Follow @vegancuts for more vegan inspiration🌱 . Ingredients 2 heaping tbsp (30g) chia seeds 1 cup (240 ml) almond milk 2 tsp (10 ml) maple syrup (or sweetener of choice) fresh fruits of choice, for topping (I used berries) . Method 1. In a bowl combine chia seeds and almond milk. Whisk together with a fork, then wait a couple minutes and whisk again (this will stop the chia seeds from clumping). Add maple syrup and whisk again to combine. 2. Cover and transfer to fridge. Allow chia seeds to absorb liquid mixture for at least 10 minutes, or until thick pudding consistency. 🌿🍃 Tofu, Noodle & Veggie Bowl! 📷 by @janetsmunchmeals Recipe: 2 to 3 servings Saute 1 block tofu cut in 1cm cubes, and a small package sliced shiitake mushrooms in bit of oil, browning on a few sides. Roast a small bag of brussel sprouts (cut in half) and bundle of asparagus (tough bottom end trimmed off). Chop half of a seedless cucumber. Dressing (2-3 servings): Blend the following - 2 T rice vinegar - 1 T sesame oil - 3 T avocado oil - 1 T coconut aminos - 1.5 tsp grated fresh ginger - 1 garlic clove - 1 nectarine* - 1/8 tsp each kosher salt and pepper * cook 1 diced nectarine over medium-low heat with a dash of water for about 3 to 5 minutes covered, until very soft. Plate all the veggies over baby spinach or other greens, along with a bit of noodles. Drizzle dressing over top. Top with red chili flakes and fresh mint. Vegan Coconut Curry Noodles by @lindseyeatsla Another simple vegan recipe with lots of flavor. Ingredients: 2 1⁄2 -3 cups of assorted mushrooms 13.5 fl oz canned coconut milk (about 1 can) 1⁄3 cup unsweetened almond milk 1/8th tsp turmeric 1/8th tsp curry powder 1/3rd cup water 1 tablespoon maple syrup 8 oz noodles 3 tsp of homemade chili paste (on the blog or you can use store bought) Salt to taste (about 1tsp) Directions: In a pot, grill and sauté mushrooms for about 3-5 minutes. Next add in your coconut milk and stir for 1-2 minutes. Add in your chili paste (adjust to taste), turmeric and curry powder. Stir. Next add in your almondmilk and water, add maple syrup as well as salt to taste. Let it come to a simmer and turn off heat. Nothing beats the smell of freshly baked pumpkin bread ☺🍞! Turn on your sound for some ASMR (which will do til social media invents a scratch and sniff button 😅). The bread had subtle undertones of pumpkin, the most divine crumb and a glorious crust. Bread is one of my weaknesses so I was thrilled to try @Panasonic_AU's new breadmaker. I just put in all the ingredients, walked away and hours later I had hot crusty bread🤤! Check out the link in my bio for more info on the breadmaker. Meanwhile, are you bready for the recipe? PUMPKIN TOAST Bread 1 ½ cups (225g) chopped pumpkin 2 ½ tsp quick yeast 3 cups (400g) plain flour ½ cup (125mL) plant-based milk, such as almond, soy or coconut 2 tbs olive oil 1 tbs coconut sugar 1 tsp salt Toppings Nut butter, yoghurt, fruit, nuts or whatever you have in your pantry 1. To prepare the pumpkin puree: Boil the chopped pumpkin in a small saucepan of water for 15 minutes or until soft. Drain the water and puree the pumpkin with a stick blender. 2. To prepare the bread: Add the ingredients to the Panasonic Hard-Crust Breadmaker in the following order: yeast, flour, pumpkin puree, milk, oil, sugar and salt. Select the ‘whole wheat function’ (number 4) on the breadmaker. The breadmaker will rest, mix, rise and bake the ingredients. 3. When the bread is ready, remove it from the breadmaker and let it cool. Use a serrated knife to cut toast slices out of the bread. 4. Nothing like a delicious bowl of Curry Wonton Soup to warm your soul on a chilly night! 🔥🌱 . Recipe by @foodie.yuki . Ingredients (servings 2) . Curry wonton soup:⠀ - 1 tablespoon vegetable oil - 1 scallion - 1 tablespoon fresh ginger, grated - 2 tablespoons red or yellow curry paste - 2 cups (450ml) vegetable broth - 1/2 cup (120) full-fat coconut milk . Toppings: - Enoki mushrooms - Baby pak-Choi - Cilantro - Spring onions, chopped - Noodles - Homemade wontons⠀ . ⠀ Preparation:⠀ 1. In a medium saucepan, heat the oil. Add the chopped scallion and sauté until translucent. Add the grated ginger and sauté for one minute, stirring. Add the curry paste and the Mirin and stir to combine. 2. Add the vegetable broth and bring to a boil. Add salt if needed. 3. Add the coconut milk and let simmer for 10 minutes. 4. Cook the noodles. You can either cook the noodles in the broth or in another saucepan and then add them to the soup. ⠀ 5. Add the baby pak-Choi and enoki mushrooms. Cook for a couple of minutes. 6. Bring a big pot of water to boil. Add the dumplings into the boiling water and cook for 3 to 4 minutes, or until the dumplings float to the top. Transfer the cooked dumplings to the pot with the curry broth. ⠀ 7. Top with cilantro and spring onions.

