Keralan chicken 🌶 My first post was a picture of my Keralan chicken curry, which I had promised to share and never got round to doing. I felt the recipe needed tweaking but for a long time, I couldn’t put my finger on what it was. Keralan curries are HOT and rich with the flavours of South India - peppery, coconutey, creamy & spicy. Finally after much pondering, I replaced my usual ripe chopped tomatoes with tinned chopped tomatoes to help enrichen the colour. Usually I don’t think tinned tomatoes are sweet or mild enough in the UK but for a dish as flavoursome as this one, they are ideal. Then I replaced coconut milk with creamed coconut to balance out the heat from the chillis & maximise the creamy texture. And so finally, I’m very happy with it and I can finally share it with you lovely humans on this rainy Sunday when you might be looking for something hot and comforting for dinner! 💜 . Keralan Chicken Curry (serves 5): . ⬅️SWIPE FOR INGREDIENTS⬅️ . 1. Marinade the chicken in the marinade ingredients for at least 2 hrs. 2. Make the paste: in a small frying pan, toast the paste ingredients in 1 tbsp vegetable oil over a low heat for 5 mins then blitz with 60ml water until completely smooth. 3. In a heavy based pan, heat oil over a medium heat. Add the green chilli + curry leaves. Fry for 30 secs. Add onion with ½ tsp crushed black pepper + pinch of salt. Fry the onions for 10-15 mins until soft + golden. Add water to deglaze if necessary. 4. Add the tomato + let it bubble for 3 mins followed by the spice paste. Stir thoroughly to combine + cook for another 5 mins whilst it thickens. 5. Add the marinaded chicken to the pan + over a medium-high heat, fry on all sides until the meat is sealed and slightly golden (approx 7 mins). 6. Pour the hot kettle water (cold water can make the meat go tough), stir + cover. Simmer on a low heat for 20 mins. Add more water if the gravy thickens too quickly as it cooks. 7. Once the chicken has cooked through, season with ½ - 1 tsp salt + add the creamed coconut. Simmer for a further 10 mins with the lid off. 8. When ready to serve, garnish with coriander + a pinch of chilli flakes. Enjoy with rice and parathas 😋

De volta das férias, mas com um tempinho para vos deixar mais uma receita no blog, antes de voltar à rotina.⁠ Desta vez partilho um assado de curgete e tofu. Para fazer este prato, coloquei numa forma, 2 camadas de curgete e tofu fatiados e sobrepostos, cobertas por um molho de tomate com muito sabor, que se deve à adição de algumas especiarias, raspa de limão, e uma quantidade generosa de cebola e salsa. O molho, reduzido e concentrado em sabor, foi bem espalhado sobre as camadas e, levei tudo a assar, durante quase 60min, parcialmente coberto. Durante a confeção, a curgete libertou bastante líquido, contribuindo para que, no final, o assado não ficasse seco e os sabores do molho de tomate se dispersassem.⁠ Tendo em conta a versatilidade da receita, encorajo a ajustarem ao vosso gosto, e a adicionar os legumes que tiverem em casa. O acompanhamento também deixo ao vosso critério, embora um arroz solto, embebido no molho do assado me soe bastante bem. 😉 ⁠ ⁠ Assado de tofu e curgete⁠ 2 porções | Tempo: 60 min | Dificuldade: 1/5⁠ Ingredientes:⁠ 250g (1 bloco pequeno) de tofu⁠ 1 cebola, cortada em fatias⁠ 1 colher de sopa de azeite⁠ 2 dentes de alho, picados⁠ 4 tomates maduros, pelados e cortados (ou 1 lata de tomate pelado/picado)⁠ Raspas e sumo de ½ limão (pequeno)⁠ 1 colher de chá de cominhos⁠ ½ colher de chá de coentros, moídos⁠ Uma pitada de sal e pimenta preta⁠ 2 curgetes pequenas, cortadas em fatias⁠ Salsa⁠ ⁠ Procedimento:⁠ 1. Coloque o bloco ou fatias de tofu entre dois panos de cozinha ou folhas de papel absorvente, e disponha um peso por cima (pratos, por exemplo), durante 15 minutos, para absorver o excesso de água. Corte o tofu em fatias e tempere com uma pitada de sal e pimenta preta.⁠ 2. Numa frigideira, refogue a cebola no azeite, durante 5 a 7 minutos, até ficar bem macia, mexendo frequentemente. Junte o alho. Reduza o lume e adicione o tomate, raspa e sumo de limão, sal, pimenta e especiarias. Deixe cozer em lume brando até o tomate ficar reduzido a molho, cerca de 15 minutos. (Se o molho de tomate ficar com pouco líquido, não há problema, pois a curgete vai libertar bastante água durante a confeção). Reserve 2/3 deste molho.

