After a long snowy day out in the cold I knew I needed some soup to warm my soul. Decided to make a creamy apple bourbon mushroom soup for dinner. The soup was a little carby from the apple at 9 net carbs per serving but you can really easily fit that into your day if you plan it right. This is a Tex Mex vegan dish and it was delicious. I found the recipe in Oh She Glows. Her first book I believe. I tweaked it a little. I really wanted a satisfying warm dinner tonight. This recipe has black beans, rice, tomatoes, peppers, jalapeno, spinach, kale, onions, garlic and spices. The recipe also calls for vegan cheese and corn chips. Lots of flavours going on here. It hit the spot. Here's winter sorted! Some mirepoix madness took over my kitchen yesterday. 3 large white onions, one big celery stalk and 7-8 long slender 🥕 went into the making of this dish. This is a popular premix where the vegetables are cooked on low heat and reduced (not browned) in butter/oil I used a combination of butter and olive oil. The result is a sweet, nutty and fragrant mix that you can add to your savoury winter dishes. I plan to add to a pilaf, maybe a stew later this month and will reserve some to make a spread. It's warm and vibrant. Fondue over a campfire in the snowy Cascade Mountains! Since there are a lot of foods I can’t eat living with reflux, I love finding fun ways to eat the food I can! I served this white cheddar fondue with broccoli, carrots, and bread. Cheese in small quantities doesn’t trigger my reflux and I always make sure to stick to the veggies and lightly dip them in the fondue for a touch of flavor! I love using cabotcheese white cheddar cheese, it’s the best! Recipe: 2 cups grated Cabot white cheddar cheese, 1 TBS honey, 1 TBS cornstarch or potato starch, 1/4 cup chopped dried dates, 1/4 cup walnuts. You could also add chopped gala apples. 🤎 Flores de carnaval! 🤎 Un postre tradicional para el mes de diciembre. La flor es un postre o dulce elaborado en la la repostería española. Se encuentra en la tradición culinaria de Castilla -La Mancha, Castilla y Leon y de Colombia. Las flores se elaboran con una masa de harina de trigo con abundante huevo. Dependiendo del cocinero, puede llevar leche o no. A veces se aromatiza con anis (Pimpinella anisum). Las flores se elaboran con un molde de hierro que les confiere su forma barroca característica. This is my special friend, "Whiteface". The goose, not my hubby.... lol. Through August we developed a bond just from me talking directly to her when we were launching our catamaran. I never fed her, just talked to her. After a few weeks, if she heard me talking, she would 'honk' from hidden part of the shore front. Tis the season for Beef Stew! 2 lbs of stewing beef, cubed 1/4 cup tapioca starch (A gf option rather than flour or cornstarch) 3 tablespoons Olive Oil 4 garlic cloves, minced 2 medium white onions, diced 5 red potatoes, diced 3 large carrots, peeled and diced 1 cup crushed tomatoes 4 cups beef broth (organic or low sodium) 1/4 cup parsley 3 basil leaves, torn into pieces 1 tsp fresh torn oregano leaves 1 tsp fresh thyme leaves 1 tsp cumin 2 Bay Leaves 1 small can of Tomato Paste Salt and pepper to taste Toss the beef and tapioca starch in a large bowl until coated. Heat the olive oil in a large saute pan, and brown the beef. Once done, move to large pot. Using same pan, top up the oil and saute the garlic until fragrant. Add the onion and stir until translucent. Careful not to let the garlic burn. Add to the beef. Add all ingredients, except for the tomato paste. Stir together and bring to a boil for 15 mins. Reduce to a simmer, stir in the tomato paste.
