standard meal prep sunday post, I didn’t need to do a huge prep tonight partly because I still have lots of meals in the freezer from my last cook up, but I wanted some variety & i’m going away next weekend so I won’t get time to do it for next weekend, so now i’m prepped for the next fortnight - apart from fresh fruit.
I really wanted something simple and easy, i’m not a huge sauce from a jar person but it’ll do 🤷🏼♀️ I like to bulk the meals out with veggies - such as the butter chicken has sweet potato, zucchini and carrot, and I’ll add a bag of steamed veggies to the honey mustard chicken, I’ll serve them on rice (cauliflower or brown) or I’ll add a steamed bag of veg to the curry 🤩. I also made some zucchini muffins which are good for a quick breakfast or a snack, I made two batches so they’ll go a long way. Feeling slightly more in control of my food choices, all of the above which I have tracked in mfp! 👏🏻 beingbetterbeth