Strawberry Mochi 🍓 with white bean paste. Who wants a bite? 😋 . Ingredients: Mochi - 1 1/2 cups glutinous rice flour - 1/4 cup sugar - 1 cup water - 1/3 cup cornstarch - 12 fresh strawberries - 2 tsp mix of Beet & Hibiscus flower - supercolour powder @suncorefoods (dissolve in 2 tsp water) . bean paste - 2 canned white kidney beans (skin removed) - 1/4 cup sugar - 3 tbsp rice malt syrup . Preparation: Press the beans with a spatula through a fine strain to get the smoothest texture. Transfer the paste to a pan. Add sugar, use low heat to simmer the exceeded water out. Keep stirring. As the paste is heated and sugar is dissolved, the paste will become loose. Add rice syrup, continue stirring all around so that steam gets out and the paste thickens again. Continue cooking until water has evaporated. About 10 mins. . Turn off the heat, allow to cool down. Flatten paste and wrap tightly in plastic wrap. . Mochi . Combine the rice flour, sugar in a microwave safe mixing bowl. Add in water, mix until combined. .
Put the bowl into a microwave, heat it up for 1 min. Take the bowl out and stir the mixture with a heatproof spatula. Back into the microwave and heat it up for 1 min. Remove the bowl from the microwave. Keep stirring with the heatproof spatula, back into the microwave and heat it up for 30 secs, add the dissolved supercolour powder keep stirring until it thickens and comes together into one smooth. . Flour work surface with cornstarch. Put the mochi on top (Put some starch on your hands to prevent sticking) Cut the mochi into 12 pieces. Flatten the mochi into a circle. (use more corn flour if needed) . . Wrap the strawberries with bean paste. Put some starch on hands. Then place flatten mochi dough and put the covered strawberry on top of it (with the tip facing down) Wrap it with pinching the bottom closed. . Recipe by @nm_meiyee 😄

🌱Sri Lankan Tofu Curry Noodle Bowl 🍜 📸 @cookingforpeanuts - Recipe: Press and dry 1-14oz packet extra-firm tofu to remove excess liquid. Cut tofu into about 1-inch cubes. Bake on parchment-lined baking sheet at 400F until golden and slightly crispy. Meanwhile, sauté 1 tsp cumin seeds and 1 tsp black mustard seeds until fragrant, about 30 seconds. Add 1 diced red onion, 3 minced garlic cloves, 2 green chilies (deseeded and finely diced), 1/2 tsp turmeric, 1/2 tsp cinnamon, 1/2 tsp chili powder and 1 tsp curry powder. Sauté about 5 minutes before adding 1-15oz cans coconut milk, 1 cup vegetable broth, two heads baby bok choy (trimmed and washed) and the baked tofu until heated through and bok choy just wilted. Remove from heat and add chopped cashews and fresh lime juice and salt to taste. (Add touch of maple syrup if desired.) Served with @lotusfoods millet brown rice noodles. Enjoy! 😄

Hummus recipe: I can chickpeas, drained 1 clove garlic 1/4 cup tahini 1 cup roasted or steamed beetroot (fork tender) 1 tablespoon lemon juice 1/2 teaspoon sea salt (or to taste) . . I used to add olive oil but I found that the beets give it plenty of liquid and it didn't need more. However, if your hummus needs more liquid, some olive oil wouldn't hurt -- or more beets!

Vegan Hummus pasta by @feelgoodfoodie 🍝 🍋🍃 Ingredients: 2 tablespoons olive oil 1 medium onion, sliced 2 garlic cloves, sliced 1 cup spinach 1 cup plain hummus 1 pound spaghetti pasta Juice of 1 lemon + zest ¼ cup chopped fresh basil, plus more for serving Pinch of crushed red pepper Steps: Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until al dente according to package directions. Reserve 1 cup of pasta cooking water, then drain the pasta and return to the pot to stay warm. In a large skillet, heat the olive oil over medium heat. Add the onions and cook for 5-7 minutes or until fragrant and they soften. Add the garlic, and cook for 30 seconds, or until fragrant. Add the spinach and cook for 1 minute, or until is slightly wilts. Add the hummus, about ½ cup of the pasta cooking water, the lemon juice and lemon zest, and stir until a creamy sauce forms. Add more pasta water to thin the sauce a little at time, as desired. Transfer the cooked pasta to the skillet, add the basil and crushed red pepper. Serve immediately basil, if desired. #veganrecipes

Combine nut butter, hemp seeds, brown rice puffs and gewy sweetener of choice (you could also add cinnamon or vanilla for extra flavour). TRY THIS TANTALIZING VEGAN HOT PAD THAI by @amelietahiti. • Recipe: Pad Thai ingredients - 1 clove garlic, crushed 1 shallot or half onion, chopped few thumb fresh ginger 2 medium carrots, in ribbons 1cup frozen capsicum or 1 fresh 100g firm tofu (option), cubed half broccoli head, chopped 1/4 cup chives or scallions 3 cups mungo beans 200g thai rice noodles extra: edamame, fresh coriander, peanuts & lime 🍋 Sauce Ingredients - 1/4 cup peanut butter 1.5 tbsp tamari sauce 1 tbsp rice vinegar (or ACV) half juicy lime 1 tsp sesame oil 1 tsp dulse (option) 1/2 tsp turmeric (health kick!) 1/8 tsp chili flakes 🔥 1/4 cup water black pepper 1. Cook the noodles according to packet instructions. Once cooked, drain & rinse with cold water to prevent sticking. 2. Blend all sauce ingredients (in blender or shaker) 3. Start sauté garlic, shallot, ginger, carrots & pepper with few tbsp of the sauce about 5 minutes. 4. Then, add tofu, brocoli, beans, chives, mix & cook 5 more minutes 5.
