I am in love with these patties lately. I sometimes make it in the tuna version or the salmon version. The weather has turned colder and I am now wanting warmer foods. These are convenient, quick, and super delicious! I like to combine them with sauteed okra (Recipe in the recipe highlights) and sliced cut up veggies like cucumbers or peppers for a nutritious and quick breakfast. A quick breakfast gives me more time to breathe and eat intentionally thereby keeping my body digesting me the ability to both enjoy the food and digest it better. Tuna or Salmon patties 1 can tuna or 1 can Wild Caught Salmon 2 T. Mayo 2 T. Sauteed onion 2 T. Ground flax meal Season to taste. My mayo was seasoned with salt and pepper so it didnt need anything else. Note: Blooms came out with a can of easy onions sauteed in extra virgin olive oil. I love it, it's so convenient. I open a can, use whatever I need, and store the rest in a container in the fridge. That way I always have sauteed onions handy. Alternatively, you can prepare a batch of sauteed onions and freeze them in ice cube trays and then transfer to ziploc bags for convenient storage and retreival. Also, this is a great way to use leftover salmon from Shabbos 😊. A note on tuna: since most tuna is packed in cheap, unhealthy oils, I suggest buying the tuna packed in water and as you see the recipe has mayo so it's not dry at all. The mayo I use is homemade made out of avocado or olive oil. So I was in the mood for salmon patties but I don't have any Salmon🐠... So I made tuna🐟 patties...and ya know what?! They are yummy. Here's the deets⬇️ .. I used 3 cans of albacore tuna. Charlie's tuna patties! Boil 1/2 a cubed sweet potato until very soft. Drain and mash with a small can of drained tuna in water, 1T ground flaxseed, squeeze of lemon juice, 2T almond meal, 2T vegan parmesan, sprinkle of fresh parsley. Shape into small patties and lightly fry in coconut oil or bake in the oven til golden. For example if one day they say that tuna fish would disappear forever and I have just ıne chance to eat it one last time, I guess I wouldn’t eat it. Maybe I would eat as everyone eats, I don’t know. Tuna patties 🐟 ° 220g tuna (2 cans) 100g rolled oats 2 eggs 100g greek yogurt 1-2 tbsp olive oil 1-2 tsp mustard or pesto Salt, pepper, fresh parsley ° Mix everything together except rolled oats, mix them in last. Let the mixture sit for 10-15 minutes. Turn on the stove and add some coconut oil in the pan. Since the mixture is going to be pretty sticky, I wouldn't recommend shaping patties with your hands, but rather shape them directly in the pan with the help of two spoons. After placing the scooped mixture into the pan, use a spoon to flatten out the round patties out. After few minutes, you'll be able to easily flip them over to brown the other side as well. In a separate bowl, combine Parmesan cheese, bread crumbs, tune, mustard, onion, celery, black pepper and dill. Pour in egg/lemon mixture. 2. Sunday Meal Prep Mom’s Tuna Patties: 2 cans albacore tuna (drained) 1/4 cup diced bell peppers 1/4 cup diced onion 1/4 cup plain bread crumbs 1/4 cup fat free milk 1 large egg 1 tbsp olive oil Sauté onion and bell pepper in 1/2 tbsp oil. Combine with all other ingredients. Pan fry in 1/2 tbsp olive oil for 5-7 minutes each side (personal preference on doneness). I use 2 tbsp for each party.
