A quick and easy dinner tonight that was absolutely delicious, as well a nourishing as we have some little runny noses at the moment! We try to have at least 3-4 meat free weeks a night and silken tofu is a lovely protein option that is just as filling and provides beautiful texture. ⁣ ⁣ Green Thai Soba Noodles: ⁣ ⁣ Simply fry off a tsp of Ayum brand Thai Green curry paste (I fried off and added another tsp after I had served the girls so it wasn’t too spicy), a chopped onion, three garlic cloves and diced mushrooms with some olive oil. ⁣ ⁣ Add a can of coconut cream (Ayum is my fave as it’s additive/preservative free), a tbl sp of fish sauce, juice of 1-2 limes (nature’s msg!) and let it simmer on high for 3-5 mins. ⁣ ⁣ Add in chopped organic silken tofu, diced capsicum and simmer on low for 5 more mins. ⁣ ⁣ Serve with soba noodles and fresh coriander. 👌🙌😋

shrimptacos On my way home from an appointment this afternoon (after I rushed out of the office and forgot my prepared snack cause I knew I’d be home late...) I couldn’t help but think about dinner. I knew I wanted shrimp, but needed to think of what else I had in the house for something quick and easy. So obviously I made tacos. Sautéed onions and orange pepper, with some balancedbites texmex blend. Cooked shrimp in same pan with more texmex seasoning. Homemade guac with just some salt and lime added. Chipotle bowl but make it healthy🤷🏼‍♀️ . Tonight’s dinner was honestly a 10/10 you guys! I wanted to make a homemade version of a Chipotle bowl without all the bad-for-you oils and it turned out to be the bowl of my dreams🤤 Aaaand it was SO DANG EASY. Get the deats on this healthy dinner below👇🏼 . HOMEMADE CHIPOTLE BOWL🌯 . I warmed up a bag of frozen quinoa from traderjoes in the microwave for 3.5 minutes. While that was cooking I put a can of of black beans and a can of corn on the stove to boil for about 5 minutes. I also heated up some leftover rotisserie chicken in a cast iron skillet with olive oil and lots of traderjoes Chile Lime seasoning. When everything was done cooking, I diced some cherry tomatos and red onions. Then mixed them together with some of the cooked corn and more olive oil. Then, just assembled everything in a bowl, topped it with some lime wedges and mashed 1/2 avocado on the side and that’s it! . Really no cooking skills needed for this recipe but it still taste amazing😍

This sort of dish has been a staple in our house lately. Roasted veggies make such a quick, healthy meal and you can really pair them with anything. I love how easy it is to change up flavours depending on how you are feeling. I've been having all the fall feels lately so my dishes have been really geared towards that. Check out the basic recipe below. 1 large yam cut into bite sized pieces(or sub in squash or any root veg) 1/4 head of large cabbage chopped into chunks(can sub brussel sprouts) 5-6 kale leaves torn off stems and torn up a bit 1/2-1 cup of fresh cranberries(can sub for dried or even give cut up apples a try) To season I melt a few TBSP of coconut oil, add in some minced garlic, fresh thyme, fresh sage a couple tsp of maple syrup, a tsp of cinnamon, a dash of nutmeg and a sprinkle of salt. Mix everything together and roast it @ 400F in the oven till lightly browned. I'll usually throw this ontop of some brown rice or into some pasta to make a quick meal. Shredded Satay Chicken 🥜 . • 2 large chicken breast cut down the middle • 3 tbsp apple cider vinegar • 3 tbsp Tamara (or low salt soy sauce) • 3 tbsp crunchy peanut butter • 2 tbsp brown sugar or honey • 2 tsp garlic • Splash water • 2 cups cooked brown rice • 4 cups cooked veggies . - Mix all sauce ingredients together until combined - Place each chicken breast into foil and top with equal amounts of sauce - Cook for 20-30 minutes (I cooked mine in the air fryer) - Remove chicken and use 2 forks to shred it apart while still in foil (be careful not to pierce foil) - Serve with rice and veggies and ENJOY! 😋🥦🥕🥜

