Please Follow me popularrecipes ~ ½ tablespoon olive oil 1 medium white onion, chopped 1 can mild green chiles (or sub 2 seeded and diced jalapenos) 1 tablespoon ground cumin 2 teaspoons chili powder ¼ teaspoon coriander 1/4 teaspoon dried oregano 4 cups low sodium chicken broth 2 (15 ounce) cans chickpeas, rinsed and drained ¾ teaspoon salt, plus more to taste Freshly ground black pepper 3 cups shredded, cooked chicken breast (can also used shredded rotisserie chicken) ½ cup frozen corn 1 medium lime, juiced 1/3 cup fresh, chopped cilantro For garnish: Tortilla strips or chips Extra cilantro Avocado slices Extra lime wedge Instructions Add olive oil to a large dutch oven or large pot and place over medium high heat. Add onion and green chiles and cook until softened, about 3-4 minutes. Next stir in cumin, chili powder, coriander and dried oregano; allow the spices to cook for 30 seconds, then add in chicken broth, 1 can of drained chickpeas (about 1 1/2 cups chickpeas), uncooked chicken breast and salt and pepper. Simmer on medium low heat for 20-30 minutes. After 20 minutes, remove the chicken with a slotted spoon and shred with two forks. Next add in fresh lime juice and cilantro. Finally, add the remaining can of rinsed and drained chickpeas(1 1/2 cups chickpeas) and ½ cup water (or broth) to a blender. Blend until somewhat smooth, adding a little more water if necessary. Pour blended chickpeas into soup pot and then stir in the corn. Allow soup to cook and simmer for 5-10 more minutes. Serve with tortilla chips, an extra lime wedge and avocado if you’d like. Serves 4. Mushroom Chicken This creamy mushroom chicken recipe has the most deliciously tender pan-fried chicken smothered in a garlicky mushroom sauce. It's quick and easy - it can be on your table in half an hour. ~ 2 large chicken breasts cut in half lengthwise Flour for dredging 1 tablespoon olive oil 12 ounces mushrooms (I used baby bellas) sliced 1 dash Italian seasoning 3 cloves garlic minced 1/2 cup chicken broth 1/2 teaspoon lemon juice 1/2 teaspoon Dijon mustard 1 cup heavy/whipping cream Salt & pepper to taste Cut your chicken breasts in half lengthwise to make four thinner cutlets. Coat them in flour. Add the oil and 1 tablespoon of the butter to a skillet over medium-high heat. Once the pan's hot, add the chicken. Cook it for 4-5 minutes/side until golden. Once this step is done, take the chicken out of the pan and set it aside. Chop the mushrooms while cooking the chicken. Add the remaining butter to the pan. Let it melt, then add the mushrooms and Italian seasoning. Once the mushrooms start to release water, add the garlic to the pan. Continue cooking the mushrooms until all the water is cooked off. Take the mushrooms out of the pan (ok to put them on the same plate as the chicken). Add the chicken broth, lemon juice, and Dijon mustard to the pan. Give it a good stir until the mustard dissolves, and let it reduce for 3-4 minutes. Add the cream to the pan, along with the chicken and mushrooms. Let the chicken cook for another 5 minutes or so until it's cooked through and the sauce has thickened a bit. Preheat oven to 180 C (360 F). Grease and line an 8 inch round cake tin with baking or parchment paper. ✨Coconut Chicken, Mango, Avocado and Freekeh✨ This recipe will be a crowd pleaser, especially as we come into warmer weather! As you will notice in my E Book for main meals I always recommend including a source of low GI carbohydrates. This helps offer long lasting energy and satiety. It will also prevent those intense sugar cravings at 3-4pm that I often see with my clients who try to avoid carbohydrates! You can read more about nutrition in my Nutrition Guide and Recipe Collection via music website. Time: 20-25 minutes Ingredients: ▫️Freekeh, ½ -1 cup cooked, or desired amount ▫️Skinless chicken breast, 100-150g, or desired amount ▫️Light coconut milk, 2 tbsp. (for marinating/coating chicken) ▫️Desiccated coconut, 1-2 tbsp. (shavings) (for marinating/coating chicken) ▫️Mango, sliced into long strips, 100g ▫️Avocado, 50g, or desired amount ▫️Snow peas, sliced into thin strips (stalks chopped off), 75g ▫️Chives, chopped finely, ½ tbsp. ▫️Mixed lettuce, 1 cup ▫️Red chilli’s (optional), ½ – 1 small ▫️Coriander leaves, raw, 1 pinch ▫️Celery stalk, 30g Curry-Mango Dressing, combine in a small bowl/cup: ▫️Mayonnaise, 1-2 tsp. ▫️Vinegar, 1 tsp. ▫️Curry powder, 1-2 pinch ▫️Mustard ½ tsp. ▫️Lemon juice1 tbsp. Method: 1. Cook freekeh as per instructions on pack. Suggest making in bulk and ahead of time 2. Pre heat oven to 180 degrees Celsius. 