Beige is beautiful. Tonight I had a vivavivera escalope which I used as a “chicken” burger, with avocado, spinach & vegan mayo. Had with oven baked buffalo cauliflower, homemade regular & sweet potato fries, beans & sweetcorn. Roasted Cauliflower Curry🌿🍃 Hi Friends! I'm excited to share this oldie but goodie, that's so satisfying and tasty. I was in the kitchen a lot this weekend cooking up some comfort food for the holidays, and can't wait to share with you! 💚 . 1 T oil 1.5 cups finely chopped onion (can use frozen) 4 large carrots small diced 1 head cauliflower chopped into bite size chunks 1.5 cups cooked lentils 1.5 teaspoons each salt and pepper 1/2 teaspoon oregano 2 T garlic powder 1/4 teaspoon each ginger and cinnamon 5 1/4 teaspoons curry powder 4 1/4 teaspoon each ground cumin and chili powder 1/2 pint sliced cherry tomatoes 1 28 oz. can crushed tomatoes 1 can chickpeas drained and rinsed 1 can coconut milk (I used full fat) Cilantro for garnish 🌿🍃 Add oil to large pot over medium heat and add onions, salt, pepper and carrots. Separately roast cauliflower in 400 degree oven for 15-20 minutes until browned and fork tender. For onion and carrots, cook covered for about 10 min, stirring often and add a bit of water to prevent burning if needed. Then add all the spices and cherry tomatoes, stir, cook for 3 more minutes. Add crushed tomatoes, coconut milk, lentils, chickpeas and cauliflower...stir. Cook uncovered at a medium-low simmer for about 10-15 minutes. Top with cilantro. I found a perfect match for aubergine curry by chetnamakan . It is my orange infused rice. Together its delicious. For the rice: 200 g basmati rice 1 big red onion thinly sliced 1 cinnamon stick 4 cardamom pods 4 cloves 100 ml of coconut milk 300 ml fresh orange juice with the pulp Pinch of salt 1 tsp of maple syrup (optional) Wash the rice multiple times, then soak in cold water while preparing the rest. In a deep frying pan that has a lid heat up a table spoon of sunflower oil. When hot are cinnamon, cloves and cardamom. Roast till aromatic, then add an onion and fry till its soft and golden. Drain the rice and add it to the pan. Pour in coconut milk and orange juice. Stir well and bring to the boil. Cover and cook under low heat for 15 minutes. Do not open the lid, while its cooking. Let it rest for 5- 10 minutes before serving. Add a splash of maple syrup if necessary ( depends on the oranges). Omg this was so good! I made some roasted brussel sprouts with red onion and garlic and then drizzled balsamic vinegar on top. Then I roasted baby tomatoes, cauliflower, and bell peppers. Then I made some 4 veggie green noodles. 🇺🇸Miso soup Ingredients for one person: ▫️500 ml of vegetable broth ▫️100 gr of tofu ▫️3 mushrooms ▫️10 gr tender garlic ▫️2 tsp miso paste ▫️sesame seeds ▫️85 gr of noodles (I used sweet potato noodles) Let the vegetable broth to boil and then add the diced tofu and boil it for 10 minutes. Chop the mushrooms and the tender garlic, add it to the broth and let it cook for 5 minutes more. Then add the noodles and cook it accord to package. My journey to gain weight has been frustrating. I’ve been reluctant to talk about it, but I’m hoping that by sharing this I will open up a conversation for anyone that may be struggling or seeking answers for themselves. . I saw a doctor yesterday, & I’m incredibly disappointed. He offered no useful insight & was instead fixated on my vegan diet. He would not believe that my weight loss is unintentional & didn’t recognize or hear my emotional pain. The experience deepened my feelings of loneliness & invalidation. Don’t get me wrong... I have incredible support from my coaches, team, family & boyfriend that I am extremely grateful for. But this experience has been isolating. I step on the scale certain that I’ve finally made progress only to see the number drop once again. No amount of support can cushion that defeat. . I have searched the internet daily for answers & every “how to gain weight” search results in 400k “why you gained weight” & “how to lose weight” articles. It seems like I am the only person on earth trying to GAIN weight responsibly which isn’t true!!! Why do we feel the need to tiptoe around this subject? Why are we so afraid to speak up? . Refogue a cebola e o alho no azeite, acrescente a abóbora, o sal e reserve. Bata as folhas de hortelã com o limão no liquidificador e reserve.
