Vegan Shawarma 🤤 High Protein & SO GOOD!!! I used Soy Curls for the protein and spiced them with a shawarma seasoning blend and for the tzatziki sauce, I used tahini, vegan mayo, half a lemon, sea salt, fresh garlic, parsley and chopped cucumber! All of this on top of a bed of romaine lettuce with sprinkles of sumac spice for that rich purple color! This meal was delicious and I will be filming a recipe video for it ASAP!! MINESTRONE ♥️ Had my favourite soup for dinner today and since its just such an easy and delicious winter meal I thought I'd share the recipe again (it's also great for mealprep since it always tastes better the next day 😊). You can use different veggies than I did (I rarely use the same combination twice 😂). . ➡️You need: 4 parsnips, diced | 4 carrots, diced | 1/4 head cabbage, shredded | 2 small potatoes, peeled and diced| 2 onions, diced | 4 cloves garlic, minced | 2 hands full of baby spinach | 1/2 cup frozen peas | 2 cups beans | 1 cup dried pasta | 2 tbsp olive oil | 2 tbsp tomato paste | 1 tbsp dried lovage | 2 bay leaves| 2 tbsp dried thyme | 1 tbsp dried rosemary | 4 cups vegetable broth | 3/4 cup nutritional yeast | salt and pepper to taste . ➡️What to do: Heat the olive oil in a large pot over medium high heat. Add the onion and let it get translucent. Add the carrots, parsnips, cabbage, the garlic and the tomato paste and let it cook for about 3-4 minutes, stirring frequently. Add the vegetable broth, the potatoes, peas, herbs and the nutritional yeast. Add more water if the veggies aren't covered. Bring to a simmer and let it cook for about 10-15 minutes, until the vegetables are almost done. Add the beans and the dried pasta and cook until it's done (depends on what kind of pasta you use). Add the spinach and cook until it wilts (2 minutes). 🌱🌱 Vegan collard wraps 🌱 🌱 I kept hyping up bitchinsauce so I had to use it in a recipe ASAP It’s hard making collard wraps look aesthetically pleasing but I tried 🤷🏻‍♀️ - Steam collard over boiling water till they get darker and softer (makes it easier to roll and digest) - Sauté shredded King oyster mushrooms (or you can use enoki mushrooms) with some olive oil, minced garlic, paprika, cumin, salt & pepper - Cooked brown rice in broth (I used bone broth but you can use vegetable broth to keep it vegan) - Made the wrap with some chipotle bitchinsauce , sliced avocado, sautéed mushrooms, and brown rice Really quick and easy meal Rolling the collard wraps is a bit tricky so make sure they’re soft enough to roll, slice the stem off, and tuck it tight when you’re rolling

C U L I N A R Y S K I L L S 7 ⋆ I’ve completed my 6 cold meals now (SCROLL DOWN ⬇️) so last week the OT & I planned my 6 hot meals & here is numero uno 👐🌸🍃🍽🍄 ⋆ I had a LONG think about what would hopefully advance my recovery in time for Crimbo bimbo 🎄 TW (talk of EDs) ⚠️ Part of my problem is food prep ~ the orthorexia side of things means in EDna’s world, I need fresh ingredients, spend FOREVER prepping so it’s ‘perfect’, cook in a ritualised way & spend another 20 yrs presenting my meal (or even a bloody apple!) 👎 No no no, I’m desperate to get rid of this! I (v wrongly) believe what I put in my bod must be fudging ‘clean’ (😡) & ‘perfect’ (no such thing!) for me to ‘deserve’ to eat it ... FOOD HAS NO VALUE?! I don’t need to earn it ~ I don’t earn the right to breathe! After that little taste of summer last week I feel like we went right back to winter this week! Which also meant cold green smoothies lost their appeal to me big time. 🍏 The answer? This warm apple pie smoothie. It’s full of warming spices, sweet green apple and a heap of green goodness. Such an easy meal tonight! Vegan sloppy joes (literally just a bag of gardein crumbles and a can of manwich sauce (yes it’s vegan)) and vegan mashed potatoes (1/4 cup vegan mylk and 2 tablespoons vegan butter)! So delicious!

My homemade “Easiest chickpea pot pie soup” is the absolute best for a chilly day like today! This is my favorite soup recipe ever and it’s super easy to make! My recipe (makes two servings) includes: •4 cups veggie broth •3 cups alternative milk (I used almond) •1 cup of flour •2 full potatoes or 6 mini potatoes •1 can corn •1 can green peas •1 can chickpeas •1 can carrots •2 teaspoons of vegan seasoning (I use better than bouillon) •two tablespoons garlic powder •two tablespoons onion powder •sprinkle of oregano •sprinkle of thyme •1/2 cup nutritional yeast •sprinkle of olive oil Literally just mix all of that together in a pot and cook for about 15-20 minutes depending on when the potatoes become soft! If you wanna add some panko bread crumbs on top feel free to do so! 🥰🥰🥰