3. Cut chicken into smaller strips. 4. Place light coconut milk and desiccated coconut in 2 separate bowls. 5. Coat chicken in coconut milk then cover in desiccated coconut and set aside. 6. Fry chicken on hot pan to brown and seal and transfer onto baking tray lined with foil to bake in oven for 5-10 minutes or until cooked through 7. In a bowl combine chives, snow peas, celery and dressing. 8. In a salad bowl add mixed lettuce and freekah and toss through dressing mix. 9. Top with cooked chicken, avocado, mango, chilli, coriander and gently toss. 10. Refrigerate or serve as is. Creamy caper vinaigrette: reminiscent of a slightly spicy Caesar dressing and I’m HERE for it. __ I used this dressing to massage into kale yesterday and it was just lovely. Do you see how I just combined a bunch of stuff? YOU CAN DO THE SAME! The more comfortable you get cooking, the more you will learn what flavors go together and the more you will be able to throw things together on a whim. Halloween Eggplant Pizza Bites . Cr: healthyfitnessmeals . ingredients 1 large eggplant, cut into 1/4-inch slices (or 2 medium) 1 tablespoon Salt 1 teaspoon Italian Seasoning salt and pepper to taste 1 Tb Olive Oil 1 cup Pizza Sauce 1 cup mozzarella, shredded ½ Cup Black Olives . directions 1. Slice eggplants and place on pan. Sprinkle the eggplant with salt, let sit for about 15- 20 minutes then dab with paper towel to remove excess water. 2. Brush the eggplant slices with olive oil and season with the Italian seasoning, salt and pepper. 3. Place eggplants preheated 400F/200C oven until it just starts to turn tender, about 15-20 minutes. (be careful to not let them become too soft or overcook.) 4. Remove from oven, top the eggplant with the pizza sauce, cheese, black olives (spider styled olives) and broil until the cheese has melted. About 3-5 minutes

Soften the vanilla ice cream in the microwave for a few seconds or on the counter at room temp.⠀⠀⠀⠀⠀⠀⠀⠀⠀ 2. Add the melted ice cream to a bowl. Spread the apple butter on top and fold the ice cream over the apple butter to create pools of jam. Freeze the ice cream until it is firm or overnight.⠀⠀⠀⠀⠀⠀⠀⠀⠀ 3. Melt the chocolate chips in the microwave in 10-second bursts. Whisk the heavy cream into the chocolate, then whisk in the ginger juice.⠀⠀⠀⠀⠀⠀⠀⠀⠀ 4. Sift cocoa powder into a medium deep mixing bowl. Add maple syrup, vanilla extract and pinch of salt. Whisk to combine until smooth. Add the coconut milk on top and whisk to combine until smooth. 2. Here's a delicious bell pepper popper recipe that's to be a hit at football parties this fall! Bell Pepper Poppers INGREDIENTS: 12 mini sweet peppers 2 slices turkey bacon (diced) 1/2 cup onion(s) (diced) 4 oz cream cheese (fat-free, room temperature) 2 oz soft goat cheese (room temperature) 1/4 tsp red pepper flakes (crushed) *add more to taste for an extra kick!* 1 slice whole wheat bread (toasted) 1 clove garlic (minced) 1 tbsp Parmesan cheese (grated) DIRECTIONS: Preheat the oven to 375° F. Coat a baking sheet with cooking spray. Set aside. Slice each pepper in half lengthwise then scoop out any seeds and membrane. Add bacon to a non-stick sauté pan with cooking spray over medium heat and cook until crisp. Drain on a paper towel and set aside. Add onions to the pan used to cook the bacon and add more cooking spray if needed. Cook the onions, stirring occasionally until clear. Set aside to cool. In a small bowl, mix the cream cheese and goat cheese. Add the bacon, onions and red pepper flakes. Stir to combine. Grind toasted bread in a food processor with the garlic and parmesan cheese. Set aside in a small bowl. Spoon the cheese mixture into each pepper half (1 Tsp. of mixture per popper), and then press the cheese side of the popper into the whole wheat breadcrumb mixture. Lay on the prepared baking sheet breadcrumb side up and spray each on lightly with cooking spray.