Cinnamon rolls happen only once or twice a year for me and they usually only mean one thing! Since it isn’t Christmas, that means it’s my gentleband’s birthday! I don’t know what it is but I’m just not the biggest cinnamon fan but Jared is! Every time I make them I always do a slight variation, this time I used magnoliakitchen’s brioche dough and I had some left over brown sugar pop tart filling and of course, brown buttah. The dough truly was the best!

Age like a fine wine they said... I had a quite disappointment back when I first purchased Two Islands wine at FHI 2019, where they gave me the sample wine instead a new one. Steamed veggie dumplings🔥 One of my favourite dim sum dishes, I am almost half dumpling at this point and i know for a fact this batch wont be around for very long The dough is gluten free and made with a mix of cassava flour and almond flour (really trying to get my moneys worth out of that cassava) It was quite a fiddly job to make but really therapeutic and damn worth it Dough: 1 1/4 cup cassava flour 3/4 cup almond flour 2 eggs Salt Filling: 1 large carrot, finely chopped Mushrooms, finely chopped (i used around 5) Green cabbage Broccoli stems finely chopped (trying to use up left overs) 1 tbsp coconut aminos 3 cloves garlic, minced 1 tsp ginger Lime juice Mixed herbs 1tbsp tomato paste Combine all the dough ingredients and bring together into a ball. Let the dough sit and make filling. Simply sautee all the ingredients in a pan with a lil but of oil. The dough should feel quite tacky and hold together well. Between two bits of baking paper roll it out so its relatively thin but still easy to handle. Use a round cookie cutter to make circular shapes. A great weeknight meal to add to your repertoire. It’s another one-pot wonder. I tried this dish from the ‘17-minute meals’ cookbook from taste_team It was an absolute winner and so so easy! The kids ate it in record time which means this little number will be on high rotation for a while 🙌🏼 . . RECIPE: One - pot chicken and ricotta meatballs - Serves 4 Cook and prep time: 17 minutes INGREDIENTS: 550g chicken mince 250g fresh ricotta 1/3 cup parmesan 1 lemon rind and juice, grated finely 2 green shallots,1 chopped finely the other chopped for garnish 2 garlic cloves, crushed 3 tablespoons extra virgin olive oil 400g tin of tomato puree 400ml chicken stock - homemade or good quality 3/4 cup of rice or rissoni A handful of parsley to serve METHOD: 1. Combine in a large bowl chicken mince, ricotta, parmesan, lemon zest and juice, 1 shallot and garlic. Mix well to combine and evenly roll into 12 balls. 2. In a large fry pan heat olive oil and add the meatballs, leave meatballs to cook for 2 minutes and then turn over to brown on the other side. 3. Add tomato puree, chicken stock stir around and add rice into frypan making sure it is all submerged into liquid. Put lid on a jar and cook for 10 minutes or until rice is cooked. To Serve: Sprinkle with extra shallot and chopped parsley You could also use cannelloni beans instead of the rice or pasta.

Вот как всегда: проснешься , за окном солнышко, телефон пишет «доброе утро», следом подкрепляет - «на улице +20». Ну и резко настроение такое радостное: покорить мир, спасти кого нибудь , ослепить красотой, в общем, прорва интересных и захватывающих дел сразу. Ввиду вышеупомянутого сразить кого либо красотой практически невозможно потому что: можно не рассчитать эффект и кого то случайно убить. Одним взглядом. Коньюктивит это вам не насморк. В общем, пока я искала костюм девочки бэтмена или супервумен, то меня резко зазнобило, нос эпично заложило , телефон напомнил, что пора капать в глаза антибиотик, а следом написал, что через час я записана к врачу. Мир конечно же никуда без меня не денется, да и кому нахрен я нужна?! 🤪🤦🏼‍♀️😈 Пойду в общем спасу себя и посмотрю на мир глазами, полными антибиотика 👀 а светлое будущее, если верить геолокации, где то в 37 км от меня 🤔🙄
