🍎🍏 APPLE CRUMBLE PIE 🍏🍎 I love apple pie! And this one is the best! 😍 Strait out of the oven it tastes like heaven🍁 . Ich liebe Apfelkuchen und dieser ist besonders gut! 👌 Direkt aus dem Ofen schmeckt er himmlisch. Teig/Streussel: 100g gemahlene Mandeln 250g Buchweizenmehl 150g Kokosnussöl 2dl Mandeldrink 2 EL Kokosblütennektar 60g Dattelzucker 2 TL Backpulver 1 Prise Salz Füllung: 7 Äpfel Zimtpulver Für die Füllung zuerst die Äpfel in Würfel schneiden und 2/3 davon mit etwas Zimt aufkochen und im Mixer pürieren. In der Zwischenzeit alle trocken Zutaten vermischen, das Kokonusssöl schmelzen, den Nektar, das Kokosnussöl und Mandeldrink hinzufügen und alles zu eine bröckeligen Teig zerkneten. 2/3 davon auf einem mit Backtrennpapier ausgelegt Blech, gleichmäßig verteilen und zu einem festen Boden andrücken. Die restlichen geschnittenen Äpfel darauf verteilen, mit dem Apfelmus ausfüllen und den restlichen Teig drüber bröseln. Ab in den Ofen und bei 180° Umluft ca. 40min backen. We roasted the cauliflower on a baking tray with olive oil, garam masala, turmeric, oregano, and seasoned salt and THAT was the ‘hard’ part. 350 degrees for about 25 minutes and Bob’s yer drag queen. Christmas has finally arrived in our house! I decorated our tree and made this Vegan Chocolate Cake with Chestnut Buttercream this weekend. I’m finally feeling very festive! We also went and saw Last Christmas at the cinema but it wasn’t a Christmassy film at all. It was kind of sad and random to be honest. Have you seen it? What did you think?⠀ *Easy Vegan Chocolate Cake:*⠀ *(makes a 20cm / 8" 2-tier cake or 15cm / 6" 3-tier cake)*⠀ ·  1 1/2 cups unsweetened almond milk⠀ ·  2 tsp apple cider vinegar⠀ ·  1 1/4 cups unsweetened applesauce⠀ ·  1/3 cup coconut oil, melted⠀ ·  2 tsp pure vanilla extract⠀ ·  2 heaping cups wholemeal spelt flour⠀ ·  1 cup coconut sugar⠀ ·  1 cup unsweetened cocoa powder⠀ ·  2 tsp baking soda⠀ ·  1 tsp baking powder⠀ ·  1/4 tsp salt⠀ *Dairy-Free Chestnut Buttercream:*⠀ ·  2 cups chestnut puree⠀ ·  2/3 cup coconut cream ·  1/3 cup + 1 Tbsp coconut sugar, ground into powder⠀ ·  1 cup vegan butter, softened miyokoscreamery *Method:*⠀ 1.  Preheat the oven to 175°C and grease three ø 15cm (6") baking pans with vegan butter. Dust them with cacao powder and shake out the excess. Set aside.⠀ 2.  For the chocolate cake, add the almond milk and vinegar to a bowl and set aside.⠀ 3.  In a separate bowl, sift together the flour, coconut sugar, cacao powder, baking powder, baking soda and salt.⠀ 4.  Add the applesauce, coconut oil, and vanilla to the milk-vinegar mixture and whisk until foamy using a (stand or) hand mixer.⠀ 5.  Then, add the flour mixture to the wet ingredients and whisk until well combined.⠀ 6.  Evenly divide the cake mixture between the prepared baking pans and bake at 175°C for 20 minutes (place them on middle rack in oven).⠀ 7.  While the cakes are baking, add all ingredients for the buttercream to a glass bowl and whisk on high until soft and creamy. You don’t want any lumpy butter, so keep whisking until it’s fully combined!⠀ 8.  Transfer the buttercream to a piping bag and set aside.⠀ 9.  Once the cakes are baked and fully cooled down, assemble them by piping buttercream between each layer.⠀ 10. Decorate cake with remaining buttercream and enjoy.

