Beans are a staple in my house. they are a great source of protein, fibre, they are good for digestion and help regulate blood sugar (and not to mention they are cruelty free 👊🏼). I batch cook on the weekend and use them up in various ways during the week. Tonight we are having chilli with beans, wild rice and veggies. I just sauté everything in water, add some spices (cumin, paprika, garlic powder, onion powder, chilli powder, salt and pepper), add in two cans of diced tomatoes and tomato paste. I drizzled some cashew cream on top for good measure 😉. When I cook I rarely take actual measurements. I add flavours in small quantities and build from there based on how it all tastes. I enjoy being creative and for me cooking is more enjoyable when I can just be free to learn as I go. If I am unsure of where to start I will google a recipe and then play around with it based on what I have in my fridge or pantry. . Do you like to cook? If so do you like to follow a recipe? . .CRICKETS 🦗 = HEALTHY SNACK . .WAIT...WHAT?!?! 🤔 . 🦗On a recent trip to the US I came across this product as I was shopping for “healthy” snack food. 🦗Since I avoid gluten, dairy, soy, sugar, and GMO ingredients, I’m used to shopping from a very small list of products. . 🦗So when I came across these Chirp Cricket Chips (eatchirps chirpschips) and I read the information on the bag...I was highly intrigued. . 🦗Entomophagy is the eating of insects 🐜and it’s been practiced for centuries in many different countries around the world, with the largest populations of entomophagists living in South America and Asia. . 🦗I’d seen insects 🐜cooked as food and I’d seen cricket based products before but I’d never been adventurous enough to try them. . 🦗To satisfy my curiosity I bought a bag. Suffice it to say that I was really surprised...and pleasantly so by how GOOD they were! 😋 . 🦗The texture and mouth-feel were on par with other tortilla chips that I’d eaten 👍🏼 🦗The BBQ flavour was good and each chip was well coated 👍🏼 My one critique is that I would have liked a slightly stronger flavour. 🦗There was an earthiness to the overall flavour of the chip which was quite nice 👍🏼 Having never eaten crickets before, I can’t say if this flavour is due to the source material 🦗, but it didn’t make me “think” of crickets 🦗👍🏼 . 🦗All in all I was really pleased with the chip and will definitely try them again 🙌🏼👊🏼👍🏼 . 🦗Its also worth noting that in addition to the high protein content there are a whole host of other benefits to eating crickets not the least of which is the smaller environmental 🌎 footprint as compared to beef 🥩 🦗I’ll direct you to their website for more information on that front. . .This is NOT a sponsored post. MEAL-PREP . Thai Green Curry 🍜 . Colder❄️ weather = warmer🔥meals . INGREDIENTS . 4 palm fulls of either edamame beans/quorn/tofu . 150g Mangetout chopped . Aubergine chopped . Handful peas . Cauliflower rice (frozen packet) and uncle Ben's wholegrain rice . 4 tsp Thai Green Curry paste . Tin coconut milk . Garlic and chilli seasoning . METHOD . Heat oil in a pan and add the aubergine. Make you own cereal bars 😋 When I have a spare 5 minutes (so about once a month), I try and wizz up some cereal/snack bars so we can avoid buying expensive processed ones in plastic. These are based on a recipe from minimalistbaker but I did go freestyle a bit. As the garden season wraps up, I’m left with a seemingly endless supply of Swiss chard, a basketful of tomatoes, a bag of dried garlic, heaps of fresh herbs, and a clump of onions waiting to be heaved from the soil. Instead of meal planning the usual way, where one chooses a few recipes and shops for ingredients accordingly, I like to take stock of the foods I have and turn them into a meal. This summer, much of my “meal planning” has revolved around Swiss chard, with my latest use for it going into this Jamaican curry sweet potato soup. It’s super seasonal and uses some of the veggies that ripen on the cusp of summer and fall. I posted more on my blog, but here’s the recipe for convenience: ••• Ingredients 1 tbsp coconut oil 1 yellow onion, diced 1 green pepper, diced 4 garlic cloves, diced 2 medium tomatoes 1 tablespoon curry powder 1 tsp sea salt 1/2 tsp cumin 1/2 tsp cinnamon 3 cups (or 2, 15 oz cans) chickpeas, drained and rinsed 2 medium sweet potatoes, diced 2 medium carrots, diced 4 cups vegetable broth 1 handful stemmed and diced Swiss chard 1 cup full fat coconut milk (optional) fresh herbs (thyme or cilantro are my favorites) ••• Directions Heat the oil in a large pot over medium heat. Add the onions and green peppers and cook until the onions are tender and translucent. Add the garlic and stir frequently, for about one minute. Add the tomatoes, curry, sea salt, cumin, and cinnamon, and stir for about 5 minutes, or until the tomatoes release their juices. • Add the chickpeas, sweet potatoes, carrots, and vegetable broth. Bring to a boil over medium heat, reduce to a simmer and cook for 20-25 minutes, or until the sweet potatoes and carrots are tender. • Remove half the soup and partially puree it with an immersion blender or countertop blender. Return it to the pot and add the Swiss chard. Simmer for 5 minutes until the greens are soft, then add the coconut milk, stir well, and garnish with herbs from the garden. If the soup is too thick, add more broth until you’re happy with the consistency.

