”See right after HS I became this party girl. Worked hard ‪Mon-Friday‬ but partied even harder ‪Thur-Sunday‬! After my night classes at NECC, I would go straight to drinking! (Fake ID) I know, I know anyways that was my life then. After a year of that straight party girl routine I became sick to my stomach, no literally sick to my stomach, I was not able to digest acid foods due to my stomach lining becoming so thin from the malnutrition. . Now fast forwarding too many, many, many years (Yall get the point I’ve aged) I live a totally different lifestyle, I work hard, I gym hard and my nutrition is on point! Bunch at the Neufeld’s today is berry cheesecake french toast 🤤 OMG it was so delish and easy to whip up! 🍞 🍞 Take 2 pieces of bread (Mine was 3pts for wonder bread plus fiber. Just trimmed the bottom crust off to lower the weight and points). Mix a splash of almond extract, splash of vanilla extract, 2 tbsp skim milk and one egg together and soak bread. Spray frying pan with olive oil spray and cook on medium high until browned 🍓 🍓 For the sauce I took a handful of blueberries and raspberries with a sprinkle of sugar free sweetener and a splash of water into a sauce pan. Cook on medium high until boiling then reduce to simmer and cover for 10 mins. 🍰 🍰 For cheesecake I took 4tbsp of light whip cream and a tsp of sugar free cheesecake jello mix for 1pt. Combine and let set in the fridge for 5 mins. 🙌🏻 🙌🏻 Place French toast, top with hot berry sauce and then add spoonful of cheesecake topping. Our last day in paradise.. This is our last walk on the Oceanway.. Sunday roast dinner for for 13 points OMG. Anyone who knows me knows l am obsesssssssed with yorkshire puddings. This meal has been off my dinner schedule because I assumed it would be high in points and I am pleased to announce it’s really not! YAYYAYAYAYAYAYAYYAYAAYYY 🍽 🍽 For the roast dean threw it in the instant pot with one onion. The meat was seasoned with garlic, worcestershire sauce, salt & pepper. Cooked for 1 hour and rested for 20 mins more. This gave the roast a shreddable pot roast consistency. 🍽 🍽 Sides included yorkshire puddings which I used a clubhouse dry mix for, one tablespoon of oil per 6 yorkshire’s. Carrots steamed with water and a sprinkle of brown sugar (sugar free) alternative and a few sprays of I can’t believe it’s not butter. Mashed potatoes with skim milk and I can’t believe it’s not butter. My new favourite ww friendly camping treat... grilled peach s’mores 🍫 🍑 🍫 Half peaches and remove pit. Wrap halves in tin foil and throw on the grill until hot and toasty. Remove tin foil and add 1pt worth of chocolate in the middle where to pit was! Cover loosely with foil so the chocolate melts a bit while you toast a marshmallow (1pt). Top with your marshmallow and enjoy!
