❤️Tomato Brie Pesto & Black Olive Spaghetti ~ A little experimenting went on tonight for meatfreemonday as I had some Brie to use up, plus some of my homemade Pesto. I’ve always got tinned tomatoes, cherry tomatoes and black olives plus some fresh spaghetti pasta in the fridge! So stophoardingstartcooking is the definite theme tonight! ~ So along came my dish which I suppose is a little like a Puttanesca, just minus the anchovies and capers! I served with some homemade garlic butter Ciabatta Olive bread. ~ Spaghetti 3 x garlic cloves, crushed 2 x shallots, finely diced 200g piece of Brie, diced small 1 tin of cirio chopped tomatoes 2 tbsps homemade pesto 1 tsp giapuree Tomato puree 8-10 Black olives, sliced in halves Generous squeeze of lemon juice Salt & pepper to season ~ Place shallots & garlic in a sauté pan, stir around for a couple of minutes. Add lemon juice followed by the halved black olives. Stir for another min or so. Add in the tin of chopped tomatoes. Season with salt and pepper, to taste. ~ Cook the spaghetti for 3-4 minutes only, if using fresh egg pasta. Drain and add a little of the cooking water to the sauce in the sauté pan. Add the Brie pieces only at the last min before adding the drained spaghetti to mix around well. Long story short, this 👆dish was originally inspired by a potato salad recipe I found in a cookbook at a garage sale years back. While the recipe has totally transformed into something fresh and new, I’m grateful for the original inspiration it provided. Now we gotta know, what’s your cooking style? ⠀⠀ . ⠀⠀ Sheet dEats: •1 package uncured kielbasa (this was Hillshire Farms turkey) •2-3 medium yukon gold potatoes, diced •1 lb fresh green beans, sliced in half •olive oil, pepper, garlic and onion powders, to season •Rosemary-Dijon Dressing: from *new* ebook, link in bio. ⠀⠀ . ⠀⠀ Directions: Whisk together dressing; set aside. Dice potatoes into 1” cubes and soak in cold water (removes some starch and helps potatoes crisp up) for 5 mins. Slice sausages and veggies. Toss green beans and potatoes lightly with olive oil, pepper and garlic and onion powders. Scatter all ingredients onto 1-2 sheet pans and roast at 350 for 30-35 mins, tossing once. Drizzle with dressing and serve. ⠀⠀ ⠀ ⠀

What’s for dinner? This one is Going on this week’s menu plan!!! I have to try this recipe! Cabbage Wrapped Beef Pot Stickers Ingredients: 1 Head of Cabbage but weigh out 225 grams cooked *I used only 75 grams of cabbage or 1 Green serving and had 1 cup of broccoli as my other 2 Greens (1 Green) 8 oz 95% to 97% Ground Beef raw (1 Leaner Lean) 2 tbsp chopped green onion (1/4 of a Green serving; subtract from your Green) 1 tsp Sesame oil (1 Healthy Fat) 1 tbsp lite Soy sauce (1 Condiment) 1/8 tsp Ground Ginger (1/4 Condiment) 1/8 tsp Garlic Powder (1/4 Condiment) Cooking spray Directions: Bring a large pot of water to a boil. Wash and cut cabbage in half. Cut the core from each half of the cabbage by slicing it out in a triangular wedge. Separate at least at least 8 of the larger outer cabbage leaves from both halves, and then add to boiling water. (Save remaining cabbage for another meal). Boil for 2 minutes, until cabbage is crisp-tender. Use a slotted spoon to transfer cooked cabbage to a plate of paper towels to drain. Prepare the pot sticker filling by combining beef, chopped green onions, sesame oil, soy sauce, ground ginger and garlic powder in a mixing bowl. Mix well. Place a large nonstick pan over medium heat and spray with non-stick cooking spray. Form the filling into thick oval patties about the shape and size of your thumb. Place the filling patties into the pan and cook about 4 minutes on each side, until cutting into one shows no pink throughout. This Pasta Chicken & Broccoli dish is so quick and easy and will “wow” your family’s taste buds for sure! Weeknight meals can be a challenge to come up with something easy but still delicious. I’ve got you covered! You’ll need: * 2 Chicken Breasts * 1/2 cup All Purpose Flour * 1/2 tsp salt * 1/2 tsp garlic powder * 1/2 tsp pepper * 1 TBSP Olive Oil * 4 Cups Broccoli Florets, steamed * 1 lb Orrecheitte Pasta or Rotini Pasta * For Sauce: * 3/4 cup butter, salted * 2 Garlic Cloves, Minced * 4 TBSP flour * 2 cups Heavy Cream * 3 cup freshly grated Parmesan cheese * 1/2 tsp pepper * 1/8 tsp salt *recipe hack - make it even easier with a jar of white sauce for those nights when you don’t even have 20 minutes 😉 * Cook pasta as directed on package. Drain and set aside. For Chicken: * In a large pan, heat olive oil over medium high heat. * On a large plate mix together flour, salt, garlic powder and pepper. Dredge chicken breasts in flour mixture and shake off excess. * Place in hot oil and cook for 3-4 minutes on each side or until chicken is cooked through. * Remove from pan and place on a clean plate to rest. For Sauce: * In a medium sauce pan, heat butter over medium high heat. * Add in garlic and saute for 30 seconds. * Stir in flour and cook for 1 minute, stirring constantly. * Pour in heavy cream, Parmesan cheese, salt and pepper. Turn heat down to low and stir until cheese is melted and everything is heated through. Taste for seasoning