After training on a cold wintery night I love to come home to something that is warm and filling. This recipe is for my secret ingredient veggie chilli…..(which I guess will not be a secret anymore haha). I love to eat this chilli with some brown rice, fresh coriander and a spoonful of creamy yogurt. With the addition of rice, this recipe can serve 3-4 and if you have leftovers, simply take it with you and heat it up the following day! Ingredients... - 1 onion - 1 clove of garlic - 2 zucchinis - 2 carrots - 2 handfuls of mushrooms - 2 capsicums - 1 can of red kidney beans - 1 cup of corn kernels - Salt and pepper - 2 and ½ tsp of ground cumin and coriander - As many chilli flakes as you can handle - 2 tsp of cocoa powder - 2 cans of tomatoes - ½ a can of water How to make the chilli... 1. Chop onion, garlic, zucchinis, carrots, mushrooms, and capsicums. Set aside while heating a pan on medium heat. 2. Add a splash of oil to the pan along with the vegetables and cook for about 5-8 minutes. 3. Once vegetables are soft and a little brown, add the cumin, coriander, chilli, cocoa and a good amount of salt and pepper. 4. Continue to cook the vegetables and spices for 2-3 minutes, before adding the beans, corn, tomatoes, and water. 5. Simmer on a lowish heat for 20-25 minutes until chilli has reduced and the colour has darkened. 6. Once ready, serve with rice and toppings of your choice. Miso & ginger eggplant! 🍆🥦🥢 This is one of my favourite things to cook! It is very easy to make and full of flavour so good to add to any vegetable or meat dish! I used Genmai Aka miso paste from Ceres organic, but in the past have used Genmai Shiro. Genmai Shiro is much less salty than Genmai Aka therefore if using that you might want to add some soy sauce to the mix! Recipe for miso eggplant👇🏼 1 eggplant 2 Tbs miso paste 1 Tbs avocado oil 1 Tbs finely chopped ginger 3 cloves of garlic Method: Cut the eggplant in half, score it, then sprinkle salt onto the fleshy side. Leave for at least 10 minutes then rinse of the salt. Heat a fry pan with coconut oil then fry the eggplant flesh side down for 5 minutes. Flip the eggplant, pour water into the fry pan about 1cm deep, and cover. Turn the element to low and let it steam for 15 minutes or until cooked. Once cooked transfer the eggplant to a baking dish and spread the miso paste onto the fleshy side. Grill for 5-10 minutes until browned. This amount of miso paste makes a little bit much for 1 eggplant therefore I fried my tofu with the remainder of it! I served my miso eggplant with brown rice, tofu, broccoli, spring onion, kimchi, and watercress! 😋👏🏼

Literally a lazy, 5 minute dinner! Ok the rice was already cooked and cooled down but it takes only 5 minutes at most to actually put this together! A lot of people that I have spoken to have never attempted sushi because they don’t have a bamboo mat or sushi kit... you don’t need one! I have never owned any of that, and to be honest I haven’t even looked up ‘how to make sushi’ so who knows if I’m doing it right but it seems to work 😂😬 I place the sheet of nori shiny side down, spoon a thin layer of rice and then place filling on top, leaving a gap to one side where the rolling will finish, and roll it up while dipping my fingers in a little bowl of water as I go... it ends up being delicious and the kids love it 😍 what you need are nori sheets, cooked and cooled white rice, any filling you like (we usually do avo/tuna), and a little bit of tamari/soy sauce on the side to dip. 🥢 . eatrealfood eatwholefoods healthykids healthydinner healthylunch sushi healthysushi foodforkids wholesomedinner wholefood thewholefoodielife dinnertime

•EGGPLANT, MUSHROOMS AND TOMATO BAKE• Ingredients: 1 onion, diced 2 tbs coconut oil 3 cloves of garlic, crushed 1 pack portebellini mushrooms 4 eggplant, cubed 1 can chopped tomatoes 1 can tomato paste 1 tsp sugar 1/2 tsp turmeric, garum masala, chilli flakes Salt and pepper to taste Method: Fry onions in coconut oil until translucent, add crushed garlic. Add bringal and mushrooms, fry for 10 minutes. Add canned tomatoes and paste. Fry until combined. Add spices and sugar. Fry for further 10 minutes. Make white sauce (see previous posts for recipe) Transfer into over- proof dish and place white sauce on top. Top with vegan mozzarella. Baby spinach, carrot, beetroot peel, brown rice flour soup. . I can’t believe how delicious, simple and quick to make this soup was. . It took me 10 mins in total and is a wholesome food in itself!. . Recipe: . Ingredients: 1 cup Baby spinach 1 carrot 1/2 cup beetroot peel (since I will be using the inside of betroot for making subzi the next day) 1/2 table spoon brown rice flour roasted 1 tspn Cumin powder 1 tspn mango powder Pepper powder to taste 1/2 teaspoon lemon juice to taste Himalayan pink salt to taste. . Directions: . Pressure cook / bring to boil spinach, carrot, beetroot peel. Once cooked, let it cool and blend the cooked veggies in the blender. Bring the purée back on gas and add rice flour, cumin powder, mango powder and let it boil for few minutes until it blends well into a creamy soup. . Serve it hot and add pepper powder and lime juice.. . One of the good ways to make kids eat veggies in a wholesome form.. .. Yesterday we were out and enjoyed a vegan holiday dinner at Strätlings Hof. The amuse-gueule were pasta shells with tomato sugo which were filled with a mix of grilled vegetables, topped with vegan mozzarella, tofu crunch, spinach and sprouts. As for our first course we had bbq-style tempeh with sourcreme and cucumber salad on top of a toasted bread with guacamole. This was definitly the highlight of the whole meal. That tempeh was so delicous and matched well with the guacamole and the sourcreme. Just a dream of a course. The second course was a pot pie stuffed with potatos, peas, asparagus and delicously prepared jackfruit. I also enjoyed this one quite a lot but there were some spices that were not inga_suchopar cup of tea. An amazing apple-nut-pie with coconut-cream and strawberries as a side was for dessert. This pie is what dreams are made of. Overall a superb and high-quality dinner, i'd go anytime again. I’m so grateful to come back to the most delicious dinner. This is probably the third or fourth different lasagne that Tom has made me and once again, it’s completely free from onion, garlic, wheat and cows milk. This one is veggie too which makes a nice change. I honestly don’t know how he does it 🤷🏼‍♀️
