Summer special! My wife bought some feta and challenged me to come up with a dish she will love. And I came up with this Mediterranean inspired pasta - with loads of garlic, olives and feta cheese. It’s been so encouraging to see the progress being made but it can still be a challenge. That’s why it’s so important to be willing to be your own advocate and speak up for your dietary needs — even when it seems inconvenient, it’s for your health and definitely worth the additional 30 seconds of explanations! CSA day 🙌 There was nothing in the trade bin today so I was stuck with all the lettuce. 😭 I washed lettuce right when I got home so it’s easy to use when I *have* to. I sautéed the mizuna and spinach with the garlic scapes for dinner. I’ll toast the beets and sauté their greens for another dinner and then I’ll probably roast the cabbage (or make slaw!). The kale will get sautéed with tamari and vinegar. I’ll likely sauté the frisée, too. Introducing... PORK DUMPLING SOUP! 🥟😻 . Are you a soup fan?! Are you a dumpling fan!? Look no further, this meal is for you!! My boyfriend was feeling under the weather last week so I whipped him up something hearty & delicious to eat. I was FEELING some pancakes after today’s run 😜 Anyone else always crave something sweet after exercise?!?! I pretty much never actually have pancakes in the morning haha!!! 😂 Anyhoo, here’s how to make zee BEST pancake comboooo 🔥 . Lots of the time, pancake meals are just topped with syrup/fruit/whipped cream/etc (which is okay if you’re wanting that!); HOWEVA, this only provides you with carbs & not much protein, so the meal isn’t as satisfying/filling 🙈 Carbs are freaking awesome, but I guarantee your meal will be more satisfying if you add some protein (& fat too!) either in the pancake batter or as a topping 👏🏻👏🏻 Especially after exercise, protein will help repair yo muscles too!! . SOOOO. Here’s what I did for mine today 😉 I usually use @kodiakcakes protein pancake mix cuz they’re delish & already protein packed - this one today was the choco chip mix 🙌🏻 Topped with fruit (cherries), a pool of @crazyrichardspb pb, a dollop of @siggisdairy vanilla skyr, some almonds, a drizzle of 100% maple syrup, & a cinnamon sprinkle 😍 So the pancake mix, pb, skyr, & almonds all provide some protein!!! Still sweet & delicious but also more satisfying!!!! 💞 What toppings do you like to put on your pancakes?!?

FREE 1-WEEK MEAL PLAN IN OUR BIO⠀ .⠀ Follow us (@simplyfitsociety) for more⠀ .⠀ By @skinnytaste⠀ .⠀ This foolproof recipe for making boneless chicken breast in the air fryer (oven method at the bottom) will give you perfectly juicy chicken every time.⠀ ——⠀ INGREDIENTS:⠀ kosher salt⠀ 4 boneless chicken breasts, about 6 ounces each⠀ olive oil spray⠀ 3/4 teaspoon garlic powder⠀ 3/4 teaspoon onion powder⠀ 1/2 teaspoon dried parsley⠀ 1/2 teaspoon smoked paprika⠀ 1/8 cayenne pepper⠀ ——⠀ INSTRUCTIONS:⠀ Pound the thicker end of the chicken to make both sides leveled out so they cook evenly.⠀ Fill a large bowl with lukewarm water and add 1/4 cup kosher salt, stir to dissolve. Add the chicken breasts to the water and let them sit, refrigerated at least 1 1/2 hours or up to 6 hours to brine. Remove from water, pat dry with paper towels and discard the water.⠀ In a small bowl combine 3/4 teaspoon salt, with the remaining spices. Spritz the chicken with oil and rub all over, then rub the spice mix over the chicken.⠀ Preheat the air fryer. Add the chicken to the air fryer basket and cook in batches 380F turning halfway, until browned on the outside and cooked through, about 10 minutes.⠀ .⠀ Oven Method:⠀ Preheat the oven to 350F. Heat an oven safe or cast iron skillet over high heat for 5 minutes until it is very hot. Place the chicken on the hot skillet, and cook for 1 minute. Turn, and cook 1 minute on other side. Transfer skillet to the oven and bake until no longer pink in the center and the juices run clear and a thermometer reads 165F inserted in the center, about 8 to 10 minutes.

FREE 1-WEEK MEAL PLAN IN OUR BIO⠀ .⠀ Follow us (@simplyfitrecipes) for more⠀ .⠀ By @vegaliciously⠀ .⠀ Tofu 'Meatballs' in Turmeric Sauce 🤤 Is anyone else drooling?⠀ ⠀ Recipe⠀ INGREDIENTS TURMERIC SAUCE:⠀ •2 carrots⠀ •2 garlics⠀ •3 tbsp condensed tomato⠀ •3 tsp turmeric powder⠀ •salt and pepper⠀ •6 dl vegetable broth⠀ •2 dl soya cream⠀ •coconut oil⠀ INGREDIENTS TOFU BALLS:⠀ •600g tofu⠀ •2 carrots⠀ •2 garlics⠀ •a parsley bunch⠀ •150g breadcrumbs⠀ •100g flour⠀ •salt and pepper⠀ •coconut oil⠀ METHOD:⠀ 1. For the sauce, finely chop onion, garlic and carrots. Grease a pan with coconut oil and fry the ingredients until golden. ⠀ 2. Add condensed tomato, turmeric, broth and mix until lumps smooth out. Let it simmer for an hour and a half adding water from time to time. ⠀ 3. Put the sauce in a mixer and blend until it reaches a creamy consistency. ⠀ 4. Pour the sauce into the pot previously used, add the soy cream and simmer for another 15 minutes.⠀ 5. For the tofu balls, using your hands grind the tofu.⠀ 6. Finely chop carrots, onions, garlic and a parsley bunch and add to the tofu. Mix the mass, adjust salt and pepper, and add the breadcrumbs. ⠀ 7. Using your hands, mix the mass to obtain a homogeneous mixture. Moisten your hands before forming every tofu ball. ⠀ 8. Once all the balls have been formed, mash them with flour. Grease a frying pan with coconut oil and fry them until golden. ⠀ 9. Once cooked, dip them and cover them with turmeric sauce. Add a spoonful of parsley and ENJOY!

