 onions(cut into 8 pieces) 1/2 inch ginger(julienne cut) 2 tsp garlic (chopped) 3 green chillies(diagonal slice cut) 1/2cup spring onion (chopped) A handful of spring onion leaves(chopped) 3tbsp tomato ketchup 1 tbsp chilli sauce 2 tsp soya sauce 1 tsp vinegar Black pepper or white pepper (crushed) 3 tbsp corn flour 1 1/2cup water Oil(refined or sesame) for frying and cooking Instructions How to fry the batter coated prawns Remove head and shell of prawns, devein it Wash the prawns, keep it in a mixing bowl. Add, egg, corn flour, flour to the bowl. Add salt, pepper, mix all together, leave it for 15 mins marination Later, shallow fry or deep fry the prawns till gets golden brown colour Remove from the pan, keep it aside Take the same pan, place on high flame add garlic to the pan, stir it for few secs Add capsicum, add onion, stir it well. Add green chillies, ginger to the pan. Mix well. Add spring onion and stir well Add 2 tsp soya sauce and 3 tbsp tomato ketchup, mix it nicely Add 1 tbsp chilli sauce, and 1 tsp vinegar to it. Give a quick stir Add black or white pepper, salt. Take a bowl with 1 1/2cup of water, add 2 1/2 tbsp corn flour to it. Mix it nicely. So I had been procrastinating the other day for a sweet treat I could make, but I didn’t have the flair I usually have for whipping up a yummy treat, and come accross this recipe on @cassolholm page and as soon as I saw it and how easy it was, I just had to make it 5 minutes later. I did add in protein which wasn’t on the original recipe, so you can make it without. . . INGREDIENTS 3 cups of natural poporn 2/3 cup of natural crunchy peanut butter 1/3cup + 1tbs honey or rice malt (for vegan) 1 scoop @happywayau vegan vanilla protein 2 squares dark Lindt chocolate . . In a saucepan melt the peanut butter and honey together and stir until smooth. Add the vanilla protein and mix until combined. Stir through the popcorn, mix well, and pour into a lined loaf pan. Store in the fridge until set, slice into pieces and drizzle with melted chocolate. . . . vegetarian stroganoff with broccoli 🥦 what you need: ✓ @yvesveggiecuisine ground round (or beef, do you boo!) ✓ fresh broccoli, chopped ✓ egg noodles ✓ fresh basil, chopped ✓ 1/2 cup mushrooms, sliced ✓ 2 1/4 cup vegetable stock ✓ 1 cup sour cream ✓ onion, diced ✓ garlic, minced ✓ 1/4 cup flour ✓ 3 heaping tbsp butter • melt butter in a large pan on medium heat. Add onion and garlic & sautee for 2-3 mins • add mushrooms & sautee another few minutes until soft • add ground round and half of your basil & cook until thoroughly heated. Sprinkle flour over mixture and stir until combined • pour broth into pan, stir, and bring to a boil. Reduce heat and simmer for approx 10 minutes • stir in sour cream and simmer for 5 minutes until thickened. Remove from heat • steam broccoli & cook egg noodles • plate your noodles first, then top with broccoli, stroganoff & remaining basil! This was the perfect meal at the end of a busy day, where truthfully I didn't get a chance to eat before dinner! It's savoury, filling comfort food that will leave you wishing you had leftovers for days!