Bibimbap is a Korean dish of mixed ingredients (“bibim”) and rice (“bap”). Typically this includes vegetables and meat. I’ve replaced the meat with a crispy Korean-marinated tofu crumble & added quick-pickled vegetables, roasted sweet potatoes & shiitake mushrooms. The rice is crisped for one of the most satisfying dishes you'll find.🌱 . . The recipe is below, but if you want to learn about bibimbap, why I 😍 Lotus Foods and why I simmered my mushrooms (foodscience), check out my blog post.🌱 . . ➡️ Sweet Potatoes: [2 lg. sweet potatoes, washed and diced; 1 T. high temp oil; S&P.] Preheat to 450. Spread potatoes on a baking sheet. Toss with 1 T. oil and season with S&P. Roast ~20-25 mins. until crispy, stirring 1/2 way.🌱 . . ➡️ Pickled Veggies: [1 cucumber, washed & sliced; 1 carrot, washed & peeled into slivers; 2-3 red radishes, washed & sliced; 1 c. apple cider vinegar; 1 T. maple syrup; 1 t. salt]. In a saucepan, combine apple cider vinegar, maple syrup & salt. Bring to a boil until salt is dissolved. Pour over the veggies. Set aside. 🌱 . . ➡️ Tofu Crumble: [2 10 oz pkg. extra firm tofu, drained & crumbled; ½ c. tamari; 1 T. maple syrup; 1 t. toasted sesame oil; 2 cloves garlic, crushed; 1 T. fresh ginger, minced; ½ t. black pepper; 1 t. gochujang sauce; 2 scallions, washed & sliced thin]. Drain tofu & crumble. Press tofu in a clean towel to reduce water. Combine tamari, maple syrup, sesame oil, garlic, ginger, pepper & gochujang. Heat a skillet, add tofu & marinade & sauté (with limited stirring to encourage crisping ~6-8 minutes).🌱 . . ➡️ Mushrooms: [20 shiitake mushrooms, washed & sliced; 1 T. toasted sesame oil]. Do you love curry as much as I do? I cannot get enough of these quick, warming and satisfying curry bowls. This one is super basic but the flavor and texture is on point. 👉ALOO MATTAR - CURRY POTATOES AND PEAS, BASMATI RICE AND CILANTRO 🤘ALOO MATTAR RECIPE 1. Start with the trinity- 3 cloves garlic, 2 inch nub fresh ginger and 1/2 a yellow onion all chopped fine and sautéed in some neutral oil like olive or avocado until fragrant and toasty 2. Add 5 cubed potatoes and 2 diced tomatoes to pan and season with salt. Cook til tomatoes are releasing juices and then add 2 cups water. Bring to a boil and cover, cooking for 10 mins until potatoes are fork tender 3. Add 1/2 cup peas, 1T garam masala, 1 tsp turmeric, 1/8 tsp cumin, 1/8 tsp cayenne, 1 pinch crushed red pepper and 4 tsp tomato paste 4. Simmer 5 more minutes to incorporate flavors. Add a little more water if needed to loosen the gravy. 5. Finish with fresh ground black pepper and cilantro. This is the perfect hearty bowl to warm your soul and fuel your busy day. My to do list for December is daunting but I will be sure to get in some down time today. Hope you do the same!