I spent all weekend eating out with family, with no guilt and almost no waste, it just takes some planning! . ✔️ Sides are your best friend! You can easily make a whole meal from the sides alone. ✔️ Flexibility Is key! I like to choose #vegan when I can, but today that would’ve been green beans...and maybe not even that! So it is what it is. No need for guilt here. ✔️ Balance it out if you can. You can still get in your protein and fiber to keep you full, while enjoying those carbs and fats. Picking beans or an egg/potato salad for protein, and a veggie for fiber will keep you full for longer! (Which = more satisfaction!) ✔️ If you don’t/can’t bring in your own container, ask for paper boats instead of styrofoam. Today they poured my food out of the styrofoam containers onto the boat, I just asked that they please reuse them instead of throw it away 🤞🏼 Again, no guilt. You can only do so much! ✔️ Bring your own cutlery and cup, always! My friends always poke fun, but they know it’s important to me!

@Ilanamuhlsteinrd would be proud☺️ • I really enjoy going to a local farmers market and grabbing a huge variety of vegetables, chopping them up and then making myself quite a few servings of mixed vegetables to sauté for dinner over the next few days. • Granted, the butternut squash at the bottom right was pre-cut for me… I wouldn’t have a clue how to do that😉 • There’s: Brussel sprouts, celery, zucchini, squash, onions, red yellow orange peppers, asparagus, cauliflower, and butternut squash. • I’m still not done but I ran out of room. I still have broccoli, carrots and snap peas to add to this beautiful mix! • Learn to make vegetables in a way that you look forward to them. It can be done! If @kelleyohara29 did it, then you can do it too!😛 • Don’t be afraid to add a little grass fed butter, coconut or olive oil and lots of seasoning to your vegetables. The fat actually helps you absorb the nutrition much more. Experiment… You will figure it out and get these bad boys in your diet every day! • Tip: try a cast-iron or an air fryer. Also, don’t overcook them… Mushy vegetables are gross😖

Happy Monday my doods! Although I do hate the idea of Monday’s...ruining my sleeping in, having to work, responsibilities, etc. I also kind of love them. It gets me back into my routine, and I always plan out my week on Mondays. ✨lasagne! 🍅MINCE: chop up 2 garlic cloves & an onion. Fry in olive oil for 3 minutes. Add 1kg beef mince & cook til brown. Add 2x cans of diced tomatoes & add herbs of your choice. Turn heat down to simmer & let simmer for 15 minutes. 🍆VEGETABLE LAYERS: prepare layers by slicing zucchini and eggplant lengthways. Lay out eggplant on paper towel & sprinkle with salt. Leave for 10 mins. This process brings out the bitterness of the vegetable. 🧀CHEESE MIXTURE: I used 150g cream cheese, 1.5 cups of mozzarella and 2tbl sour cream. Mix over low heat & it becomes like pizza dough, which after cooking almost has a haloumi texture. Last step: Wipe away 'sweat' from eggplant & begin your layers. I layered in this order: mince, eggplant, diced chilli, mince, zucchini, ricotta, mince, cheese mixture, grated cheese. ✨ eggplant canneloni is my favourite lunch, served hot or cold! 🍆 slice eggplant 1cm thick, lay out on paper towel & sprinkle salt. Leave for 15 mins, and wipe away 'sweat' with paper towel. This process removes bitterness from vegetable. Finely chop up 5 cups of spinach and place into a bowl with 400g ricotta cheese & 1tsp of nutmeg, salt & pepper. Combine with hands until ricotta turns light green in colour. (catering for my carb-loving housemates with canneloni shells pictured) Layer eggplant in a lined baking tray, top with layer of cheese mixture & cover with tomato paste. My tomato paste has Italian herbs, minced garlic, salt & pepper. ✨ easiest spicy Cajun chicken ever 🍗 throw 5 tsp Cajun seasoning, 2 tsp ground chilli, 2 tsp rosemary leaves, 1 tsp garlic powder with salt & pepper in a sandwich bag. Place one chicken leg at a time in the bag & roll around on a hard surface to season. Bake for 15 minutes at 240 degrees, and then a further 45 minutes on 180 degrees, turning half way. I made 4 chicken legs, photo compares the first leg I seasoned compared to the fourth when I was almost out of herbs. ✨slow cooked Osso Bucco 🥘 Season meat in salt and pepper then brown off in olive oil, before placing in a lined baking tray. Sprinkle your choice of vegetables desired (I used green beans, cauliflower, broccoli, zucchini & mushrooms). Add tomato sauce: in a bowl combine 2 tins of crushed tomatoes, 2 minced garlic cloves, 1 tsp onion powder, 1 tbl Italian herbs, salt, pepper & your remaining oil from browning the meat. Pour sauce over the meat & vegetables, cover with foil & bake at 160 degrees for 90minutes minimum (the longer the better).
