Thyme infused Lentil Stew.
My recipe for Thymely Oven Roasted Cauliflower 👇👇👇
While the Lentils were stewing, I prepared Oven-Roasted Cauliflower: After cleaning & slicing the cauliflower, I set it aside & made this marinade:
Juice of 1/2 lemon, 1T avocado oil, 1/2 tsp paprika, 1/4 tsp iodized salt; 1/4 tsp black pepper. To a large bowl add the cauliflower slices & cover with marinade. Spread onto foil lined baking sheet, place into 425F pre-heated oven. Set the timer for 15 minutes;
After 15 minutes, turn over each cauliflower slice, carefully place several sprigs of fresh thyme across cauliflower, return to oven & roast 15 minutes more. Remove from oven, allow to cool slightly & place cauliflower in a serving dish. Add the roasted thyme sprigs to your ‘save for broth’ container;
🌿Enjoy the cauliflower as a snack, an appetizer with hummus, as a side dish.
*Note: Potassium is the 3rd most abundant mineral in the human body
