So I made this one with regular flour and some healthier subs, going to try with cassava next! Recipe: For the batter: 1 3/4 cup all purpose flour 1 t baking soda 2 t cinnamon 1 t pumpkin pie spice 1/2 t salt 1/2 cup coconut oil 1 cup coconut sugar 1 1/2 cup pumpkin puree 2 eggs 1/4 cup soy milk Crumb top: 3/4 cup flour 1/2 cup coconut sugar 1 t pumpkin pie spice 6 T coconut oil Optional icing: 1.5 cup confectioners sugar 2 T maple syrup 1 T soy milk 1/2 t cinnamon Bake 425° for 5 minutes then reduce heat to 350° and bake for 16-17 minutes. ✌🧡 thehintofrosemary

There is something so cozy about the air getting cooler and the nights a little darker 🍂🍁 No-Bake Mummy Cookie Dough Balls with 🍷chocolate For the dough: Food process: 1.5 cups raw cashews, soaked overnight 6 dates, soaked ~15 mins 2 flax eggs (2 T ground golden flax seed + 4 T water) 1/2 cup almond butter 1/8 cup cacao nibs 1/4 t sea salt 1 t vanilla extract Roll them into balls (I made ~16 aside from eating some 😹) & refrigerate ~2 hours to firm up. Worcestershire sauce-- say it 5 times fast 🤔 Hope everyone had a great weekend and Happy Thanksgiving to my Canadian friends 🇨🇦 Spent the weekend recipe testing and went for a drive to Western NY with my man, hope you all enjoyed the upstate NY pics 😊🍁🍂🌲 Pumpkin Mushroom Stroaganoff Ingredients: 2 T coconut oil 🥥 6 oz mushrooms, sliced 🍄 1 yellow onion, diced Salt & pepper to taste 1# lean organic ground beef 6 cloves fresh garlic, minced 1 t dried thyme 3 T flour 1/4 cup dry red wine 🍷 4 cups beef bone broth 2 T Worcestershire sauce 1 T dijon mustard 8 oz noodles (got mine at the farmers market made of spelt) 1/2 cup pumpkin puree 🎃 1/2 cup plain Greek yogurt 2 T fresh parsley Directions: 1. In a large stock pan, saute the mushrooms & onions in the coconut oil till soft. 2. Add the beef and cook till browned. 3. Stir in garlic & thyme. Cook till fragrant. 4. Quickly whisk in the flour. 5. Stir in the wine. Making sure there are no flour chunks. 6. Stir in the stock, Worcestershire sauce, mustard, dijon, and noodles. 7. Season with salt & pepper and simmer ~ 10 mins. 8. Fiber not only feeds your good gut bacteria but it can also bind excess estrogen and pull it out of your body! 💩💩💩 Chili recipe: 1 T coconut oil 1 diced onion 1 green bell pepper 1 jalapeno (seeds removed) 1 pound lean beef (sub out of vegan) 1/4 cup tomato paste 2 28oz cans crushed tomatoes (bpa free ) 2 cups black beans 2 cups kidney beans 2 cups broth 2.5 T Cumin 2.5 T Chili powder 1 t garlic powder Salt to taste (I did ~1 T) Directions: Sautee the onion & peppers in coconut oil Add the ground beef and cook until ground Stir in the tomato paste quickly Srie in the crushed tomatoes, beans, broth, and spices. Happy Monday!! Back from a mindful weekend (well a weekend of some recipe testing 😹) We are keeping all the fall colds away with some lycopene and vitamin C rich tomato soup. Did you know that your body can process the nutrients from tomatoes better when they're cooked ?! 😻😻😻 Ingredients: 1 diced onion 1 T coconut oil 🥥 3 cloves minced garlic (Saute onion & garlic in oil until soft) Add 2 cups broth 1 28oz can diced tomato 🍅 1 bay leaf Sea salt and pepper to taste Cover and let simmer. Saute the onion & celery till soft 2. Add the pumpkin & squash chunks along with the broth, thyme, salt & pepper. 3. Cover and cook ~4 hours (I used an instapot-- you can also use a slow cooker or a regular stove top pan on low heat) 4. I mean I'm grateful bc a longer time between periods is better imo 😂 My skin has been pretty clear, no more jawline acne.