Recipe below: Follow vegspirationfeed for daily vegan recipes 🌱 Recipe: 3 cloves minced garlic 1-2 tsp grated ginger 3 scallions, thinly sliced 3 cups lacinato/dino kale, stems removed, finely chopped 5-6 shiitake mushrooms, stems removed, finely chopped 3 cups cooked and cooled rice (best is day-old rice from the fridge) 1 tbsp hoisin sauce 1 tbsp soy sauce 1 tbsp sesame oil Heat 1 tbsp oil in a non-stick pan until shimmering, then add garlic, ginger, and scallion and sauté until fragrant. Add chopped kale and mushrooms and cook for 3-4 minutes until kale is crispy. Add another 1 tbsp of oil and then the rice, breaking up clumps and stir-frying until golden, about 2 minutes. Add the hoisin sauce, soy sauce, and sesame oil, and mix until combined, then taste and season with additional salt and pepper as desired. Vegan Gingerbread Cake!!! Wonderfully spiced, caramel undertones and melts in your mouth. This cake is THE definition of Christmas. It's like a hug from your inside and out🙇‍♀️. Here's the recipe lovelies (see my blog for a more detailed recipe): . VEGAN GINGERBREAD CAKE Dry ingredients 2 1/2 cups self-raising flour 2 cups organic brown or coconut sugar 2 1/2 tsp baking powder 3 tbsp ground cinnamon 3 tbsp ground ginger 1/2 tbsp ground nutmeg Pinch of any good-quality salt . Wet ingredients 2 cups plant-based milk 1 cup sunflower oil 2 tbsp apple cider vinegar 1 tbsp vanilla extract . Frosting 1 1/2 cups vegan butter, chilled 3 cups powdered sugar 1 tbsp vanilla extract . To decorate (optional) Gingerbread people Sugared cherries . To make the cake: 1. Preheat the oven to 160°C (320°F). Line 3x20 cm (8 inch) cake pans with with baking paper. 2. Add the dry ingredients to a stand mixer and mix. Add all the wet ingredients and mix until combined. 3. Divide the cake batter into each cake tin. Bake for 35-40 minutes or until a skewer can be inserted into each cake and it comes out clean. Allow the cakes to cool in the tins then turn them out on a wire rack. . To make the frosting: 4. Add the vegan butter to the mixer with the whisk attachment. Beat on high for 3 to 5 minutes until the butter has increased in size. 5. Add the powdered sugar and vanilla to the mixer. Beat until the buttercream is light and fluffy. . To assemble: 6. Slice the domes off the cakes, ensuring each is as flat as possible. 7. Assemble the layers and buttercream as desired. 9. Place gingerbread people and cherries on the cake as desired. Serve immediately.

Recipe below: Follow vegspirationfeed for daily vegan recipes 🌱 125g pasta of choice 1/2 medium onion, chopped 1 medium carrot, peeled and chopped 100g mushrooms, chopped 2 tbsp tomato paste 1/2 tsp cumin 1/2 tsp garlic granules 1 can red kidney beans, drained and rinsed 1/2 can chopped tomatoes, chopped 1 tbsp tamari Black pepper to taste Cook the pasta according to packaging instructions. Meanwhile, add the onion and the carrot to a non-stick frying pan and cook for 3-4 minutes, until softened. Then, add the mushrooms and cook for a further 2 minutes. Add the tomato paste, cumin, and garlic granules and stir to coat the ingredients, then stir in the kidney beans together with the chopped tomatoes, tamari and black pepper. Heat oil in a large pot over medium heat and add the garlic, all veggies, potatoes, and spices (onion powder, oregano, marjoram, red pepper flakes, salt, and pepper). Saute for about one minute. 4. Pour in the vegetable broth (or water) and bring the soup to a boil. Add the bay leaves (optional). 5. Let the soup simmer for about 10 minutes, then add the white beans and coconut milk. Simmer for a further 5-10 minutes. 6. Pour a part of the soup (e.g. half of it) to a different pot. Take out the bay leaves (if you used them). 7. Blend this part using an immersion blender until it's smooth. You can also blend the soup in a regular blender. Make sure to work in batches and not to overfill the blender. 8. Pour the blended soup back to the large pot and stir to combine. If you want to have an even thicker soup/chowder, you can blend all the soup. 9. Taste and adjust seasoning. Add more salt/pepper to taste and red pepper flakes to add more heat. 10. Garnish with fresh herbs (e.g. parsley), and enjoy. Serve with bread or toast. . Who’s baking this weekend? 🙋🏽‍♀️ And who’s eating baked goods this weekend? 🙋🏽‍♀️ If you fall into the former camp, you should really get your bake on with this giant Cinnamon Roll Cake. And if you fall into the latter camp, you should ask/beg someone else to make this cake for you. Truly one of the best cakes I’ve ever made (and I don’t say that lightly because I’ve been baking for half my life). ⁣⁣ ⁣⁣ it’s buttery yet light, rich yet fluffy, so it’s basically everything you’d want in a cake.