"I lost 15 lbs in 2 weeks!" 🏆⁣ ⁣ I heard this the other day and first of all, congratulations on losing 15 lbs in 2 weeks. That's a great start on a new health and fitness journey.⁣ ⁣ ❌But (there is usually a but with these claims) once I dove a little further in, this dieter had cut out all carbs (vegetables, pastas, breads, grains, etc). This is a quick way to lose "weight." For every one gram of carb stored in your body there is approximately 2-3 grams of water retained. So when you cut out carbs, you are going to lose quite a bit of water weight. ⁣ ⁣ While it's great to lose weight, before you start any type of diet, please ask yourself this question: ⁣ ⁣ 💥"Can I sustain this way of eating for the rest of my life?"💥⁣ ⁣ If the answer is no, then move on to something else as you are going to lose a lot of valuable time and money. Take the above "diet" for an example. Could this person go the rest of their lives and never have another vegetable, or a piece of bread, or pasta, or beans, or cereal, or ice cream......the list just keeps going. So while you could lose a lot of weight doing something this dramatic, it's not sustainable and you'll find yourself putting all of that weight back on, plus a little more. ⁣ ⁣ ☑️Find an eating style that fits your lifestyle. An eating style that you can easily sustain for the rest of your life. You DON’T need to cut sugar and bread to be healthy and hit your goals🍦🍭🥖 ⠀ ⠀ ⠀ Seriously, hearing about all these cleanse diets and fads makes me roll my eyes SO HARD 🙄 ⠀ I’ve been there, I’ve tried them all, and not one of them will give you the sustainable results that you are looking for. ⠀ Never eating carbs or sugar is NOT natural, sustainable, or good for you in the long run (we SURVIVE on carbs… carbs are 1/6 essential nutrients. Why would you eliminate that??) ⠀ ⠀ Here’s what you SHOULD focus on: abundantly eating fresh, whole plant foods.🥬🍅🥑🥦🍌🥥🍓 ⠀ If it’s not available to you and you need to eat? No problem. Have the bread or pasta, ENJOY IT, and then promise yourself to fill up on nutrient dense fruits and veggies later. ⠀ There’s no need to feel shame for needing to fuel yourself, and there’s also no need to make that your one and only habit. ⠀ You are capable of making conscious choices every time you eat. ⠀ Sugar addiction can be a real thing, but don’t get processed bleached white sugar confused with natural sugars in fresh fruits. They are NOT the same! ⠀ Fruits are amazing sources of fiber, vitamins, minerals, and energy that we need to sustain our day! Fiber aids in sugar digestion: this is why a piece of candy feels different than an apple or mango.🍎🥭 ⠀ Bread is another great source of most essential nutrients. 🥖 It shouldn’t be your ONLY source, but it is good fuel. Choose Organic Multigrain or Sourdough bread instead of Wonderbread.🍞 ⠀ Sustainable habits aren’t built overnight. Allow yourself patience and time to adjust, but stay strong in planning for success.
