You are what you eat 🥗 • A lot of you have been asking what I’ve been doing to heal the last few months. Although I’ve been quite open about my healing journey, I haven’t been ready to share the specifics, til now. • For the past few years, I’ve been on the infamous paleo/keto diet. It worked great for a short while, but my body started completely rejecting it, especially after my concussion. It was time for a major lifestyle change. • Although I already cut out red meat a while ago, I started cutting out chicken and not long after that, seafood as well. I am now completely fueled by plants 🌱 • I started seeing some d r a s t i c changes. No other diet has ever made my body respond this way before. I started seeing so many of my debilitating symptoms disappear and I couldn’t believe it. It’s been naturally detoxing my body like crazy, which is a phenomenal sign. • Being on a plant based diet has also made me a machine athletically. I was able to complete 3x 70.3s in September with two of them being 6 days apart. My body is able to recover so quick it’s honestly insane!! Healthier Green Bean Casserole 😘🍗 ¼ C. Reduced Fat Shredded Cheddar Cheese (1/4 Lean) 9.52 oz. Green Beans, I used Frozen (2 greens) 5.5 oz. White Button Mushrooms sliced, I used Fresh (1 green) 4 Tbsp. Reduced Fat Sour Cream (1 cond) 1 Tsp. Fresh Minced Garlic (1/2 cond) 3 Tbsp. Non Fat Plain Greek Yogurt (1/2 cond) 2 Tbsp. Grated Parmesan Cheese (1 cond) Cooking Spray (healthy fat) Preheat oven to 350 Microwave green beans according to package directions and let them cool. In a lightly greased skillet at medium heat cook the mushrooms and garlic until tender or brownish (about 3-5 minutes) once cooked let them cool. Meanwhile, combine greek yogurt and light sour cream in a small bowl. Toss gently the cooled vegetables with the mixture until evenly coated. Add the cheddar cheese and toss again until well combined. Spread veggies into a lightly greased baking dish, top with parmesan cheese and bake until topping is golden brown (30-35 minutes). Enjoy!!! For lunch today, I had a cauliflower tabouli. To make, I cut the broccoli into florets and then place them into a food processor with some fresh coriander and wizzed them all up together with some lime (it should have been lemon but lime was all I had but it worked. After that, I added some mixed shredded mint, red onions, yellow pepper, tomatoes, garlic powder, salt and pepper and then topped it off with some cranberries. I have to say that as an adult my taste buds have changed quite a bit. From the look of the picture this sandwich looks quite simplistic and very elementary. However, as a child and even young adult you would of never caught me eating provolone cheese on anything. I ate American Cheese on everything. Lettuce never touched my lips let alone my plate! Are you struggling with your weight, I mean maintaining a healthy weight & having muscle? I used to be 𝙪𝙣𝙙𝙚𝙧𝙬𝙚𝙞𝙜𝙝𝙩 𝙖𝙣𝙙 𝙣𝙚𝙫𝙚𝙧 𝙘𝙮𝙘𝙡𝙚 - Legit I went a whole year in my 20s where I didn’t have a cycle. I know it can be overwhelming with all the products and all the trainers out there to help you make it happen, but when I found the workouts and nutrition that I have used for last 4 1/2 years, 𝙞𝙩 𝙘𝙝𝙖𝙣𝙜𝙚𝙙 𝙚𝙫𝙚𝙧𝙮𝙩𝙝𝙞𝙣𝙜. After having our oldest I was somewhere around 109 pounds at 5 ft 4in, and now here I am and I weigh anywhere between 118 -122 whatablessing ! But I’m not here just to show my muscles, I want to give you a couple of the tips that have helped me over the last little bit: 1. 𝙁𝙤𝙡𝙡𝙤𝙬 𝙖 𝙥𝙧𝙤𝙜𝙧𝙖𝙢 𝙩𝙝𝙖𝙩'𝙨 𝙙𝙚𝙨𝙞𝙜𝙣𝙚𝙙 𝙛𝙤𝙧 𝙢𝙪𝙨𝙘𝙡𝙚 𝙜𝙧𝙤𝙬𝙩𝙝 (aka don't just do cardio, actually pick up some weights - an no I'm not talking 20 reps with your lightest weight - yes I used to ONLY LIFT 5lbs - I'm talking a balance of low reps with heavy weights & some cardio & some higher reps with lighter weights...it takes a well designed program to help find that balance) 2. 𝙀𝙖𝙩. 𝙀𝙖𝙩. 𝙀𝙖𝙩. and I don't mean just cookies 🍪 I mean I love them too, I mean eat a balanced nutrition. For me, I have found as a UPF Master Coach, myself and my clients get the BEST results when we learn about nutrition while diving into 𝗰𝗹𝗲𝗮𝗻 𝗯𝗮𝗹𝗮𝗻𝗰𝗲𝗱 𝗲𝗮𝘁𝗶𝗻𝗴, no macros, no calorie counting, just straightforward portioned meals. 3. HEALING...comes from within. . Feeling and looking your best isn’t going to happen when you reach your “goal body” if you haven’t worked on your mindset and loving yourself first. . . Lately I’ve been hating on my body inside and out. There’s been a lot of contributors to this state of mind for myself... stress eating. I Had to break from powerlifting (docs orders). Travel. Work. Etc. I sort of got lost in the sauce and my health went down with it too . . . BUT It’s okay to have those times. And all feelings are always valid and okay, but you’ve got to do something about it if you don’t want to stay stuck in the same spot over and over. . . I haven’t been on a scale in a little over a month. Currently not worried about it nor will i be getting on one for a few more weeks as I start prepping for USAPL state championships in February. Expect a lot more documentation from me on this journey. . . It brings me back to life when I have a goal, specifically a powerlifting meet to train hard for. It brings me a lot more focus, awareness, and love for my body for all the crazy things that it’s capable of. . .
